A great, no fuss way to make chicken fajitas. I serve them with Mexican rice and refried beans. A big favorite here.

1 1/2 lbs boneless chicken breasts, cut into strips
1 sweet vidalia onion, cut into thin wedges and separated
2 tablespoons lime juice
1 -2 garlic cloves, minced or 1 teaspoon garlic powder
3/4 teaspoon ground cumin
1 teaspoon seasoning salt
1/2 teaspoon chili powder
1 green bell pepper, thinly sliced (optional)
6 -8 flour tortillas, warmed
shredded cheddar cheese (optional)
salsa (optional)
sour cream (optional)
shredded lettuce (optional)

Steps:

  • Place chicken and onions (and peppers, if using) in crockpot. Sprinkle spices over all. Add the lime juice and stir well.
  • Cook on low for 4-6 hours. If you start with frozen chicken breast, you might need to cook for longer than 6 hours.
  • Serve in warm tortillas with your favorite fajita toppings.

1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 lb boneless, skinless chicken breast, cut in half
2 tablespoons taco seasoning
4 cloves garlic, diced
1 lime
10 oz canned diced tomatoes with green chiles, drained
flour tortilla
cheese, optional
sour cream, optional
guacamole, optional

Steps:

  • Add half of the sliced peppers and onions to your slow cooker.
  • Layer the chicken and coat all sides with taco seasoning.
  • Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
  • Add the remaining peppers and onions, cover and any remaining lime juice.
  • Cook on high for 3-4 hours.
  • Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
  • Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
  • NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
  • Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

2 lbs boneless skinless chicken breasts ((about 3-4 breasts))
1 (14.5 oz) can diced tomatoes ((or use fresh diced tomatoes))
3 bell peppers, sliced ((I used 1 yellow, 1 red and 1 orange))
1 yellow onion, sliced
3 garlic cloves, minced
3 tbsp fajita seasoning
juice of 1 lime

Steps:

  • Place the chicken breasts at the bottom of the slow cooker. Then add the fajita seasoning, diced tomatoes, sliced peppers, onion, garlic and lime juice on top.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours. Once chicken is cooked through, remove and shred with a fork or knife.
  • Add the shredded chicken back to the slow cooker and stir.
  • Serve immediately with toppings of choice.

4 chicken breasts, boneless and skinless
1 1/2 teaspoons cumin
1/2 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon sea salt
1 lime, juice of
1/2 cup diced green chilis (canned is fine)
1 cup salsa or 1 cup pico de gallo
1 -2 tablespoon olive oil
2 bell peppers, sliced (any color)
1 small red onion, sliced thickly
1 small yellow onion, sliced thickly

Steps:

  • 1. Place the chicken breasts in a crockpot.
  • 2. Top with cumin, paprika, chili powder, salt, lime juice, diced green chilis, and salsa.
  • 3. Cover and cook on high for 4-5 hours or until chicken is tender and shreds easily.
  • 4. Shred the chicken lightly and replace the cover.
  • 5. Heat the oil on high heat in a large saute pan. Add the peppers and onions to the pan ad saute until browned in places, yet still crisp. Your pan will need to be very hot to do this.
  • 6. Add the cooked vegetables to the crockpot with the chicken.
  • 7. Serve with lettuce, salsa, lime wedge. (If not on Whole30, you can serve with tortillas and sour cream also.).

This recipe is so easy and good! I didn't have time one day to make fajitas, so I decided to put them in the crock pot. They turned out real good and not soupy at all. The McKormick seasonings really gave the chicken a good flavor.

1 lb chicken breast (cut into strips or chunks)
1/4 cup chicken broth
1 (1 1/8 ounce) package mckormick fajita seasoning mix (or your favorite brand-found usually by the seasonings and dry gravy mixes in the grocery store)
sliced green pepper (optional)
sliced onion (optional)

Steps:

  • Mix chicken broth and fajitas seasoning until blended.
  • Place cut up chicken in crock pot.
  • Add green peppers and onion if you want.
  • Pour chicken broth/fajitas mixture over everything.
  • Set crockpot on low and cook for 6-8 hours.
  • Remove chicken from crockpot with a slotted spoon when its done.
  • Place on warmed up flour tortillas and serve with favorite toppings.

2 ½ pounds frozen skinless, boneless chicken breasts
1 (14.5 ounce) can diced tomatoes, well drained
1 (8 ounce) jar salsa
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground paprika
1 teaspoon white sugar
1 teaspoon onion powder
1 teaspoon garlic powder
¾ teaspoon chicken bouillon granules
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
1 pinch red pepper flakes, or to taste
2 onions, sliced into thin strips
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 green bell pepper, sliced into strips
2 tablespoons cornstarch
1 (15 ounce) package flour tortillas
1 (8 ounce) package shredded Cheddar Jack cheese
½ cup sour cream, or to taste

Steps:

  • Combine chicken breasts, tomatoes, salsa, chili powder, salt, paprika, sugar, onion powder, garlic powder, bouillon granules, cumin, cayenne pepper, and red pepper flakes in a slow cooker.
  • Cover and cook on Low until chicken is tender, about 5 hours. Transfer chicken to a cutting board; shred using 2 forks. Return to the slow cooker. Add onions, red bell pepper, yellow bell pepper, green bell pepper, and cornstarch.
