½ cup chopped yellow onion
2 cloves garlic, minced
1 cup brown basmati rice
1 teaspoon curry powder
1 teaspoon garam masala
1 teaspoon cumin seeds
2 cups vegetable broth
½ teaspoon kosher salt

Steps:

  • Heat grapeseed oil in a skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes. Stir in rice, curry powder, garam masala, and cumin seeds. Continue to cook and stir until rice is toasted, 1 to 2 minutes more.
  • Pour broth into rice mixture and season with salt; bring to a boil. Reduce heat to low, cover, and cook until rice is tender and liquid is absorbed, 45 to 50 minutes.

3 cups boiling water

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place rice, salt, and butter in a casserole dish that has a cover. Pour boiling water over rice; stir.
  • Cover and bake in preheated oven until liquid is absorbed and rice is tender, about 1 hour. Remove from oven, fluff with fork, and serve hot.

Steps:

  • Rinse the rice in a fine-mesh sieve under cold water for 30 seconds. Drain.
  • Combine the rice, salt and 2 cups water in a wide, medium saucepan and bring the water to a boil. Reduce the heat to low, cover and simmer until all liquid is absorbed, about 30 minutes. Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.

I threw this together and prayed! I am paid in 2 days and needed a good, easy and economical meal with what I had on hand. You can use regular corn and change the spicing to go Italian, Spanish, Mexican etc. I loved what came out and well enough to add to my 'weekend cook for the week' menu. You can also add chicken or any leftover meat to this and shrimp would work as well if added near the end of cooking. This is the only recipe I have ever posted where I will say ''use it as a springboard.'' I can tell you one thing; I have never had more fluffy or soft brown rice in my life. c.\2007

1 small onion, chopped

I'm notorious for ruining rice, so I usually stay away from it -- until I found this recipe. It's Alton Brown's recipe for perfect brown rice, and it's great! I've made it many times and it really does turn out perfectly every time. You can use either medium or short grained rice.

1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the rice into an 8-inch square glass baking dish.
  • Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
  • After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.
