Crostini With Figs, Gorgonzola, Honey & Walnuts is a delicious, yet simple to prepare appetizer, full of great flavor!

2 TBSP olive oil
1 small, long baguette
6 ounces creamy gorgonzola cheese (, coarsely crumbled)
2/3 cup walnuts (, toasted, coarsely chopped)
4 ripe figs (, thinly sliced, crosswise (optional))
3 TBSP honey

Steps:

  • Preheat oven to 375 degrees.
  • Arrange the baguette slices on a baking sheet in a single layer. Using a pastry brush, lightly baste the baguette slices with the olive oil. Place slices in oven, and bake till baguette slices are a golden color, about 8 minutes. (You can also toast the slices a day ahead. Cool, then store them at room temperature in a covered container.)
  • Toss the gorgonzola, along with the toasted walnuts (that have cooled to room temperature) in a small bowl. Spoon the cheese mixture onto the prepared baguette slices and press slightly to adhere.Return baguette slices to baking sheet. Bake in oven until the cheese melts (about 6-8 minutes).
  • Arrange the warm crostini on a platter. Top each slice with a thin slice of fig. Drizzle with the honey and serve warm. Enjoy!

3 ounces Gorgonzola crumbles, at room temperature
1/2 cup chopped walnuts or pecans
Honey

Steps:

  • Preheat oven to 325 degrees F. Place baguette slices in single layer on baking sheet. Toast in oven until golden, about 10 minutes.
  • Sprinkle Gorgonzola on baguette slices. Sprinkle nuts over each. Drizzle each slice lightly with honey.

2 tablespoons extra virgin olive oil
2 tablespoons garlic, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup fresh mint, chopped
4 red onions, halved and peeled
8 fresh figs
3 tablespoons balsamic vinegar
5 ounces Gorgonzola
Dash of Tabasco
Dash of Worcestershire
3 tablespoons heavy cream
12 slices baguette
3 tablespoons olive oil which has been mixed with 1 crushed garlic clove

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix the olive oil, garlic, salt, pepper and mint. Slice the onions in half, from stem to root end and add to bowl. Coat onions and place in a shallow baking dish and roast for 30 minutes.
  • Add figs to the baking dish, baste with juices and roast for 15 more minutes.
  • Meanwhile, mix gorgonzola, Tabasco, Worcestershire and thin with cream to make a spreadable mixture. Brush baguette slices with garlic oil.
  • Remove the onions and figs from oven, raise oven temperature to 400 degrees. Place baguette slices on a baking sheet and toast the slices for about 7 minutes, until browned.
  • To serve:
  • Spread the cheese mixture on the bread. Place the onion and fig mixture on a platter, and surround with the croutons. Serve immediately. Tip: DRIED FIGS
  • Heat your figs with a mixture of brandy and water to barely cover. Cook 15-20 minutes until softened. Serve with mascarpone cheese or whipped cream.

1 cup dried black figs (about 6 ounces)
1 teaspoon lemon juice
2 cups water
2 tablespoons maple syrup
1 dash salt
cooking spray
2 cups vertically sliced yellow onions
1 teaspoon balsamic vinegar
1/2 teaspoon chopped fresh thyme
1/4 teaspoon salt
1/2 cup water (optional)
1/2 cup gorgonzola, softened
1 loaf French baguette, toasted and sliced
1 teaspoon fresh thyme leave

Steps:

  • To prepare jam, remove stems from figs. Place figs and juice in a food processor; process until figs are coarsely chopped.
  • Place fig mixture, 2 cups water, syrup, and dash of salt in a medium saucepan; bring to a boil. Reduce heat, and simmer 25 minutes or until thick. Cool completely.
  • To prepare onions, heat a large nonstick skillet coated with cooking spray over medium heat.
  • Add onion, vinegar, 1/2 teaspoon thyme, and 1/4 teaspoon salt; cover and cook 5 minutes. Uncover and cook 20 minutes or until onion is deep golden brown, stirring occasionally.
  • While onion cooks, add 1/2 cup water, 1/4 cup at a time, to keep onion from sticking to pan.
  • Spread 1 teaspoon cheese over each baguette slice. Top each slice with about 1 teaspoon onion mixture and 1 teaspoon jam. Sprinkle evenly with thyme leaves.

1/2 baguette
2 tablespoons extra-virgin olive oil
10 ounces Gorgonzola dolce, room temperature
1/4 pound prosciutto, very thinly sliced and torn into bite-size pieces
Fresh lemon thyme, for garnish
10 fresh figs, halved lengthwise
Fresh tarragon, for garnish

Steps:

  • Preheat broiler. Cut baguette into 20 slices (each about 1/4 inch thick); transfer to a baking sheet. Brush tops with oil. Broil until golden, 1 to 2 minutes.
  • When bread is cool enough to handle, spoon 1 teaspoon cheese onto each round. Arrange a piece of prosciutto next to cheese; garnish with lemon thyme.
