PEANUT PUDDING DESSERT

- In a small bowl, cut butter into flour until crumbly. Stir in peanuts. Press into an ungreased 13-in. x 9-in. baking dish. Bake at 350° for 16-20 minutes or until lightly browned. Cool on a wire rack., In a large bowl, beat the cream cheese, confectioners' sugar and peanut butter until smooth. Fold in 1-1/2 cups whipped topping. Carefully spread over crust., In a large bowl, whisk the milk and pudding mixes for 2 minutes (mixture will be thick). Carefully spread over cream cheese layer. Top with remaining whipped topping. Garnish with chocolate curls and additional peanuts if desired. Refrigerate until serving.

Steps:
- Place the cinnamon roll pieces into greased 9 x13-inch baking dish.
- Sprinkle the raisins and pecans over them.
- In large bowl, beat the milk, eggs, sugar and vanilla until well blended.
- Pour mixture over rolls.
- Cover and refrigerate overnight.
- Preheat oven to 350°.
- Dot the mixture with the butter slices.
- Place the dish in a roasting pan; fill pan with hot water halfway up sides of baking dish.
- Bake for 40-45 minutes or until bread pudding is set in center.
- To make the sauce, heat whipping cream and 1/4 cup sugar on top of a double boiler over simmering water.
- Combine egg yolks and remaining 1/4 cup sugar in a small bowl; beat until well blended.
- Stir some of the hot cream mixture into the egg mixture; return egg mixture to double boiler.
- Stirring constantly, cook 8-10 minutes or until thickens slightly and coats a spoon.
- Remove from heat and stir in the vanilla.
- Serve warm sauce over bread pudding.
OLD-FASHIONED BUTTER CRUNCH

- To make the butter crunch mixture, melt the butter in a saucepan. Remove from heat and stir in sugar, corn syrup, and water. Cook, stirring occasionally, until the mixture reaches 300 degrees on a candy thermometer. Remove from heat, stir in almonds, and pour out into prepared pan, spreading the mixture with the back of a spoon to fill the pan. Before the butter crunch hardens, but when it is firm enough to handle, turn it out onto a large parchment-covered cutting board and peel away the foil. Allow the butter crunch to cool completely. To finish the butter crunch, wipe the top surface of the candy with a damp paper towel to remove excess butter and allow to dry a few minutes. Have another cutting board or the back of a jelly-roll pan ready to turn the candy over onto. Use a small offset metal icing spatula to spread half the tempered chocolate quickly over the butter crunch. Scatter half the chopped almonds over the chocolate. Cover this finished surface with a piece of parchment paper or foil and place another cutting board or the back of a large jelly-roll pan. Remove top board and paper and quickly spread with remaining tempered chocolate and scatter on remaining almonds (it isn't necessary to wipe the second side because it wasn't against a buttered surface). Refrigerate for 20 minutes to set chocolate. Break the butter crunch into 2-inch pieces. Store candy in a tin or plastic container with a tight-fitting cover and keep at a cool room temperature for up to a week.
PEANUT BUTTER CRUNCH (ICE CREAM TOPPING)
My two favorite ways to eat this......French vanilla ice cream, topped with Hot Fudge sauce and then this, OR a rich chocolate ice cream topped only with this and whipped cream!! The yield is a guess here as who has time to measure when the ice cream awaits?!!

- Melt butter in a saucepan over medium heat. Stir in brown sugar until it softens. Slowly add milk and stir until sugar dissolves.
- Bring to a boil and cook until mixture reduces and thickens.
- Add peanut butter and mix thoroughly.
- Add peanuts and vanilla.
- Continue stirring until smooth.
- Serve warm over ice cream.
PEANUT BUTTER CINNAMON RICE CAKE CRUMBLES (OR POPCORN)
I got an insane deal on my favorite rice cakes (plain, unsalted), and bought two cases. After the first case was finished, I noticed that I had quite a bit of leftover rice cake crumbs. They are very similar to popcorn in texture, so with Recipe #14680 as my guide, I made this corn-free version of "popcorn." Of course, you can use popcorn too! - Preheat your oven to 250ºF.
- In a medium-sized saucepan over medium-low heat, combine the syrup and sugar, stirring and cooking until the sugar is pretty well dissolved. This should just take a few minutes.
- Remove from the heat and stir in the peanut butter, vanilla, salt (if using), and cinnamon. If the peanut butter isn't melting, place the pan back on the heat just long enough to coerce that peanut butter inches
- Stir in the popcorn or rice cake crumbles until well coated with the pb mixture.
- Spread the popcorn or crumbles out on a cookie sheet or in a baking dish, and pop them in the oven for 20 to 30 minutes, stirring once, about mid-way through.

- Lightly spray the inside of a 3-quart casserole with butter-flavored cooking spray; set aside.
- In a medium bowl, whisk together pudding mix, evaporated milk, almond extract, and pumpkin pie spice. Add rolls, raisins, and pecans to bowl. Stir together until well combined and bread is saturated.
- Transfer to prepared casserole dish and dot with butter.

CINNAMON ROLL BREAD PUDDING
I got this recipe from the cafeteria that serves breakfast and lunch where I work. Chef uses the cinnamon rolls that are left over from the day before. I use the day old rolls that my local grocery store is going to toss out.

- Whisk sugar into egg yolks until sugar is dissolved.
- Add vanilla. If using imitation vanilla, use a little more than the 1/2 Tbls.
- Heat heavy cream just until it starts to boil.
- Slowly add egg/sugar mixture into heavy cream.
- Heat on low until thickened. Don't let the egg yolks cook until solid, or you'll have sweetened scrambled eggs.
- Pour mixture over cinnamon rolls. Using your hands, mix GENTLY so you don't break up the rolls too much.
- Pour this mixture into a greased 9x12x6 pan. Cover and bake at 325 for 15 - 20 minutes. Don't let it get dry. Someone suggested using a crock pot. Good idea, keep an eye on it to prevent burning on sides and bottom.
- FOR ICING.
- Mix the 1/4 cup heavy cream with the powdered (10X) sugar. As soon as you take the baked mixture out of the oven, pour icing over the mixture. It should soak in and not be very obvious.
- At this point you can add raisins or chocolate chips if you want.
