Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

1 cup sugar
1/2 cup corn syrup
1 cup peanuts
1 tablespoon butter
1 teaspoon vanilla
1 teaspoon baking soda

Steps:

  • Mix sugar and corn syrup together and cook on high for 4 minutes.
  • Add peanuts mix well and cook on high for 3 minutes.
  • Add butter and vanilla and cook on high for 2 minutes.
  • Add baking soda and mix well, mixture will foam.
  • Spread on well butter foil.
  • when completely cooled break in to pieces.
  • Store in air tight container.
  • NOTE: Any type of nut can be used in place of the peanuts.

2 cups salted roasted cashews
1 cup white sugar
½ cup light corn syrup
1 tablespoon butter
½ teaspoon butter flavoring
1 teaspoon pure vanilla extract

Steps:

  • Lightly butter a baking sheet with 1 teaspoon butter.
  • Mix cashews, sugar, and corn syrup in a medium microwave-safe bowl. Microwave on high for 4 minutes. Remove, stir, and microwave for another 3 minutes. Remove and add 1 tablespoon butter, vanilla extract, and butter flavoring; stir to combine. Microwave for 2 minutes.
  • Remove from the microwave and add baking soda; stir and fold until mixture is fluffy. Work quickly and spread mixture evenly on the prepared baking sheet. Let it sit until completely cooled. Break into pieces and keep in a airtight bag or container.

1 cup white sugar
½ cup light corn syrup

  • Combine cashews, sugar, and corn syrup in a large microwave-safe glass or ceramic bowl. Microwave on high until sugar melts and mixture is hot, about 6 1/2 minutes.

1/2 cup light corn syrup
1 to 1-1/2 cups salted cashew halves

1 cup light corn syrup

White Chocolate Cashew Brittle image

This is my version of See's White Chocolate Cashew Brittle (since I refuse to pay money for their original one!). It is very similar, although not quite as pretty as their finished product. I usually triple the recipe as I have larger baking sheets with sides (13x18). The shattered smaller pieces make for great additions to brownies and sprinkled over sundaes. Keep in mind during the cooking process, you'll be tempted to speed things up by increasing the temperature...just tell yourself "no". Keep it at medium heat and make "It's worth it" your mantra. It usually takes about 45 minutes to complete the cooking process.

1 cup butter
1 cup sugar
2 tablespoons water
1 cup cashews, chopped
1/3 cup coconut
6 ounces white almond bark

Steps:

  • Using the broil setting, toast the coconut on a flat cookie sheet make sure it is well spread out.
  • This only takes a few minutes and will burn if left unattended.
  • Chop the cashews and spread evenly over the bottom of an ungreased 9x9" baking pan that has sides; sprinkle the toasted coconut evenly over the nuts.
  • Combine the butter, sugar and water in a large heavy saucepan.
  • Stir over medium heat until ingredients are combined.
  • Continue stirring until mixture reaches the hard crack stage, stirring constantly (approximately 45 minutes).
  • Pour over nuts & coconut and making sure mixture is disbursed evenly (you may tilt slightly while candy is still liquid to achieve this).
  • Let sit for about an hour.
  • Microwave about 3 chunks of the white chocolate almond bark for about a minute, stir to check consistency and return to microwave for about 15 seconds each time until smooth and spreadable.
  • Once white chocolate mixture is smooth, spread over the top of candy's surface so it is completely covered.
  • Once cooled, use a very sharp french knife and cut into 1" squares.

1 cup sugar
1/2 cup white corn syrup
1 cup cashews
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • In 1 1/2 qt casserole, stir together sugar and syrup.
  • Micro on high for 4 minutes.
  • Stir in cashews.
  • Micro on high 3-5 minutes only until light brown.
  • Add butter and vanilla, blending well.
  • Micro on high 1-2 minutes more.
  • Nuts will be lightly browned and syrup very hot!
  • Add baking soda and stir gently stir until light and foamy.
  • Pour onto lightly greased cookie sheet.
  • Cool 30-60 minutes.
  • Break into small pieces and store in airtight container.

2 cups sugar
1 cup light corn syrup
1 cup water

  • Butter a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a large saucepan, combine the sugar, corn syrup and water. Bring to a boil, stirring constantly. , Reduce heat; cut remaining butter into cubes and carefully stir into syrup. Cook and stir until a candy thermometer reads 280° (soft-crack stage).   • Generously butter a cookie sheet and set aside. In a microwave safe bowl (make sure it is microwave safe! I assumed my first bowl was and it melted a hole through the bottom!) add the sugar and corn syrup and mix. Put in the microwave and cook for 3 minutes. Stir. Put back into the microwave and cook for an additional 3 minutes. The mixture should start looking like an amber color.
  • Stir in the cashews. Cook for an additional 3-5 minutes. I suggest checking after each minute. If the color looks golden brown then it is good to go. I cooked my first batch too long the first time and it burnt some of the nuts.
  • Once the mixture is a golden brown, remove from the microwave and stir in the butter and vanilla. Continue cooking for an additional minute. Remove and stir in the baking soda. It will start to foam and become thick.
  • Spread the mixture on the buttered baking sheet and allow to completely cool. Break into pieces. Can be stored at room temperature in an airtight container for up to 3 days.
