- Cut 1 1/2 sticks chilled unsalted butter into pieces. With your hands, work in butter pieces, until large clumps form. Divide mixture in half; freeze in plastic storage bags.

Especially good on apple or peach pies. My original recipe says it make enough for 2 8-inch pies but a lot of times I use the whole thing on one 10-inch.

- In a large mixing bowl combine all the ingredients except the butter.
- Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.
- Spread crumbs over prepared fruit mixture of your favorite fruit pie.
- Do NOT add top crust.
- Bake as directed in your fruit pie recipe.
- If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.
- Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.

- Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
- Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
- Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.

- Make the crust: Combine the butter and cream cheese in a food processor and process until smooth. Add the flour and salt and process just until the mixture comes together into a ball. Scrape out the dough, shape into a disk, wrap in plastic wrap and refrigerate for at least 1 hour.
- Meanwhile, prepare the crumb topping: Combine the oatmeal, flour and sugar in a small bowl and toss to combine. Add the melted butter and stir until thoroughly incorporated. Refrigerate the topping until chilled, at least 30 minutes.

- For the dough: Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter and pulse until the mixture resembles yellow cornmeal mixed with pea-sized bits of butter. Add the egg mixture and pulse until the dough just comes together. (If the dough is very dry, add up to 1 extra tablespoon cold water.) Remove the dough, gently pat it into a round, wrap it in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour and up to 2 days.
- For the filling: Meanwhile, put the lemon juice in a medium bowl. Peel and core the apples; cut each in half, and cut each half into 4 wedges. Add the apples and brown sugar to the bowl with the lemon juice, and toss.
- Melt the butter over medium-high heat in a large skillet. Add the sugared apples and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
- Strain the apples in a colander set over a medium bowl to catch all the juices. Shake the colander to extract as much liquid as possible. Return the juice to the skillet and simmer over medium heat until it has thickened and lightly caramelized, about 10 minutes.
- Toss the apples with the thickened juice, cinnamon, salt, cloves, ginger and nutmeg in a medium bowl. Set aside to cool completely. (The cooled filling can be refrigerated for up to 2 days or frozen for up to 6 months.)
- For the streusel topping: Whisk the flour, sugar and salt together in a medium bowl. Add the butter and rub it into the flour mixture with your fingers until it has been absorbed. Mix in the almonds.
- To assemble and bake the pie: Position a rack in the lower third of the oven and place a baking sheet on it. Preheat the oven to 375 degrees F. On a lightly floured work surface, roll the dough into a 12-inch circle. Layer it between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
- Ease the dough round into a 9-inch pie pan. Fold and crimp the edges as desired. Add the filling, and spread it out to make an even layer. Squeeze handfuls of the streusel topping, and drop clumps of it on top of the filling to completely cover it.
- Bake the pie on the preheated baking sheet until the crust and streusel are golden brown, about 1 hour. Let it cool on a cooling rack for at least 3 hours before serving. (The pie keeps well, covered, at room temperature for 24 hours or refrigerated for up to 4 days.)

CRUMB TOPPED PEACH PIE
I saw this scrumptious pie demonstrated on QVC. It was one of Bob Bowersox's recipes. If the whole idea of starting with a "from scratch" pie shell intimidates you, then you certainly may substitute a purchased pie shell and prebake it according to the package directions, then proceed with the rest of the instructions. Prep time does not include the 30 minutes of chilling time for the pastry crust.

- Preheat oven to 350 degrees F.
- For the crust, combine very cold butter pieces with shortening, flour and salt in a large bowl.
- Using a pastry blender or two knives, mix until pea-sized crumbs are formed.
- Add 1 Tbsp of the ice cold water and mix, using a fork, then add another Tbsp of the water, and mix with the fork- do this until the dough forms into a mass (you may not need all of the water).
- Don't add too much water or it will get gluey.
- Wrap in plastic wrap and chill in fridge for 30 minutes.
- Roll out dough on a floured surface to 1/4" thickness.
- Line an UNGREASED 9" pie plate with the pastry, trimming excess and crimping edges.
- Line crust with a circle of wax paper, then pour raw rice or beans into the shell.
- Bake in a preheated 350 F oven until the crust turns golden brown, about 15 minutes.
- Let cool, removing the rice and paper, and set aside.
- Once pastry has cooled, preheat oven to 375 degrees F.
- For the filling,set whole peaches into a bowl of cold water to cover.
- Set this bowl near the stove.
- Remove peaches from the water using a slotted spoon, saving the bowl of water, and set the peaches onto a paper towel-lined plate.
- Fill a large saucepan with water- one big enough to hold the peaches.
- Bring water to a boil, then drop in the peaches briefly, about 30 seconds- just to blanch them.
- Immediately remove them using a slotted spoon and put them back into the bowl of cold water.
- This will help make peeling the peaches easier (you can skip the blanching step if you wish and just peel the peaches with a paring knife).
- Once the peaches are cool enough to handle, remove the skins (stubborn bits can be removed with a paring knife).
- Cut peaches into halves, discard pits, then slice peaches and put into a large mixing bowl.
- Add sugar, almond extract, and cornstarch, stirring to coat.
- Pour the filling into the cooled pie shell.
- Make the topping by first melting the butter over low heat in a small pan.
- Once the butter melts, add the sugar, flour, salt, and cinnamon and stir until crumbly.
- Immediately remove from the heat and mound the topping over the peaches.
- Place pie plate onto a rimmed cookie sheet, then pop the whole thing into the oven, preheated to 375 F, and bake until the top is golden brown and the filling is bubbling around the edges, about 60-70 minutes.
- Check often to make sure the topping isn't getting too dark- if it does, place a tent of foil over it.
- Let cool on a wire rack.
