CROCKPOT CREAMY LEMON CHICKEN RECIPE
Steps:
- Season chicken breast generously on both sides with salt and pepper.
- In a large skillet, melt ¼ cup butter over medium-high heat. Add the chicken breast and sear on both sides for 2 to 3 minutes or until slightly browned.
- Spray inside slow cooker with non-stick cooking spray. Place chicken breast in the slow cooker.
- Add chicken stock to the skillet and deglaze the bottom of the pan by scraping with a wooden spoon. Add lemon juice and stir gently to combine. Pour chicken stock from skillet over chicken in slow cooker.
- Tuck onion wedges around chicken. Top with lemon zest, minced garlic, additional pepper, and remaining butter, cut into slabs.
- Cook on high for 3 to 4 hours or low for 6 hours. Remove chicken and keep warm. Transfer broth to large skillet and heat to boiling over medium-high heat. Stir in parmesan and whisk to blend. Then, add the cream and cook until reduced by half, stirring often.
- Serve chicken with cream sauce and chopped parsley and/or additional sliced lemon as garnish.
SLOW COOKER CREAMY LEMON CHICKEN

- In a large cast iron skillet add 1 tablespoon of butter to melt on medium high heat.
- Add the kosher salt, black pepper and Italian seasoning to the chicken and add it to the pan.
- Cook on each side for 4-6 minutes.
- Add the chicken to your slow cooker.
- Cover with lemon juice, lemon zest, garlic and the rest of the butter in pieces (I added the lemons in the before picture just for reference. Don't cook the lemons in the slow cooker).
- Cook on low for 4 hours or on high for 2 hours.
- In a large measuring cup add the half and half, cornstarch and chicken base and whisk well.
- Add the liquid, mix, and cook an additional hour on high.

- Pat chicken dry with paper towels. Combine the oregano, seasoned salt and pepper; rub over chicken. In a skillet over medium heat, brown the chicken in butter; transfer to a 5-qt. slow cooker. - Cut the tops and bottoms off of the garlic heads and lemons. Cut the lemons in half. Place the garlic and lemons in the bottom of the crockpot insert.
- Combine the salt, pepper, and oregano in a small bowl. Season both sides of each chicken breast with the seasoned salt mixture.
- Melt the butter in a large skillet over medium high heat. Place the chicken breasts in the skillet to brown, 5 minutes per side.
- Transfer the browned chicken to the crockpot and place on top of the garlic and lemons.
- In a pot, whisk the chicken broth, lemon juice, and bouillon together. Pour over the chicken in the crockpot.
- Place thyme sprigs on top of the chicken.

CREAMY LEMON CHICKEN

- Place the flour in a shallow bowl and season with salt and pepper. Heat a large saute pan over medium-high heat, then add the oil. Dredge the chicken in the flour, shaking off any excess, and place in the hot oil. Cook until golden brown on both sides and cooked through, about 4 minutes per side. Remove the chicken to a plate.
- Add the garlic to the pan, carefully add the wine and, using a wooden spoon, scrape the bottom of the pan to release any flavor stuck to the bottom. Add the cream, Parmesan, lemon zest and juice and some salt and pepper. Bring to a simmer and cook until the sauce starts to thicken, about 2 minutes. Add the spinach, stir and return the chicken to the pan. Cook for 1 minute more, until the spinach has wilted. Garnish with basil and lemon slices.
HERBED LEMON CHICKEN IN A CROCK POT / SLOW COOKER
This is a lemon herb garlic chicken dish which is made in a slow cooker to contain it's natural flavours. When we served it the meat fell away from the bone. If you wish to increase the celery and carrot you may do so without dramatically change the flavour of the dish. I normally remove the skin off the drumstick, which I recommended with this dish but feel free to leave it on. Everyone enjoyed it in our house hold, hope you will enjoy it.

- In a hot non-stick pan, add butter and melt.
- Add chicken drumstick and brown or seal chicken.
- Place celery & carrot on base of crock pot/slow cooker.
- Add brown chicken drumstick into the crock pot/slow cooker, making sure the chicken drumstick are not sitting on top of each other (must be laying side by side). Pour left over juices in the pan into the crock pot/slow cooker.
- Pour chicken stock and lemon juice on top of drumstick.
- Sprinkle onions, garlic, parsley, oregano, salt and black pepper on top of the chicken drumstick.
- Cover and cook on 'Low' setting for 6-8 hours. (Depending on you crock pot/slow cooker, mine tenders to cook quickly even on the slower setting).
- Serve with juices on rice or with crusty bread.
CROCK POT GREEK LEMON CHICKEN
This really tastes like restaurant greek chicken we get here in the Chicago area. Moist chicken, lots of flavorful sauce. Start with frozen chicken breasts and a few ingredients you have in your pantry, end up with lots of compliments. No browning the chicken, just plop it in, set it and go.

- Spray crock pot with non-stick.
- Combine lemon rind, 1/2 cup broth (or 1/2 cup water and 2 teaspoons chicken bouillon powder), garlic and lemon juice. Pour into pot.
- Sprinkle both sides of each frozen breast with seasonings, add to pot.
- Cover and cook on low 6 - 8 hours.
- Remove chicken to plate and keep warm.
- Pour liquid from pot into small sauce pan. Combine corn starch with remaining 1/2 cup broth (or remaining 2 teaspoons chicken bouillon powder and 1/2 cup water); add to sauce pan.
- Heat, stirring constantly, until mixture comes to boil and sauce thickens.
- Serve chicken with rice cooked in chicken broth instead of water and top with the sauce.

- In a small bowl, mix together the oregano, salt, and pepper. Rub the mixture into chicken.
- Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker sprayed with non-stick cooking spray.
- In the same skillet (don't rinse it out - everything that is left in that pan will add flavor!), mix the chicken broth, lemon juice, and garlic. Bring the mixture to boil. Pour over the chicken in the slow cooker. Add the lemon zest and diced onion on top of the chicken.
- Cover and cook on high for 2-3 hours or low for 5-6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.
- About 15 minutes before you're ready to serve, remove the chicken and place on a serving platter. Add the cream to cheese to the juice in the crock pot and whisk until smooth. Let cook on high heat for 15 minutes so that it can thicken up. If you want to make the sauce thicker, mix together 1 teaspoon cornstarch with 1 teaspoon cold water and whisk into sauce.
- Serve over cooked pasta.
