EASY OVERNIGHT CROCK POT BREAKFAST CASSEROLE
This easy Overnight Crock-Pot Breakfast Casserole is a delicious crowd-pleaser! Shredded potatoes are layered between savory ham, cheese, and eggs.

Steps:
- Crack eggs and then whisk together the first five ingredients in a medium bowl. Set aside.
- Grease or spray the crock insert with a non-stick spray and place a third of your frozen shredded potatoes in the bottom of a 5-6 quart slow cooker. Next, layer with a third of each of the following ingredients: ham, onions, and cheese. Repeat the layers twice more.
- Pour your egg mixture over the top of your layers.
- Cook covered on low heat until eggs are set and the edges begin to brown, about 5-6 hours. Let stand about 30 minutes before serving. Top with your favorite toppings and enjoy.

CROCK-POT FULLY LOADED BREAKFAST CASSEROLE RECIPE
This recipe is fully loaded with everything you would want in a great breakfast casserole. Bacon, sausage, eggs, cheese, peppers, onions. Delish!

Steps:
- Spray the insert of a 6 quart or larger slow cooker OR a 3.5 quart casserole slow cooker with non-stick cooking spray and set aside.
- Dice bacon and cook it in a large frying pan until it is crisp and drain it on a plate lined with paper towels, set aside.
- Pour off bacon fat from pan (save it, if that is your thing).
- To the same pan add the diced onions, red bell pepper and breakfast sausage.
- Cook and crumble the sausage until it is fully cooked and no longer pink and the onions are translucent.
- In a bowl scramble 6 eggs seasoning with salt and pepper to taste (I do about 1/4 tsp pepper and just a pinch of Kosher salt)
- Add the frozen diced potato hash browns, bacon, sausage mixture to the slow cooker.
- Add 2 cups shredded cheese and pour the scrambled eggs in.
- Give everything a stir and then flatten out evenly in the slow cooker.
- Top with remainder 1 cup cheese.
- Cover and cook on LOW for 4 hours or on HIGH for 2 hours.

I came up with this by combining other recipes. We keep a small slow cooker in our camper and I often make this when we go camping. I just throw everything together before we go to sleep and it's ready for us in the morning.

Steps:
- Place a layer of frozen hash browns on the bottom of the crock pot, followed by a layer of bacon, then onions, bell pepper and cheese.
- Repeat the layering process two more times, ending with a layer of cheese.
- Beat the eggs, milk, salt and pepper together.
- Pour over the crock pot mixture.
- Cover and cook on low 8-10 hours. Note based on harsh review: If you know your slow cooker runs hot, reduce the time accordingly. I have made this many times at the stated time with great results - best between 8-9 hours, well done at 10, but not burnt.
BREAKFAST CASSEROLE IN THE CROCK POT
Cooks while you sleep! Sounds perfect for a Sunday morning or holidays and great for company! Some fun variations of this recipe. Before cooking (during prep) you can add: chunks of sourdough bread, diced chilies, salsa, diced green onions. Serve hot with a glass of orange juice and a side of toast.

- Spray crock pot and evenly spread hash browns at the bottom.
- Crack 12 eggs in a large bowl.
- Mix well (and slowly) using a whisk.
- Add the milk.
- Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
- Add plenty of salt, the nutmeg and lots of fresh pepper. Mix well and set aside.
- Cook the sausage on high heat, drain and set aside. Using the leftover fat from the sausage, sauté the garlic and onions until translucent.
- Add sausage, onions and garlic on top of hash browns.
- Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
- Mix it up well. Or good, depending on where you're from.
- Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
- Turn the crock pot on low for 5-7 hours. Crockpots vary so yours may need more or less time.
