SLOW COOKER MASHED RED POTATOES WITH PARMESAN
When there's no space on the stovetop to boil and mash potatoes, braise and mash them in a slow cooker - an easy and forgiving one-pot method. This rustic version has big flavors, thanks to the garlic that's cooked and smashed with the potatoes. The five garlic cloves lends a fairly assertive flavor, so decrease it to 2 or 3 cloves if you want a more subtle effect. You can leave the dish on warm for up to 3 hours after you mash the potatoes, just stir in the Parmesan and parsley right before serving.

- Toss together the potatoes, garlic, olive oil, juice of 1/4 the lemon (about 1 tablespoon), salt and a generous amount of black pepper in a 5- to 8-quart slow cooker. Cover and cook on high, stirring once or twice to encourage even cooking, until the potatoes are very tender, about 4 hours.
- Coarsely mash the potatoes and garlic with a potato masher. Just before serving, fold in the Parmesan, parsley and remaining 1 tablespoon lemon juice. Taste for seasoning and add more salt and pepper if necessary.

Steps:
- Place the potatoes in a large pot (so they are in a single layer) and cover them with an inch of water. Bring the pot to a boil then reduce the heat and simmer for 30 minutes, or until the potatoes are soft.
- In a small bowl, mix together the olive oil, salt, pepper, thyme, and garlic.
- Remove the potatoes from the pot and let them cool slightly. Turn your oven to broil with the rack near the top.
- Smash the potatoes (see notes) then drizzle them with the oil and herbs. Broil for 10 minutes, or until the tops are crispy.

I don't remember where I got this recipe, but it has become one of our favorites. You can cover any leftover potatoes and refrigerate or freeze. Reheat quickly in the microwave, adding a little milk for desired consistency.

- Halve or quarter potatoes as necessary to make similar size pieces.
- Place in a 4 to 6 quart crock pot.
- Add garlic, oil, salt and water; mix well to coat all potato pieces.
- Cover and cook on HIGH for 3-1/2 to 4-1/2 hours or until potato pieces are tender.
- With a fork or potato masher, mash potatoes and garlic.
- Stir in cream cheese until well blended.
- Stir in enough milk for soft serving consistency.
- Serve immediately, or cover and hold in slow cooker on LOW setting for up to 2 hours.
- I have used a 3 ounce piece of cream cheese, cubed, in place of the tub of cream cheese and chives and onions.

- Place garlic in the Crock Pot, then add potatoes. Top with butter, sprinkle on the salt, and add the water or vegetable broth.
- Cook on high 3 - 4 hours or low 8 hours. Potatoes and garlic should be very tender.
- Using a potato masher, mash potatoes a bit and then pour in 1/4 cup half-and-half. Continue mashing, adding additional half-and-half until potatoes are desired consistency. Taste and add additional salt and pepper if desired.
- Serve topped with additional butter if desired.

- In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water.
- In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency.

- Drain water and coarsely smash potatoes with potato masher. (until just slightly smashed).
