2 cloves garlic (minced)
2/3 cup peanut butter
1 cup chicken broth
1 lb boneless (skinless chicken breasts, cut into 1 inch cubes)
1 cup shredded zucchini
1/3 cup soy sauce
1 tsp sugar
1 red pepper (cut into thin, long strips)
1 tbsp lime juice
1 cup chopped cilantro (divided)
chopped peanuts (for garnish)
12 ounce linguine noodles (cooked and drained)

Steps:

  • Add garlic, peanut butter, broth, chicken, zucchini, soy sauce, sugar, and red pepper to slow cooker. Stir to combine.
  • Cook on low for 4-5 hours or on high for 2-3 hours. A half hour before you are going to serve, add in lime juice and 1/2 cup of cilantro.
  • Serve over noodles and garnish with remaining cilantro and peanuts.

6 skinless, boneless chicken breast halves - cut into 1/2 inch strips
1 large red bell pepper, seeded and sliced into strips
1 large onion, coarsely chopped
½ cup chicken broth
¼ cup soy sauce
1 tablespoon ground cumin
3 cloves garlic, minced
½ teaspoon red pepper flakes
salt and pepper to taste
2 tablespoons cornstarch
⅔ cup creamy peanut butter
1 tablespoon soy sauce
¼ cup lime juice
3 green onion, chopped
¼ cup chopped fresh cilantro
½ cup chopped roasted peanuts

Steps:

  • Place the chicken breast strips, bell pepper and onion into a slow cooker. Pour in the chicken broth and 1/4 cup of soy sauce, then season with cumin, garlic, red pepper flakes, salt and pepper. Stir to blend, then cover and cook on Low for 4 1/2 to 5 hours.
  • Remove 1 cup of the liquid from the slow cooker, and mix this with the cornstarch, peanut butter, 1 tablespoon of soy sauce and lime juice. This should blend into a fairly thick sauce. Stir the sauce back into the slow cooker, and place the lid on the pot.
  • Cook on High for 30 minutes. Garnish with green onions, cilantro and peanuts before serving.

1 tablespoon vegetable oil
3 lbs chicken pieces (skin on breasts, skinless legs and thighs)
2 onions, finely chopped
4 garlic cloves, minced
1/2 red chili peppers, minced or 1/2 green chili pepper
2 teaspoons curry powder
1 teaspoon dried oregano leaves
1 teaspoon salt
1/2 teaspoon black peppercorns, cracked
1/2 cup condensed chicken broth, undiluted
1/2 cup tomato sauce
1 bay leaf
1/2 cup peanut butter
2 tablespoons sherry wine or 2 tablespoons lemon juice
1 red bell pepper, finely chopped

Steps:

  • In a nonstick skillet, heat oil over medium-high heat. Add chicken, in batches, and brown on all sides. Transfer to slow cooker stoneware.
  • Reduce heat to medium, add onions and cook, stirring, until softened. Add garlic, chili pepper, curry powder, oregano, salt and peppercorns and cook, stirring, for 1 minute. Stir in chicken broth, tomato sauce and bay leaf and bring to a boil.
  • Pour mixture over chicken. Cover and cook on low for 6 hours or on high for 3 hours, until juices run clear when chicken is pierced with a fork.
  • In a bowl, combine peanut butter and sherry. Add a little cooking liquid and stir to blend. Add to slow cooker along with red pepper. Cover and cook on high for 20 minutes, until pepper is tender. Discard bay leaf.
  • Serve over hot white rice.

1 -1 1/2 lb boneless skinless chicken thighs or 1 -1 1/2 lb boneless skinless chicken breast, cut into pieces
1 (28 ounce) can diced tomatoes with juice
1 cup chicken stock
1/4 cup peanut butter (I like all natural chunky)
1/3 cup diced onion
1 garlic clove (minced)
1 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon crushed red pepper flakes (or more if desired!)
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons white sugar (optional, but recommended if using natural peanut butter)

Steps:

  • Put all ingredients except the chicken into a slow cooker. Stir to combine.
  • Add the chicken. Cook on low until liquid has thickened and chicken is cooked (approximately 5 hours depending upon size of chicken pieces - I always use a meat thermometer to be sure).

1 large onion
3 garlic cloves
2 tablespoons peanut oil
1 beef double bouillon cubes (Knorr)
3 tablespoons curry powder
1 tablespoon minced ginger
3 tablespoons peanut butter
1 tablespoon chopped cilantro
1/2 glass white wine
1 cup hot water
salt
white pepper
7 ounces coconut milk
cornstarch, and water to thicken (I use 1/4 cup water and 3 tablespoons cornstarch, about)

Steps:

  • Cut chicken into cubes, and sprinkle with salt and pepper.
  • Slice onion in julienne, and mash garlic.
  • Heat oil in a small sauteé pan, and brown garlic and onions.
  • Set aside.
  • Mix hot water with bouillon cube and peanut butter, until both have dissolved/melted.
  • Combine this with the coconut milk, curry, ginger, cilantro and wine.
  • Put chicken in crock pot.
  • Top with onions and garlic, and then with liquid mixture.
  • Cook on low heat for about 6-7 hours, or until cooked through and tender.
  • Add cornstarch slurry to thicken as desired.
  • Serve over steamed rice, with chopped cilantro and peanuts to garnish.
  • I like it a bit spicy, so I also add chopped chilies, or cayenne to the dish.

  • Put peanut butter and tomatoes w/chilies in crock pot on low, and any optional ingredients. Then add the chicken, I cut some up and leave some as whole breast, it will pull right apart when done in a couple of hours. When you are ready to turn it off, make some rice of your choice and use it as the bed for the peanut butter chicken, I use a fork and shred the chicken up in the crock pot, so it can absorb all the flavors, enjoy!

1 cup apple cider
1/8 teaspoon ground nutmeg
1 tablespoon curry powder
2 tablespoons butter
1 medium onion (chopped)
2 garlic cloves (minced)
6 boneless, skinless chicken breasts
Salt and pepper to taste
3 Granny Smith apples (peel on but cored and thickly sliced)
2 tablespoons apple-cider vinegar
1/3 cup chicken broth
1 tablespoon cornstarch

Steps:

  • Gather the ingredients.
  • In a small shallow bowl, combine the apple cider, nutmeg, and curry powder and set aside.
  • In a small microwave-safe dish, combine the butter, onion, and garlic. Microwave on high for 1 to 2 minutes or until the onion is softened. Place this mixture in the bottom of a 3- to 4-quart slow cooker.
  • Dip each chicken breast into the reserved apple-cider mixture to coat and then place them in the crock pot over the onion mixture. Pour any remaining apple-cider mixture over the chicken. Add salt and pepper to taste.
  • Cover the slow cooker and cook on low for 5 to 6 hours or until the chicken is almost cooked. Add the sliced apples and cook for 40 to 50 minutes longer on low or until the apples are tender and the chicken is thoroughly cooked to 165 F as measured by a reliable meat thermometer.
  • Remove the chicken and apples to a serving plate and cover with aluminum foil to keep warm.
  • To make the sauce, whisk together the vinegar, broth, and cornstarch in a small bowl until well mixed and lump free and stir into the liquid in the crock pot. Cover and cook on high heat, stirring occasionally, until sauce is thickened and bubbly, about 10 to 15 minutes. Pass the sauce separately at the table.
  • Enjoy!

1/2 c orange juice
1/4 c orange marmalade
2 Tbsp sesame oil

1 - 13.66 oz light coconut milk, divided - i used a little more
1 c uncooked basmati rice
3/4 c water
1/2 c chopped salted peanuts

  • 1. Place flour in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. Transfer to a greased 4- or 5-qt. slow cooker. In a small bowl, combine the peanut butter, orange juice, marmalade, oil, soy sauce, teriyaki sauce, hoisin sauce and 3/4 cup coconut milk; pour over chicken. Cover and cook on low for 4-5 hours or until chicken is tender. In a small saucepan, bring the rice, water and remaining coconut milk to a boil.
