Crispy Air Fryer Coconut Shrimp makes for a restaurant quality appetizer in the comfort of your own home. Better yet? This dish is much healthier than the traditionally fried version.

1 lb raw shrimp (with tails attached)
1/2 cups all purpose flour
1 tsp salt
1/2 tsp black pepper
3/4 cup unsweetened coconut flakes
1/2 cup panko bread crumbs
2 eggs
cooking spray

Steps:

  • In a large bowl, combine all-purpose flour, salt, pepper, coconut flakes and panko bread crumbs. In a separate bowl whisk the eggs.
  • Pat dry shrimp and dip them into egg mixture followed by the crumbs mixture. Coat all the sides evenly.
  • Spray the preheated air fryer basket with oil. Place coated shrimp in one layer inside the air fryer basket. Note: You can spray shrimp for the coating to gain even color.
  • Air fry shrimp at 400 °F for 7 minutes, flip it over and air fry for another 4 minutes or until it's golden brown. Enjoy it with your favorite dipping sauce!

These air-fryer coconut shrimp are the perfect combination of savory and sweet. Serve with a sweet chile sauce, for dipping.

Nonstick cooking spray
1 pound large shrimp (16/20 count), peeled and deveined, tails on
Kosher salt and freshly ground black pepper
1 cup sweetened shredded coconut
1/2 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs
Sweet chile sauce, for dipping

Steps:

  • Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple of paper towels, then season with a pinch of salt and a few grinds of pepper.
  • Pulse the coconut and panko in a food processor until finely chopped and uniform in size. Transfer to a shallow bowl.
  • Whisk the flour with 3/4 teaspoon salt and few grinds pepper in another shallow bowl or a baking dish. Whisk the eggs with a pinch salt in a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten egg. Dredge in the coconut-panko mixture, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and continue until all the shrimp are coated.
  • Preheat the air fryer to 385 degrees. Working in batches, place some of the shrimp in the fryer basket in a single layer, then spray lightly with more nonstick cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.
  • Serve the coconut shrimp with some sweet chile sauce for dipping.

½ cup all-purpose flour
1 ½ teaspoons ground black pepper
2 large eggs
⅔ cup unsweetened flaked coconut
⅓ cup panko bread crumbs
12 ounces uncooked medium shrimp, peeled and deveined
cooking spray
½ teaspoon kosher salt, divided
¼ cup honey
¼ cup lime juice
1 serrano chile, thinly sliced
2 teaspoons chopped fresh cilantro

Steps:

  • Stir together flour and pepper in shallow dish. Lightly beat eggs in a second shallow dish. Stir together coconut and panko in a third shallow dish. Hold each shrimp by the tail, dredge in flour mixture, and shake off excess. Then dip floured shrimp in egg, and allow any excess to drip off. Finally, dredge in coconut mixture, pressing to adhere. Place on a plate. Coat shrimp well with cooking spray.
  • Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the shrimp in the air fryer and cook about 3 minutes. Turn shrimp over and continue cooking until golden, about 3 minutes more. Season with 1/4 teaspoon salt. Repeat with remaining shrimp.
  • Meanwhile, whisk together honey, lime juice, and serrano chile in small bowl for the dip.
  • Sprinkle fried shrimp with cilantro and serve with dip.

1 lb shrimp (peeled and deveined)
1 egg (beaten)
1 cup coconut flakes
1.5 cups flour
½ tsp cayenne pepper
½ tsp paprika
½ tsp salt
1 tsp pepper
2 tbsp soy sauce
½ tbsp sesame oil
¼ tsp sesame seeds
3 tbsp apricot marmalade
2 dashes red pepper flakes

Steps:

  • Place 1 cup flour in bowl #1. Beat egg in bowl #2. Place remaining dry ingredients (including remaining ½ cup flour) in bowl #3.
  • Dry shrimp by placing in flour in bowl #1.
  • Transfer to bowl #2 to coat with egg wash.
  • Transfer individually to bowl #3, tossing/patting to coat with coconut/spice mixture.
  • Preheat air fryer to 400 degrees. Air fry shrimp in batches after a quick spray of oil for 3 minutes, then flip, then air fry for another 2-3 minutes or until cooked through and golden on the outside.
  • For first sauce, combine soy sauce, sesame oil, sesame seeds, and a dash of red pepper flakes depending on how spicy you prefer. For second sauce, just add a dash of red pepper flakes to apricot marmalade.
  • Serve shrimp warm with the two sauces.
