This simple beef stew is easy to make. Just set it and let it cook and enjoy the flavors!

1 lb beef stew meat
2-3 large russet potatoes (washed-peeled-chopped)
4 large carrots (washed-peeled-chopped)
2-3 ribs of celery (chopped)
2 large leek
1 large onion (chopped)
1 1/2 cup frozen peas and carrots (or just peas)
15 oz canned diced tomatoes
1 1/4 cup sliced mushrooms
2 tsp minced garlic
32 oz beef stock
1/3 all purpose flour
1 tsp crush basil
1 tsp Rosemary leaves
1/2 tsp oregano
2 tbsp salt free seasoning or 2 tsp salt
1/2 tsp ground black pepper
2 tbsp vegetable oil
2 tbsp cornstarch

Steps:

  • Pour vegetable oil into a skillet, and place over medium heat.
  • Coat the meat with the flour, and once the oil is hot brown the meat.
  • Remove the meat from the pan, and pour in the beef stock.
  • Toss the meat back into the pan, and cook for 2 minutes, then remove from the heat.
  • Toss all of the vegetables into the Crock-Pot, along with the meat, and seasonings.
  • Cook on high for 3 hours.
  • Dish out about 1 cup of beef stock, and add 2 tbsp of cornstarch to it. Whisk.
  • Pour the thickened stock back into the slow cooker. Mix, and let sit for 5-10 minutes.
  • Serve, and enjoy!

2 pounds beef chuck, cut into 1 1/2-inch pieces
1 teaspoon sweet paprika, plus more for garnish
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
1 pound small white potatoes, halved
1/2 pound cremini mushrooms, halved
3 medium carrots, cut into 1-inch chunks
1 medium onion, chopped
2 tablespoons tomato paste
1 cup red wine
2 cups low-sodium beef broth
3 sprigs fresh thyme
1 teaspoon caraway seeds, optional
1/2 cup loosely packed parsley leaves, chopped
Sour cream, for serving

Steps:

  • Toss the beef with the paprika, 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the beef and cook undisturbed until it begins to brown, about 3 minutes. Continue to cook, turning the beef as needed, until mostly browned, about 3 minutes more. Remove the skillet from the heat and transfer the beef to the insert of a 6-quart slow cooker; add the potatoes, mushrooms, carrots and onions and stir to combine.
  • Heat the remaining 1 tablespoon of oil in the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, thyme, caraway if using, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking; continue simmering and whisking until the gravy is smooth and thick, about 4 minutes.
  • Pour the gravy into the slow cooker, cover and cook on low for 8 hours. The meat and vegetables should be tender.
  • Season with salt and pepper and stir in the parsley. Serve the stew in bowls with dollops of sour cream and a sprinkle of paprika.

This is the best beef stew I've ever made. It tastes great with a crunchy loaf of bread. I got this recipe from Real Simple (March 2004 edition). You'll need a 4 to 6 quart slow cooker. Browning the beef adds more flavor.

1/2 cup all-purpose flour
2/3 cup olive oil
2 large onions, diced
1 (6 ounce) can tomato paste
1 cup dry red wine
2 large potatoes, cut into 2 inch pieces
1/2 lb baby carrots
2 cups beef broth
1 tablespoon kosher salt
1 teaspoon dried thyme leaves
1 bay leaf
1 cup frozen peas, thawed

Steps:

  • Put the flour in a large Ziploc bag.
  • Add the beef and seal.
  • Toss to lightly coat the beef.
  • Heat a few tablespoons of the oil in a large skillet over medium-high heat.
  • Brown the meat in small batches, adding more oil as necessary.
  • Transfer to the slow cooker.
  • Add the onions to the skillet and cook over medium heat until tender, about 10 minutes.
  • Stir in the tomato paste and coat the onions then transfer to the slow cooker.
  • Pour the wine into the skillet and scrape up any browned bits and then add to the slow cooker.
  • Stir in the potatoes, carrots, broth, salt, thyme, and bay leaf.
  • Cover and cook on low heat for 7 1/2 hours or on high for 4 hours.
  • Add the peas and heat through before serving.

1 pound veal shoulder roast, cubed
20 baby carrots
1 large onion, finely chopped
2 cloves garlic, minced

1/4 teaspoon dried oregano
1/2 cup beef broth
1 can (14.5 ounce size) diced tomatoes, undrained

Steps:

  • Combine the flour, salt, and pepper in a shallow dish. Grease a large non-stick skillet and heat over medium-high heat. Coat the veal in the flour, shaking off any excess. Place in the heated skillet and cook, stirring occasionally, for 3-4 minutes or until browned. Place the carrots in the bottom of the crock pot. Top with the browned veal. Add the onion and garlic to the skillet, adding butter or oil as needed. Cook, stirring frequently, over medium heat for 5 minutes or until they begin to soften. Transfer to the crock pot. 1 1/2 pound chuck roast (cut into 1 1/2 inch pieces or pre-cut stew meat)
1/4 cup flour
2 teaspoons salt
1 teaspoon pepper
2 tablespoons olive oil
2 pounds Yukon Gold potatoes (halved or quartered depending on size)
1 pound baby carrots
2 tablespoons butter
1 yellow onion (diced)
3 cloves garlic (minced)
3 cans beef broth (approximately 40 ounces)
1 small can tomato paste
2 tablespoons Balsamic or red wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch (+ 2 Tbsp cold water)
1 tablespoon dried thyme
1 teaspoon dried parsley flakes
2 bay leaves
Fresh parsley (for garnish)

Steps:

  • Cut roast into 1 1/2 inch bite size chunks and place them in a gallon size resealable bag or other airtight container. Add flour, salt, and pepper. Shake bag until the meat is coated with flour.
  • Heat olive oil in a large heavy bottom skillet or pot. Add coated meat and brown each piece on all sides.
  • While meat is browning, cut potatoes and carrots and place both in the bottom of a crock pot. When meat is browned, layer the meat on top of the potatoes and carrots and leave remaining juices in the skillet.
  • Return the skillet to the stovetop and add butter. Melt the butter on medium-high heat, then saute onions and garlic. Stir in beef broth, tomato paste, red wine vinegar, and Worcestershire sauce. In a small cup, combine cornstarch and cold water. Mix until smooth then add to the liquid mixture in the skillet. This will thicken the liquid. Pour all the contents of the skillet over the meat and vegetables in the crock pot. Add thyme, parsley flakes, and bay leaves.
  • Cook on low for 7-8 hours or on high for approximately 4 hours. 30 minutes before serving check the taste of the broth and add salt, pepper, or seasonings as needed. Allow to cook for another 30 minutes after adding seasonings.
  • Remove bay leaves before serving. Garnish with fresh parsley.

2 pounds beef chuck ( or stewing beef)
3 tablespoons flour
½ teaspoon garlic powder
3 tablespoons olive oil
1 onion (chopped)
1 cup vegetable juice (such as V8)
4 cups beef broth
1 tablespoon Worcestershire sauce
½ teaspoon thyme (or 2 sprigs fresh)
1 teaspoon dried rosemary (or 1 sprig fresh)
3 cups potatoes (peeled and cubed)
2 cups carrots (cut into 1 inch pieces)
1 cup celery stalks (cut into 1 inch pieces)
¾ cup peas
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Combine flour, garlic powder and salt & pepper to taste. Toss beef in flour mixture.
  • Brown the beef and onions in olive oil small batches. Add some of the broth to the pan and scrape up any brown bits.
  • Add all ingredients except peas and cornstarch to a 6QT slow cooker.
  • Cook on high 4-5 hours or on low 8-9 hours or until beef is tender.
  • Mix cornstarch with 2 tablespoons water. Stir into the stew a little bit at a time to thicken (you may not need all of the mixture). Add peas.
  • Cover and cook 10 minutes. Season with salt & pepper.

1 teaspoon celery seed

1/4 cup vodka
1/4 cup condensed beef broth, undiluted

1 piece lemon, rind of, about 2 or 3 inches long

Steps:

  • Melt butter in a skillet over medium heat; add onions and cook until softened.

  • Sprinkle flour over mixture and cook, stirring, for 1 minute.
  • Add vodka and cook for 2 minutes, then add beef broth, juice and Worcestershire and bring to a boil.
  • Cook, stirring, until mixture thickens.
  • Place veal cubes and lemon peel in slow cooker, then pour sauce over meat.
  • Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours, until veal is tender.
  • Serve with mashed potatoes or rice.
