SHRIMP AND BROCCOLI (FAST & EASY DINNER!)



Shrimp and Broccoli (Fast & Easy Dinner!) image

This ultra flavorful shrimp and broccoli comes together in minutes for a fast and easy healthy dinner! Serve with rice or over noodles.

1 pound large shrimp, deveined (peeled or unpeeled)
1 1/2 pounds (3 large heads) broccoli
1 small white onion
2 tablespoons rice vinegar
4 tablespoons soy sauce
1/2 tablespoon chili garlic sauce (optional)
2 tablespoons sesame oil (regular, not toasted)
1/4 teaspoon kosher salt
Sesame seeds, for garnish
Thinly sliced green onion, for garnish (optional)
To serve: rice or noodles (see notes above)

Steps:

  • If frozen, thaw the shrimp according to the package instructions or the notes above.
  • Chop the broccoli into small bite-sized pieces. Cut the onion into wide slices.
  • In a measuring cup, stir together the rice vinegar, soy sauce, and chili garlic sauce.
  • In large skillet or wok, heat the sesame oil over medium-high heat. Add the broccoli, onion and kosher salt and cook 5 to 6 minutes until fork tender, stirring occasionally. Add the shrimp and cook 3 to 4 minutes, stirring frequently.
  • When the shrimp is just about opaque, add the sauce mixture and cook 1 minute. Remove from the heat. Serve with sesame seeds.

You don't have to live by the shore to enjoy a good old-fashioned New England-style shrimp boil. Use a slow cooker to cook potatoes and seasonings, then add the corn, shrimp and sausage to cook in the flavorful broth at the end.

1/4 cup seafood seasoning, such as Old Bay
2 large ears yellow corn, husked and cut in to 1-inch pieces
1 1/2 pounds large, deveined, shell-on shrimp
8 ounces kielbasa, halved lengthwise and cut into 2-inch pieces
3 cloves garlic, lightly smashed
2 bay leaves
2 medium yellow onions, cut into eighths
1/2 cup chopped fresh parsley
1/4 cup fresh lemon juice
Crusty bread, for serving
3 pounds very small red bliss potatoes (each about 1-inch in diameter)

Steps:

  • Put the potatoes, garlic, bay leaves, onions, 2 tablespoons of the seafood seasoning and 4 cups water in the insert of a 6-quart slow cooker. Stir to combine. Cover with a lid and cook on low heat for 4 hours.
  • Remove the lid and switch to high heat. Gently stir in the corn, shrimp, sausage and the remaining 2 tablespoons seafood seasoning. Cover with a lid and cook until the shrimp turn opaque and the sausage is warm through, 30 to 45 minutes. Gently stir in the parsley and lemon juice.
  • Serve directly from the slow cooker or pour into a large serving bowl and serve immediately with crusty bread.

1 cup beef broth
½ cup low sodium soy sauce
¼ cup brown sugar
1 tablespoon sesame oil
4 cloves garlic, minced
4 tablespoons cornstarch
4 tablespoons water
1 head broccoli, cut into florets
white rice, cooked, for serving

Steps:

  • In the insert of the crockpot, whisk together beef broth, soy sauce, sesame oil, minced garlic, and brown sugar.
  • Place slices of beef in the liquid and toss to coat.
  • Cover with lid and cook on low heat for 4 hours.
  • After 4 hours, whisk together cornstarch and water in small bowl. Pour into crock pot, add the broccoli and gently stir to combine.
  • Cover with lid and cook 30 minutes to cook broccoli and thicken sauce.
  • Serve with warm white rice.
  • Enjoy!

6 medium cloves garlic, sliced, divided
4 cups small broccoli florets
½ cup diced red bell pepper
½ teaspoon salt, divided
½ teaspoon ground pepper, divided
1 pound peeled and deveined raw shrimp (21-30 count)
2 teaspoons lemon juice, plus more to taste

Steps:

  • Heat 2 tablespoons oil in a large saucepan over medium heat. Add half the garlic and cook until beginning to brown, about 1 minute. Add broccoli, bell pepper and 1/4 teaspoon each salt and pepper. Cover and cook, stirring once or twice and adding 1 tablespoon water if the pot is too dry, until the vegetables are tender, 3 to 5 minutes. Transfer to a bowl and keep warm.
  • Increase heat to medium-high and add the remaining 1 tablespoon oil to the pot. Add the remaining garlic and cook until beginning to brown, about 1 minute. Add shrimp and the remaining 1/4 teaspoon each salt and pepper; cook, stirring, until the shrimp are just cooked through, 3 to 5 minutes. 1 medium onion (diced)
4 slices bacon (diced)
500 g frozen shrimp (shelled)
500 g frozen broccoli
1 (8 ounce) can sliced mushrooms
1 cup hot chicken broth or 1 cup bouillon
5 tablespoons butter
1 tablespoon soy sauce
1 tablespoon minced garlic
1 teaspoon nutmeg
1 tablespoon black pepper
3/4 cup flour
2 1/2 cups milk
1/2 cup cream

Steps:

  • Place potatoes, onion, bacon, shrimp, broccoli, and mushrooms in bottom of crockpot.
  • In a large bowl, gradually stir the butter into chicken broth, and then add soy sauce, garlic, nutmeg, and pepper.
  • Slowly blend the flour into the liquid, making sure to eliminate all lumps.
  • Finally, thoroughly combine the milk, cream, and flour mixture.
  • Pour into crockpot.
  • Cover and cook on high for 6 hours. Stir occasionally.
  • (About 1 hour prior to serving, additional flour may be added to thicken to desired consistency).
  • Serve over rice, pasta, or with bread bowl.
