SLOW COOKER SOUTHERN LIMA BEANS AND HAM
I searched your website for the simple lima bean recipe that my mom used to make and the one that is served by many restaurants here in the south as a side dish. I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

Steps:
- Soak lima beans in 2 quarts of water in a large bowl for 8 hours or overnight. The next day, drain the lima beans and place into a slow cooker with onions, ham bone, and ham. Pour in 3 cups of water or as needed to cover. Place lid on the cooker, set to High, and cook for 3 hours.
- Stir in Cajun seasoning, black pepper, garlic salt, and cayenne pepper; set cooker to Low and cook until the beans and meat are very tender, about 4 more hours.

SLOW COOKER LIMA BEANS
One of my favorite meals as a child was when my mother would cook a big pot of lima beans with ham, and we would eat it over rice with cornbread. She used a pressure cooker, but I prefer the slow cooker, and I've tweaked the ingredients just a bit from how she would make it. Great for when you're in the mood for some good down-home comfort food :)

- Drain beans. Add to crockpot along with remaining ingredients except fresh parsley. Cook on low 10 hours. Remove ham bone and bay leaf. Pull off any ham on the bone, chop it up and add back to soup. Stir in fresh parsley just before serving.

CROCKPOT LIMA BEAN SOUP
This is an old recipe from the original crockpot that took me time to find. Great for winter or anytime. Use more or less ham/bacon to taste...ham for less fat, but bacon adds more flavor. I like adding a little more green pepper and onions...great for experimenting. Be prepared to sleep in separate rooms after eating or take some Bean-O!!!

- Sort through the beans and remove any debris or broken beans. Rinse the beans through a colander under cold, running water. Advertisement.
- Soak the beans to reduce indigestion and speed up the cooking process. Place the beans in a large bowl and cover with 3 inches of cold water. Allow them to soak at room temperature for at least 8 hours.
- Speed up the soaking process by quickly boiling the beans first, if you are in a hurry. Put the beans in a large pot and cover with 3 inches of cold water.
- Drain the beans of their soaking water and transfer them to your slow cooker. If you wish, toss in aromatics to flavor the beans. Quartered onions, bay leaves and whole cloves of garlic all add flavor.
- Cover the slow cooker and set to High. Allow the beans to cook for 2 hours, or until they are tender enough for you liking. Season with salt and pepper to taste before serving.
