Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

Steps:
- Mix sugar and corn syrup together and cook on high for 4 minutes.
- Add peanuts mix well and cook on high for 3 minutes.
- Add butter and vanilla and cook on high for 2 minutes.
- Add baking soda and mix well, mixture will foam.
- Spread on well butter foil.
- when completely cooled break in to pieces.
- Store in air tight container.
- NOTE: Any type of nut can be used in place of the peanuts.
MICROWAVE CASHEW BRITTLE
Easy buttery cashew brittle made in the microwave in just about 10 minutes. Every time I make this it disappears very fast. Warning: once you start you can't stop.

- Lightly butter a baking sheet with 1 teaspoon butter.
- Mix cashews, sugar, and corn syrup in a medium microwave-safe bowl. Microwave on high for 4 minutes. Remove, stir, and microwave for another 3 minutes. Remove and add 1 tablespoon butter, vanilla extract, and butter flavoring; stir to combine. Microwave for 2 minutes.
- Remove from the microwave and add baking soda; stir and fold until mixture is fluffy. Work quickly and spread mixture evenly on the prepared baking sheet. Let it sit until completely cooled. Break into pieces and keep in a airtight bag or container.

- Grease a baking sheet with 1 teaspoon butter., In a microwave-safe bowl, mix sugar and corn syrup; microwave, uncovered, on high for 3 minutes. Stir to dissolve sugar; microwave 2 minutes longer. - Spread 1 1/2 tablespoons butter all over a rimmed baking sheet until heavily coated.
- Stir sugar and corn syrup together in a microwave-safe bowl. Microwave on high, uncovered, for 4 1/2 minutes. Stir and microwave for 3 minutes longer.

WHITE CHOCOLATE CASHEW BRITTLE
This is my version of See's White Chocolate Cashew Brittle (since I refuse to pay money for their original one!). It is very similar, although not quite as pretty as their finished product. I usually triple the recipe as I have larger baking sheets with sides (13x18). The shattered smaller pieces make for great additions to brownies and sprinkled over sundaes. Keep in mind during the cooking process, you'll be tempted to speed things up by increasing the temperature...just tell yourself "no". Keep it at medium heat and make "It's worth it" your mantra. It usually takes about 45 minutes to complete the cooking process.

- Using the broil setting, toast the coconut on a flat cookie sheet make sure it is well spread out.
- This only takes a few minutes and will burn if left unattended.
- Chop the cashews and spread evenly over the bottom of an ungreased 9x9" baking pan that has sides; sprinkle the toasted coconut evenly over the nuts.
- Combine the butter, sugar and water in a large heavy saucepan.
- Stir over medium heat until ingredients are combined.
- Continue stirring until mixture reaches the hard crack stage, stirring constantly (approximately 45 minutes).
- Pour over nuts & coconut and making sure mixture is disbursed evenly (you may tilt slightly while candy is still liquid to achieve this).
- Let sit for about an hour.
- Microwave about 3 chunks of the white chocolate almond bark for about a minute, stir to check consistency and return to microwave for about 15 seconds each time until smooth and spreadable.
- Once white chocolate mixture is smooth, spread over the top of candy's surface so it is completely covered.
- Once cooled, use a very sharp french knife and cut into 1" squares.

- In 1 1/2 qt casserole, stir together sugar and syrup.
- Micro on high for 4 minutes.
- Stir in cashews.
- Micro on high 3-5 minutes only until light brown.
- Add butter and vanilla, blending well.
- Micro on high 1-2 minutes more.
- Nuts will be lightly browned and syrup very hot!
- Add baking soda and stir gently stir until light and foamy.

- Generously butter a cookie sheet and set aside. In a microwave safe bowl (make sure it is microwave safe! I assumed my first bowl was and it melted a hole through the bottom!) add the sugar and corn syrup and mix. Put in the microwave and cook for 3 minutes. Stir. Put back into the microwave and cook for an additional 3 minutes. The mixture should start looking like an amber color.
- Stir in the cashews. Cook for an additional 3-5 minutes. I suggest checking after each minute. If the color looks golden brown then it is good to go. I cooked my first batch too long the first time and it burnt some of the nuts.
- Once the mixture is a golden brown, remove from the microwave and stir in the butter and vanilla. Continue cooking for an additional minute. Remove and stir in the baking soda. It will start to foam and become thick.
- Spread the mixture on the buttered baking sheet and allow to completely cool. Break into pieces. Can be stored at room temperature in an airtight container for up to 3 days.
