CHEESY CROCKPOT SAUSAGE ROTEL DIP
Perfect for game day or a party, this creamy sausage and rotel dip is loaded with extra cheese and made easily in the crockpot!

Steps:
- Add a small drizzle of olive oil in a large skillet, and heat over MED-HIGH heat. Add both sausages and cook, breaking up meat with a wooden spoon as you cook, until sausage is browned, about 6-8 minutes.
- Drain cooked sausage, then add to crockpot insert. Top with garlic powder, dried onion, cubed cream cheese, Ro-tel, hot sauce, pinch of salt and pepper, and 1 cup of the cheddar cheese.
- Stir well, then cover and cook on LOW for 3-4 hours, or HIGH for 1.5-2 hours. Remove cover and sprinkle with remaining 1 cup of cheddar cheese, then cover again and cook another 10-15 minutes, until cheese is melted.
- Sprinkle with minced chives and serve hot.

This Crockpot Sausage Cream Cheese Dip is my mother in law Betty's famous invention! This easy sausage dip recipe is filled with sausage, cream cheese, and rotel tomatoes, and it's so creamy and cheesy! It's the best dip for holidays, game day, or any party. With only 3 ingredients and packed with flavor, this slow cooker rotel sausage dip is one heck of an addictive party dip!

Steps:
- Spray a slow-cooker with nonstick spray and set the temperature to LOW.
- Add the tomatoes, their juices, cream cheese and lime juice (if using) to the slow-cooker. Mix well and place the lid on top.
- In a large skillet, set over medium heat, cook the sausage until browned. Drain the sausage and add it to the cheese/tomato mixture; mix well and replace the lid.
- Cook on high until the cheese has melted, stirring every 15 minutes; about 1 hour. Once the cream cheese has melted, set the slow-cooker to warm and stir about every 30 minutes.
- Serve with Tostitos, your favorite crackers and/or your favorite sliced vegetables. Enjoy!

- Brown the sausage on the stove, and drain on paper towels. Unwrap the cream cheese, and put it into your crockpot. Chop up the sausage and add on top. Drain the Rotel, and add it. Cover and cook on low for about 90 minutes, or on high for 45. Stir well and eat with tortilla chips.

Steps:
- Brown sausage in a large skillet over medium-high heat, breaking it up into small pieces as it's cooking. Drain off any excess oil, as necessary.
- Reduce heat to medium-low and dump in 2 cans of Rotel.
- Add the cubed cream cheese and cook over medium-low heat, stirring frequently until the cream cheese melts and everything is fully combined.
- Serve warm with thick restaurant-style tortilla chips.
- Brown the sausage in a large skillet over medium heat, breaking it up into small pieces as it's cooking. Drain off any excess oil.
- Transfer the browned sausage to your crockpot insert, and dump in 2 cans of Rotel.
- Add the cubed cream cheese and cover. Choose your desired heat setting depending on when you want to serve your dip. Heat stirring occasionally until fully combined, about one hour on low heat. Turn heat down to "keep warm".
- Serve warm with thick restaurant-style tortilla chips.

CROCK POT CREAM CHEESE & SAUSAGE DIP
This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

- Brown both packages of sausage in a skillet over medium heat.
- Drain the sausage in a colander.
- Cube the cream cheese into a crock pot.
- Add the sausage to the cream cheese in the crock pot.
- Add both cans of rotel (with the juice) to the crock pot.
- Heat the mixture in the crock pot on high heat for approximately 1 hour, stirring occasionally until the dip is well mixed.
- Reduce heat to warm/low and serve with tortilla chips.

Steps:
- Cut blocks of cream cheese into cubes and put in small crock pot.
- Pour can of rotel (do not drain) over cream cheese.
- Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
- This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
- Serve with Tortilla Chips! Enjoy! :).
