ROASTED TOMATOES WITH BREAD CRUMBS

Steps:
- Preheat the oven to 350 degrees F. Put the tomato halves in a lightly buttered baking dish, cut-side up, drizzle with olive oil , honey, and sprinkle with panko bread crumbs and paprika. Season the tomatoes with salt and pepper and roast for 20 minutes.
- Remove the tomatoes from the oven and sprinkle with parsley. Drizzle with olive oil.

- In a small skillet, saute garlic in oil for 1 minute. Add bread crumbs; cook and stir until lightly browned. Remove from the heat., Cut tomatoes in half widthwise. Place cut side up in an 8-in. square baking dish. Sprinkle with basil and pepper; top with bread crumb mixture. Bake at 325° for 15-20 minutes or until tomatoes are slightly softened.

PROVENCAL TOMATOES
Steps:
- Preheat the oven to 400 degrees F.
- Cut the cores from the tomatoes, removing as little as possible. Cut them in half crosswise and, with your fingers, remove the seeds and juice. Place the tomato halves in a baking dish.
- In a bowl, combine the bread crumbs, scallions, basil, parsley, garlic, thyme, and 1 teaspoon salt. Sprinkle the tomato halves generously with salt and pepper. With your hands, fill the cavities and cover the tops of the tomatoes with the bread crumb mixture. Bake the tomatoes for 15 minutes, or until they're tender. Sprinkle with the cheese, drizzle with olive oil, and bake for 30 seconds more. Serve hot or at room temperature.

- Preheat oven to 400 degrees F (200 degrees C). Coat a shallow baking dish with cooking spray.
- Place tomato slices close together in prepared baking dish. Sprinkle with cheese, bread crumbs, garlic, parsley, salt, pepper, and oregano. Drizzle with olive oil.
- Bake for 20 minutes in the preheated oven, or until cheese is lightly toasted.

CRUMB & HERB TOPPED ROAST TOMATOES
Steps:
- Finely chop the fresh herbs and combine in a mixing bowl with the breadcrumbs and olive oil. Mix thoroughly to moisten the crumb blend. This helps to brown but not burn the crumb topping during the roasting process.
- Core the stem end of each tomato. Slice off the top third from the round end, retaining the greater section for the recipe and putting aside the one-third for use in salads, pasta sauce, etc. Never waste a good tomato, or any food for that matter!
- With a sharp paring knife, slightly indent the sliced top of each tomato in order to better hold the crumb mixture.
- Sprinkle each tomato with the salt and pepper.
- Drizzle tomatoes with any remaining olive oil then heap with the pre-moistened crumb mixture.
- Put tomatoes on a roasting pan and place in a pre-heated 375-degree oven for approximately 10 to 15 minutes, or until tomatoes are bubbling, give slightly to the touch and the crumb topping has turned golden brown.

Scoop out pulp, leaving a 1/2-in. shell; invert onto paper towels to drain., In a small bowl, combine the spinach, sour cream, cheddar cheese, onions and salt. - Cut each tomato lengthwise into 6 wedges.
- In bowl, toss tomato wedges with half of each of the oil, salt and pepper.
- Arrange tomatoes, cut side up in 13x9 inch glass baking dish, roast in 400f degree oven for 30 minutes.
- Meanwhile in bowl, combine bread crumbs, garlic, parsley and remaining oil, salt and pepper.
- Remove tomatoes from oven, sprinkle with bread crumb mixture.

- Slice the tomatoes from core to core. Remove and discard the seeds and juice, and add the tomatoes to a casserole dish. Drizzle with olive oil and sprinkle with salt and pepper.
