HEALTHY GRANOLA

Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Provided by Cookie and Kate

Categories     Breakfast

Time 26m

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

HOMEMADE GRANOLA WITH NUTS, SEEDS AND DRIED FRUIT

Homemade Granola with Nuts, Seeds and Dried Fruit image

This is a delightful way to get healthy oats, nuts, seeds and dried fruit into the tummies of everyone in the family.

Provided by Maureen Shaw

Categories     Breakfast

Time 45m

Yield 24

Number Of Ingredients 17

8 cups rolled oats (not the quick kind)
1 cup sunflower seeds
½ cup pepitas
1 cup pecans roughly chopped
½ cup flaked almonds
1 cup walnuts roughly chopped
1 cup unsalted cashews (I left mine whole)
½ cup coconut flakes (or any kind of coconut that you like)
½ cup dried cranberries
½ cup sultanas (or raisins)
½ cup dried apricots, chopped
2 teaspoons vanilla extract (the good stuff)
1 cup oil (I used macadamia nut oil but anything will work)
¾ cup honey
¼ cup maple syrup
1½ teaspoons salt
½ cup brown sugar

Steps:

  • Preheat oven to 165C/325F
  • In the largest bowl you have, add the oats, sunflower seeds, pepitas, pecans, almonds, coconut, walnuts and cashews and set aside.
  • In a large pot, add the maple syrup, honey, oil, sugar, vanilla and brown sugar and bring to the boil. Boil for 5 minutes and the mixture will thicken slightly.
  • Pour the hot mixture over the oats, seeds and nuts and stir to coat.
  • Place on baking sheets lined with foil or baking paper (I used foil) and bake for 20 minutes. About halfway through baking, stir the granola to ensure all the granola gets toasted.
  • When the granola is light brown, remove from the oven and mix in the sultanas, cranberries, apricots (or other dried fruit).
  • When completely cool place your granola in an air tight container and it should last two weeks. (Mine won't be around longer than a week)

  • You have the choice of making granola with whole nuts or to roughly chop them. This recipe shows the cashews and pecans chopped. Use a kitchen knife or a mortar and pestle, or both, to reduce them to small but chunky pieces. Set aside.
  • Place the rolled oats and the honey in a large mixing bowl and stir together. Next add the oil, coconut, cinnamon, and salt and stir until all the ingredients are well mixed.
  • Spread the oat mixture in a thin layer over a baking tray. It helps to use baking paper for this recipe, not only for clean-up but for the mixing you'll need to do in a bit. It helps stop the granola from sticking to the pan. Bake in the oven for 10 minutes.

  • Preheat the oven to 175c/350f. In a large bowl, mix together the oats, brown sugar, honey, coconut oil and water.
  • Once mixed, spoon it out onto a large metal baking tray and place it in the oven for 14-16 minutes. Check on the granola a couple of times during cooking to make sure it's not burning at the edges. If the edges of the granola are looking a lot darker, give the granola a mix. Once the granola is a light golden brown, add in the chopped nuts and place back in the oven for a further 2-4 minutes.
  • Take the granola out of the oven and leave to cool completely on the tray (leaving to cool completely - without mixing - is what helps the granola stick together to form those lovely clumps). Once cool, sprinkle on the dried fruit and mix in. You may find that some of the granola has stuck to the bottom of the tray during cooling, this is fine, use a metal spatula to lift the granola from the tray.
  • Spoon the granola into an air-tight jar – ready for breakfast, snacking or general clump stealing.

  • Bring this mixture to a rolling boil over low heat, stirring as needed to prevent burning and until the brown sugar is mixed in. (Do not let this cool once it has started bubbling a little - the sugar will harden and be very hard to work with.)
