2 skinless chicken breasts
3 tbsp barbecue sauce
2 rashers streaky bacon
50g cheddar , grated

Steps:

  • Heat the grill to medium-high and line a baking sheet with foil. Lay the chicken breasts upside-down on the foil, brush with 1 tbsp of barbecue sauce, then grill for 5 mins. Turn the chicken breasts over, add the bacon rashers to the tray, then return to the grill for a further 5 mins.
  • Drizzle the chicken with the remaining barbecue sauce, sprinkle with cheese, then place back under the grill for 2-3 mins until the chicken is cooked through, the cheese is bubbling and golden and the bacon is crispy. Top the chicken with the bacon to serve.

4 skinless, boneless chicken breast halves
1 cup Worcestershire sauce
1 cup vegetable oil
1 cup lemon juice
1 teaspoon garlic powder

Steps:

  • Place chicken in a single layer in a bowl or pan. Mix together Worcestershire sauce, oil, lemon juice, and garlic; pour over chicken. Cover. Refrigerate for at least 6 hours.
  • Take chicken out of marinade, and place on broiler pan or grill. Broil until done, approximately 7 minutes on each side.

TANGY MARINATED BAKED CHICKEN

6 Tbsp unsalted butter, melted
1/3 cup red wine vinegar
½ cup low sodium soy sauce
3 garlic cloves, minced
2 Tbsp fresh parsley, finely chopped
1/3 cup ketchup
4 chicken breasts
2 Tbsp corn starch
2 Tbsp cold water
sour cream (1/4 to 1/2 cup)
cooked noodles, rice or mashed potatoes

Steps:

  • In a medium-sized bowl, whisk together the butter, soy sauce, red wine vinegar, garlic, parsley and ketchup until thoroughly combined.
  • Pound chicken breasts until even, about an inch thick.
  • Place chicken in marinade, making sure it is thoroughly covered, and place in fridge for 4-6 hours.
  • When ready to bake, preheat the oven to 350 degrees. Place chicken in a large casserole dish and pour the marinade over the chicken.
  • Bake chicken for 30-40 minutes, or until done. Every 10 minutes or so, I basted the chicken with the pan juices.
  • Once done, remove chicken to a platter. Mix corn starch and cold water until smooth and add to pan juices to thicken. Next, stir in sour cream. 1/4 cup to 1/2 cup depending on your preferences. Give it a taste and adjust seasonings as desired. Serve chicken and gravy over cooked noodles, rice or mashed potatoes. ENJOY!!!

1 tablespoon Dijon mustard
1 teaspoons Italian seasoning
1 teaspoon paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 (6-ounces) boneless and skinless chicken cutlets
1 onion, diced
2 tablespoons minced garlic
2 tablespoons chopped chives
6 slices deli pepperoni
6 slices deli provolone
2 to 4 steak rolls, split and toasted
1/2 cup hot cherry pepper spread

Steps:

  • In a small bowl, whisk together the vinegar, 1/2 cup of oil, the mustard, Italian seasoning, paprika, salt, and pepper. Rub the marinade liberally on each chicken cutlet. Arrange on a quarter sheet pan lined with parchment paper. Cover with plastic wrap and freeze for 30 minutes. Chicken will freeze slightly. Remove from the freezer and with a sharp knife, chip the slightly frozen meat as thin as possible.
  • In a large saute pan over medium-high heat, add 2 tablespoons of oil. Add the onions and cook until slightly browned, about 2 minutes. Add the garlic and the chipped chicken meat and cook until the chicken is cooked through, about 5 minutes. Stir in the chives. Overlap the pepperoni on top of the chicken and repeat with the cheese slices. Turn off the heat and allow the heat from the meat to melt the provolone.
  • With the help of a spatula scoop up the chicken with the cheese and put it on the split roll. Tuck some cherry pepper spread on the side of the roll. Wrap tightly in a square of parchment paper. Repeat with remaining rolls and filling.

8 chicken thighs (You can use a whole chicken or other parts. We love thighs the best. And we want them on the bone with the skin)
1 package dry french onion soup mix
1 8 oz bottle Russian dressing ((I prefer Wishbone Russian dressing))
1 small jar of apricot preserves ( or about a cupful)

Steps:

  • Mix all ingredients, except chicken, in a bowl.
  • Place chicken pieces in a baking pan. Sprinkle with pepper. No extra salt is needed.
  • Pour sauce over chicken and make sure it's coated well.
  • Roast uncovered at 400 degrees for 1 hour to 1 hour and 15 minutes until chicken is done. Baste several times during cooking. This is the way the chicken will look when done.
