Steps:
- Heat 1 tablespoon canola oil in a small frying pan over medium-high heat. Cook and stir almonds in the hot oil until lightly browned, 2 to 3 minutes. Transfer almonds to a large salad bowl.
- Toss bok choy, green onions, and ramen noodles with the almonds.
- Whisk 1/2 cup canola oil, sugar, balsamic vinaigrette dressing, and soy sauce in a separate bowl until combined.
- Pour dressing over vegetables and toss to mix.

- Combine bok choy, scallions, almonds, and sunflower seeds in a large bowl. Set aside.
- In a small bowl combine extra virgin olive oil, sesame oil, honey, soy sauce and red wine vinegar. Whisk together.
- Drizzle the dressing over the salad, toss and enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place ramen noodles, sunflower seeds, and almonds on a baking sheet. Drizzle butter over the ramen noodle mixture and toss to coat.
- Toast the ramen noodle mixture in the preheated oven until lightly browned and fragrant, stirring occasionally to avoid burning, about 8 minutes. Set aside to cool.
- Whisk sugar, vegetable oil, vinegar, and soy sauce together in a small bowl for the dressing.
- Place bok choy, onion, and toasted ramen noodle mixture in a large bowl. Toss with dressing until well coated.

SUEY CHOY SALAD
I started using suey choy (very similar to bok choy, but lighter in colour) in salads because it lasted much longer than lettuce in my fridge! This salad also tastes good with sunflower seeds, pine nuts, almonds, or anything crunchy you want to throw in. The salad dressing is from the Company Coming's Japanese Cabbage Salad recipe. Experienced cooks may be able to make this in less time than I've allotted.

- Before you open ramen noodle package, give it a few good whacks with something heavy to break the noodles into pieces.
- Open the package and take out the seasoning package.
- Mix together Dressing ingredients in a small bowl, and set aside.
- Rinse and dry suey choy and chop into bite sized pieces.
- Put into large salad bowl.
- Rinse and dry bean sprouts and green onion.
- Add to bowl with suey choy.
- Add broken up ramen noodles to large salad bowl, and add any optional bits (sunflowers, nuts, etc).
- Add dressing and toss together.
- It tastes and looks best when eaten right away, but it is still edible after being in the refrigerator a day.
BABY BOK CHOY SALAD
This crunchy salad is from my friend, Louie. The dressing keeps very well in the cupboard, and the quantities for it shown here are enough for three or four batches of salad. The cooking time includes toasting the almonds and pine nuts. Jen -- a reviewer -- is right. This salad is better if it is dressed a while before it is served. But wait to add the crispy noodles just before serving. Leftovers of this get a bit soggy overnight, but are still quite nice the next day.

- Combine all dressing ingredients in a jar with a tight-fitting lid. Shake well. Set aside until needed.
- Toast slivered almonds in a small pan. After about 1 minute, add the pine nuts and continue to toast both ingredients. Stir constantly so these don't burn. When nice browned, remove from pan and set aside to cool.
- Chop bok choy in 1-inch pieces. Wash well to remove grit. Spin dry, or roll in a tea towel to dry.
- Trim green onions and chop (on the diagonal) into 1-inch pieces (use both white and green bits).
- Toss together bok choy, sliced onions, toasted nuts and several very generous sloshes of dressing. Try to dress this at least an hour before it will be served.
- Sprinkle crisp chow mein noodles on top, stir well and serve.

- Thinly slice the bok choy leaves. Slice the stems on diagonal. Toss bok choy with the shredded radish and salt in a colander.
- Let stand to wilt the vegetables, about ½ hour. Rinse, drain and squeeze out excess liquid from mixture.
- Place in paper towels and squeeze again.
- Toss with remaining ingredients and chill before serving.

- Cut off the bottoms of the bok choy to release the leaves. Swish in cold water, drain and dry leaves. They often have grit wedged in the bottom just like a leek. Chop to bite sized pieces. I got this recipe from a woman in Louisiana and have made it several times. People have always liked it. The trick is to make the dressing the day before.

- For Dressing: prepare the day before. Mix all and microwave 30 seconds to melt sugar. Stir well, cover and refrigerate 24 hours. Stir occasionally.
- Melt butter on stove in a frying pan. Slowly brown almonds over medium. Once they start to brown, break up the ramen noodles in the ramen package. Discard flavoring packet or save for soup. Add ramen to almonds in pan and let them brown. Noodles will still be hard and crunchy, but should get a little bit brown. Set aside.
- Chop bok choy and onions put in large bowl. Add noodles and almonds to bok choy mixture. Stir dressing and add just before serving.
