1 broiler/fryer chicken (3 to 4 pounds), cut up
1 can (14 ounces) whole-berry cranberry sauce
1 cup barbecue sauce
1 small onion, finely chopped
1 celery rib, finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice

Steps:

  • Place chicken in a 3-qt. slow cooker. In a small bowl, combine the cranberry sauce, barbecue sauce, onion, celery, salt and pepper; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender. Serve with rice. Freeze option: Cover and freeze cooled chicken and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Reheat in a foil-lined 13x9-in. baking dish in a preheated 325° oven until heated through, covering if necessary to prevent excess browning.

JOHN'S CROCK POT CRANBERRY CHICKEN



John's Crock Pot Cranberry Chicken image

A delicious recipe for the upcoming fall season. I like using chicken thighs rather than breasts in the crock pot as they stand up better to the longer cooking and add more flavor to the dish. Do not overcook the thighs. Six hours is about as long a cooking time as you'll need. I actually use a little less time. This recipe was posted by Wolverine on the TOHBB.

1 small onion, sliced thinly
1 cup fresh cranberries (may be frozen, if frozen, do not thaw)
2 1/2 lbs boneless skinless chicken thighs (remove large amounts of fat)
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard
2 teaspoons cider vinegar
1 1/2 tablespoons cornstarch
2 tablespoons cold water
salt

Steps:

  • Place onion slices and cranberries in the bottom of your crock pot. Arrange chicken on top.
  • In a small bowl, mix together the catsup, brown sugar, dry mustard and vinegar. Pour over the chicken.
  • Cover and cook on low setting about 6-7 hours or until the chicken is tender.
  • To serve: lift the chicken out and set on serving platter. Cover and keep warm in your oven on a low setting. Mix the cornstarch and water until smooth. Turn the crock pot to high setting and add cornstarch mixture. Cover and cook this for about 15 minutes more or until the sauce thickens. Season to taste with salt and pour the sauce over the chicken.

A nice easy dish for those busy days around the holidays. Put this on before going shopping and dinner is waiting when you get home! Serve with rice or couscous and a veggie. Boneless chicken thighs could be used also. EDITED TO ADD: The 6 hour cooking time is based on my very old crockpot, but I have noticed my newer crockpot cooks hotter, so 4 hours on low may be plenty.

6 boneless skinless chicken breast halves
1 small onion, chopped
1 cup fresh cranberries (may be frozen-don't thaw)
1 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
3 tablespoons brown sugar
1 cup orange juice
3 tablespoons all-purpose flour
2 tablespoons cold water

Steps:

  • Place all ingredients, except flour and water, in the crock pot.
  • Cover and cook on LOW 4-6 hours (depending on how hot your pot runs), until chicken is tender.
  • Mix flour with cold water and add to pot in the last 15 to 20 minutes and cook until thickened.
  • Taste and adjust seasonings.

OUT OF THIS WORLD! Tender and delicious! Flavor Galore! This is one of my favorite dishes. I have found that bone-in chicken gives more flavor. I use the following method for fall-off-the-bone chicken. After placing the lid on crock pot place a large double folded kitchen towel over top of lid letting it fall over sides of crock pot. This allows no steam to escape. The sauce in this dish makes good 'gravy' over cooked rice. Makes a pretty dish to serve guests.

3 chicken breasts (bone-in)
1 1/2 teaspoons salt
1 onion, chopped
1 celery rib, chopped
1 (15 ounce) whole berry cranberry sauce
3 ounces orange juice
1 teaspoon dry mustard
1/2 teaspoon cinnamon
2 teaspoons lemon juice
2 tablespoons honey
2 tablespoons brown sugar
3 tablespoons chili sauce or 3 tablespoons barbecue sauce
1 orange, sliced
1 tablespoon cornstarch
3 tablespoons cold water

Steps:

  • Rub salt onto chicken breasts and place in bottom of crock pot.
  • In a medium bowl place onion, celery, cranberry sauce, orange juice, dry mustard, cinnamon, lemon juice, honey, brown sugar and chili sauce. Stir and pour over chicken breasts.
  • Place lid on crock pot and top with kitchen towel using instructions in description above. (My crock pot is only 3 months old and I still do this.) Turn crock pot on high and allow to cook 1 hour. Turn on low for 3 or 4 hours. NOTE: I have tried leaving crock pot on high the entire time and this dish was done in 3 1/2 hours.
  • Lift lid and quickly place orange slices over chicken without stirring. Cook an additional hour.
  • Combine cornstarch and cold water. Add last 10 minutes of cooking time for thickening purposes.
  • Serve over cooked rice and enjoy!
