Steps:
- Spray the inside of the slow cooker with nonstick cooking spray.
- In a medium-size mixing bowl, combine the brown sugar, lemon juice, liquid from can of pineapple and mandarin oranges, ginger, salt, and pepper. Stir until well mixed.
- Add the cornstarch to the mixture and whisk until it is mixed.
- Place the chicken inside the Crock Pot. Top the chicken with the mandarin oranges and pineapple slices.
- Pour the seasoning mixture over the chicken.
- Cover the Crock Pot and cook on low for 4 hours or until the chicken is done.
- Serve over rice.

Steps:
- Place a large skillet over high-heat and add some oil, once hot, sear the chicken pieces until browned.
- Place the thighs in the crockpot.
- Add the rest of the ingredients on top.
- Cover with the lid on the slow cooker, and cook on LOW for 7-8 hours, or HIGH for 3-4 hours.
- During the last 30 minutes of cooking, add the cornstarch slurry. Close the lid and let it cook for 30 more minutes.
- Serve it warm over some white rice and veggies on the side.

PAULA DEEN'S POT ROAST IN A CROCK POT
This is now my go to pot roast. She has a version of this recipe in one cookbook for the oven and another in the slow cooker. Both are excellent.

- Sprinkle roast on all sides with house seasoning. Using a skillet over high heat, sear roast until brown in oil. Place roast in a slow cooker, and layer onions, bay leaves, crushed bouillon cubes, garlic, and cream of mushroom soup. Add the Chardonnay and cover with enough water to cover all of the ingredients. Cook on the low setting for 8 hours.
CROCK POT HULA CHICKEN
A tender pineapple chicken dish that is guaranteed to be gobbled up by kids and adults alike. You can also add peppers, they just aren't a big hit in our house. Toss everything in the crock pot (even frozen chicken breasts!) and come home to a complete meal that just needs to be served over rice. This was an entry in RSC #13. Enjoy!

- Pour honey, soy sauce, brown sugar, garlic powder, ginger, bouillon and pineapple juice in the crock pot and stir.
- Lay chicken on bottom of pot and cover with carrots and pineapple chunks.
- Cook in your crock pot for 4-6 hours on low or 3-4 on high. If you are using frozen chicken breast, just add another hour on low or 1/2 hour on high.
- I actually like the thinner sauce for this one. A reviewer suggested thickening the sauce, so I will include CarrolJ's recommendation - after the meat, carrots and pineapple are removed, add 1/2 cup of water mixed with 4 Tablespoons of cornstarch. Then cook the sauce until thickened and smooth.

- In a skillet lightly brown chicken pieces slowly in vegetable oil. Remove from skillet and place in bottom of crock pot.
- In same skillet cook onion and celery just until tender, but not browned.
- Add remaining ingredients and simmer about 1 minute. Pour sauce over chicken in crock pot.
- Turn crock pot on high for 1st hour and then to low for 3-4 hours.
- Note: If you want sauce thicker, add 1 tablespoon of cornstarch during last 30 minutes.
- Wonderful served over buttered rice!
