SLOW COOKER POT ROAST
Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

- Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
- Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
- Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
- Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

- Put your mushrooms and onion in your crock pot
- Place your roast in your crock pot
- Sprinkle your sauce mix and red pepper flakes evenly across your roast.
- Pour tomatoes and sauce over top.
- Cover and cook on low for 8-10 hours, it is done when your roast is cooked through and very tender
- Take your roast out, cut into large chunks and keep warm
- Skim the fat from the cooking liquid in your crock pot and discard the fat
- In a coffee cup, mix together your water and cornstarch until smooth
- Pour into the juices in your crock pot and stir until combined well
- Cover and cook on high for 20-30 minutes, until your mixture is thickened, stir once
- Add your roast chunks back into your crock pot
- Cover and cook an additional few minutes until everything is heated through

- Season roast liberally with onion powder, garlic powder, salt, and pepper on all sides.
- Heat a pan over medium-high heat until scorching hot. Add olive oil. Sear beef until brown on all sides, holding up roast to get all edges, 5 to 10 minutes. Transfer roast to the slow cooker. - With a sharp paring knife, cut 4 slits in beef roast; stuff slits with half the garlic. Generously season beef with 1 1/2 teaspoons salt and 1 teaspoon pepper. In a large skillet, heat oil over high heat, swirling to coat bottom of pan. Cook beef until browned on all sides, about 5 minutes.
- In a 5-quart slow cooker, combine beef, onion, potatoes, tomatoes (with puree), rosemary, and remaining garlic. Cover; cook on high setting until meat is fork-tender, about 6 hours (do not uncover while cooking).

ITALIAN POT ROAST
Steps:
- Preheat oven to 350 degrees F.
- In a large Dutch oven, heat olive oil over medium high heat.
- Pat roast dry and sprinkle on salt and pepper. Once the oil is shimmering hot, sear the meat on both ends and all the way around the outside. Total time about 15 minutes to sear the whole roast.
- Remove the roast to a plate and add the carrots, celery and onions and cook for five minutes, stirring often.
- Add the tomato paste and garlic and cook for two more minutes.
- Add wine to deglaze. Cook until the wine evaporates.
- Add the bay leaves, sundried tomatoes, crushed tomatoes, broth, thyme, oregano and basil and stir. Add the beef back in along with any liquid on the plate, cover and place in the oven for three hours, turning the beef over once about 1 ½ hours into the roasting time.
- After the full three hours, remove the meat, let it rest under a sheet of loose foil for 10 minutes.
- Remove and discard bay leaves and thyme sprigs then slice the beef and serve with the sauce.
- The string should be left on while slicing to hold the roast together. OK to cut off after sliced and plated.

- Sprinkle roast evenly with pepper. Brown roast on all sides in hot oil in a large dutch oven over medium-high heat. Place roast on top of mushrooms and onions in slow cooker. - Place dried porcini mushrooms in hot beef stock to reconstitute and soften for about 30 minutes.
- Season both sides of the beef with salt and pepper, plus any dried seasonings that you prefer.
- Pour olive oil into a large, deep cast iron dutch oven pot or a lined cast iron pot (such as Le Creuset).
- Add the beef to the pan to sear (brown) on each side for about 7 minutes, turning only once, totaling about 15 minutes. While beef is searing, sprinkle about a teaspoon of chopped garlic all over to saute with the beef.
- Remove beef from the pot and place on a platter.
- With a sharp knife, cut slits in the beef and insert the slices of garlic.
- In the hot olive oil, saute the chopped onions, carrots, celery, and pancetta.
- Then add the chopped garlic and saute for another 3 - 5 minutes, being very careful not to burn the garlic.
- Deglaze the pan with about 2 Tbsp. deep, dark red wine (merlot or burgundy) and simmer until the wine is reduced but not completely evaporated.
- Add 3 Tbsp. or more of tomato paste and the cans of imported Italian tomatoes and juice, squishing the tomatoes so that they fall apart as you pour them into the pot.
- Add all of the chopped herbs, except for the sprigs of thyme, rosemary, and Italian parsley which are added at the end of cooking.
- Gently stir everything together with a large spoon.
- Add the beef broth and red wine.
- Add the large cut up pieces of carrots, celery, and potatoes.
- Add the artichokes, roasted red pepper slices, and the crimini and porcini mushrooms.
- Place the garlic-studded beef roast back into the pot on top of the vegetables.
- Add a few sprigs of thyme and rosemary to the pot.
- Cover the pot with a lid and bake in the oven for 3 hours on 325 F degrees OR until fork tender (beef easily breaks up into pieces with a fork).
- Add the chopped Italian parsley for the last 5 minutes of cooking.
- After roasting is finished, remove from the oven and cover loosely and allow everything to rest for 10 minutes.
- Garnish with fresh sprigs of rosemary and thyme, and minced Italian parsley.
ITALIAN STYLE POT ROAST (CROCK POT)
This is a wonderful crock pot meal. I serve it with soft creamy polenta for a great meal. We usually just scoop the sauce right out of the crock without reducing. It tastes great either way. The browning of the meat and vegetable really adds a lot to the flavor. Don't skip this step! If you use regular bacon, you may need to drain off some of the fat before adding the tomato and wine. - In a large skillet, heat oil over med-hi heat. Add roast and brown well on all sides.
- While roast is browning, chop pancetta or bacon into small pieces.
- Chop onion, carrot and celery as well.
- Mince garlic.

- Cover and cook on Low for 10-12 hours or Hi for 5-6 hours.
- When meat is done, remove to a platter and cover with foil to keep warm.
- Pour sauce from crock into a saucepan and bring to a boil. Reduce heat and simmer until it is reduced by about 1/3. Taste for seasoning.
- Remove bay leaves and cinnamon stick and cloves if you can.
- Add olives and heat through.
- Serve sauce over meat.
- Enjoy!

- Pat beef dry and season with kosher salt and black pepper on all sides.

- Season both sides of beef roast with salt and pepper. Add olive oil to a large skillet and place over MEDIUM-HIGH heat. Add roast and sear for a few minutes on each side, or until nicely browned. Remove from heat and transfer to 6 quart slow cooker.
- Return skillet to heat add additional olive oil, if necessary. Add diced onion, celery, and minced garlic. Cook and stir for a couple of minutes and then and add red wine. Cook, stirring to deglaze the pan for just a minute or two and then transfer the contents of the skillet to the slow cooker with the roast. Scatter the carrots over the top and pour the diced tomatoes and tomato sauce around the roast.
- Whisk together the beef broth, Dijon mustard, and Worcestershire sauce in a measuring cup or small bowl. Pour the mixture around the roast.
- Sprinkle rosemary, thyme, basil, salt, and pepper over the roast and tuck a bay leaf into the sauce mixture.
