- Please note: The (HOMEMADE TACO SEASONING) ingredients are for you to substitute the taco seasoning packet by mixing you own.
- Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.
- Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
- Half hour before serving, remove chicken and shred.
- Return chicken to slow cooker and stir inches.
- Top with fresh cilantro and your favorite toppings!

Slow Cooker Taco Chili is easy, soul warming and delicious. Ground beef cooks with onion, garlic and taco seasoning before going in the slow cooker with beans, chiles, crushed fire-roasted tomatoes and corn. This chili cooks for a few hours and then is served in bowl with all the topping. Basically this is all the things you love about tacos, in chili form!

- In a large, deep-sided skillet, spray with olive oil. Add in the ground beef, onion and garlic with a pinch of kosher salt and heat over medium. Use a wooden spatula to break up the beef and cook until browned and no longer pink.
- Drain the fat from the pan and add in taco seasoning, stir to combine and then transfer the beef/onion mixture to your slow cooker.
- Add in the beans, chiles, corn, crushed tomatoes. Stir to incorporate all of the ingredients.
- Cook on high for 3 to 4 hours, or low for 6 hours.
- Serve in bowls topped with greek yogurt or sour cream, shredded cheese, pepper pico, black olives, green onions and corn chips.
- Add the tomato, peppers, red onion, cilantro, salt and lime juice into the bowl. Add minced jalapeño for some heat.
- Toss to combine. Cover and refrigerate until ready to serve.

- Dump in tomatoes, black beans and black olives.
- Set the chicken on top. Season with paprika, salt and pepper, onion powder and garlic salt.
- Sprinkle the taco seasoning over the chicken.
- Pour chicken broth in crock pot.
- Cook on low for 8-10 hours, but up to 24 hours. I start it the night before.
- Shred chicken and stir back in to sauce. If sauce seems to thin, add water.
- Stir in shredded cheese.
- Serve over noodles, rice, or in tortillas.

I was fooling around with basic staples that I have in the house and on a whim, threw this together. It was a HIT! Not quite sure what to name it, but it reminds me of a chili of sort, so I named it Mexican Chicken Chili.

Steps:
- Place chicken breasts in bottom of crock pot.
- Top with Seasoning Mix, Diced Tomatoes, Kidney Beans, Garbanzo beans and Corn.
- Slice butter and arrange on top of mixture. Sprinkle salt on top.
- Cook on High 6 hours.
- When done, use two forks and shred the chicken in the crock pot.
- While your shredding, put on a pot of white rice. I usually cook 2 cups of rice to go with mixture. Or, you can serve in warm tortillas, eat like a soup or use tortilla "scoop" chips to eat.
- Put rice in bowl and serve chicken mixture on top of the rice. Optional and VERY YUMMY toppings would be chopped white onion, sour cream, crumbled tortilla chips and then a nice squeeze of fresh lime juice. Fantastic when served with everything!
