2 (15 ounce) cans black beans
2 (15 ounce) cans Rotel Tomatoes
1 cup salsa
1 (4 ounce) can diced green chilies
1 (14 1/2 ounce) can tomato sauce
tortilla chips (optional)

Steps:

  • Combine all ingredients into crockpot and cook on low for 8-10 hours.
  • Right before serving, top with crushed tortilla chips.
  • Other toppings can include things like sour cream, shredded cheese, etc.

4 skinless, boneless chicken breast halves, cut into cubes
1 large onion, chopped
2 (16 ounce) cans refried beans
2 (15 ounce) cans corn, drained
1 (14.5 ounce) can chicken broth, or more as needed
1 (1 ounce) package taco seasoning
1 cup picante sauce
⅛ teaspoon garlic powder
shredded Cheddar cheese, or as needed

Steps:

  • Heat olive oil in a skillet over medium-high heat. Cook and stir chicken and onion in hot oil until the chicken is no longer pink in the center and the juices run clear, 7 to 10 minutes.
  • Stir refried beans, corn, chicken broth, taco seasoning, picante sauce, and garlic powder together in a slow cooker; add the chicken and onion mixture.
  • Cook on Low until the chicken pulls apart easily with 2 forks, 3 to 5 hours. Shred chicken in the soup with 2 forks. Continue cooking for 1 hour more. Ladle into bowls and top with Cheddar cheese.

1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers

1 teaspoon cumin

Steps:

Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.

This Mexican-inspired chicken, tomato, and bean soup practically cooks itself. I pile the ingredients into a slow cooker while I'm off doing far more glamorous things (like working, picking up dry cleaning, or dropping off a forgotten lunch at school!). My weekday cheat is to use tortilla chips instead of fresh tortillas. My favorite kind are the better-for-you baked white tortilla chips with a hint of lime, but any kind will do. If I'm feeling fancy, I'll add cubed avocado and sour cream before serving. If you have leftover cooked rice in the fridge, a spoonful in the soup is a nice touch, and for a less spicy flavor remove the jalapeno seeds and ribs.

2 cloves garlic (minced)
1 tablespoon olive oil
3 cups low sodium chicken broth
1 8 ounce can tomato sauce
1 14.5 ounce can fire roasted diced tomatoes (or regular if you prefer less spicy)
1 4.5 ounce can Old El Paso green chiles
1/4 cup chopped cilantro
4 cups cooked and shredded chicken (or rotisserie chicken)
1 1 ounce packed Old El Paso Taco Seasoning
1 11 ounce can steamed corn, drained and rinsed
2 cups canola oil
2 8 " Old El Paso Burrito Tortillas
1 tablespoon Old El Paso Taco Seasoning
cilantro (Old El Paso sliced Jalapenos, low fat sour cream, low fat shredded cheese)

Steps:

  • Heat oil over medium/high heat in a medium skillet. Add onion and garlic and cook until translucent, about 3 minutes. I like mine to be a bit under-sauteed, to keep a bit of their crunch.
  • Once sauteed, add the onion and garlic to a slow cooker over high heat. Add in all other ingredients except for tortillas and garnishes. Stir to combine.
  • Heat on high, covered, for 2-3 hours, or on low for 4-5 hours.
  • Before serving, prepare the tortilla crisps:
  • In a small saucepan, heat the canola oil over medium/high heat.
  • Using a pizza cutter, cut each tortilla into 1/2 inch strips.
  • Cook the strips in batches, about 2-4 minutes or until browned.
  • Using a slotted spoon, remove the strips and allow to drain on a paper towel.
  • While strips are still hot and before they've dried, sprinkle with taco seasoning and salt to taste. Allow to dry completely.
  • When ready to serve the soup, serve garnished with extra cilantro, low fat sour cream, jalapenos, and tortilla strips. Or any of your favorite toppings!

15.5 oz can black beans (drained)
1/2 cup Salsa
2 cups Mexican Blend Shredded Cheese (divided)
Garnish: sour cream (tortilla chips, Mexican Blend Shredded Cheese)

Steps:

  • Mix together your chicken, drained tomatoes, drained beans, salsa and one cup of Mexican Blend Shredded Cheese
  • Spread evenly in your casserole crock or 6-quart crock pot and cover with remaining cheese
  • Cover and cook on low for 2 hours or 1 hour for high, turning your insert halfway through cooking if your slow cooker doesn't cook evenly
  • Serve with slotted spoon and preferred garnishes

1 bag (14 oz frozen corn)
2 jars (15 oz each medium salsa (or use spicy salsa if you like it hot))
2 avocados
8 corn tortillas
8 tbsp sour cream
4 oz shredded cheese

Steps:

  • Put chicken breasts, chicken broth, black beans, frozen corn and salsa in a slow cooker. Cook for 4 hours on High or 8 hours on Low.
  • Before serving the soup, remove the chicken breasts from the slow cooker and shred them in a food processor using a top round slicing disk. Alternatively, you can shred them by hand by using two forks, or chop into pieces with a knife. Put the shredded chicken back into the soup and stir.
  • Laddle the soup into bowls and top with optional toppings.

1 lb. boneless skinless Chicken Breasts
6 cups of Low-sodium Chicken Broth
1 bay leaf
1 large onion, diced
2 garlic cloves, minced
1 large zucchini, diced
1 large yellow squash, diced
1 teaspoon chipotle chili powder
1 teaspoon smoked paprika
28 oz. can diced fire-roasted tomatoes
1 cup frozen corn
1/4 cup fresh cilantro, chopped
Juice of 2 large limes
Salt & Pepper to taste
14 oz. full fat coconut milk

Steps:

  • To a crock pot add, chicken breast, diced onions, garlic, zucchini, squash, smoked paprika, chipotle chili powder and diced fire roasted tomatoes. Season with salt & pepper and add chicken broth. Stir to mix everything together.
  • Cover and cook on HIGH for 3 hours.
  • Remove chicken from the crock pot and shred using two forks or chop with a knife.
  • Remove one cup of the broth and place in a blender with coconut milk. Blend until milk and broth no longer separate, about 30 seconds to 1 minute.
  • Add the chicken back into the crock pot along with corn, lime juice, cilantro and coconut milk mixture.
  • Cook an additional 15 minutes on HIGH in the crock pot.
  • Serve.
  • Optional toppings: diced avocado, cheese (Cheddar or Queso Fresco) or tortilla chips

1 lb chicken (fresh, frozen, pre-packaged, canned, rotisserie, leftover whatever you have on hand.)
12 ounces corn (fresh, canned or frozen)
2 (10 1/2 ounce) cans cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can Fiesta nacho cheese soup or 1 (10 1/2 ounce) can cheddar cheese soup
1 (16 ounce) can chicken broth or 1 (16 ounce) can stock
1 (10 ounce) can Rotel tomatoes & chilies
1/2 tablespoon onion powder
2 minced garlic cloves
3 dashes cayenne pepper sauce (like Frank's Red Hot)
1 (1 1/4 ounce) package taco seasoning
salt and pepper
tortilla chips
cheddar cheese
sour cream, to top when serving

Steps:

  • Put all ingredients in the crockpot and stir to incorporate together.
  • Place on high 4-6 hours or low 6-8 hours.
  • Do not keep opening lid as this slows cooking time by 30 minutes every time.
  • If too thick add more broth or water to thin out.
  • If stovetop method is preferred just make sure the chicken is cooked thoroughly.
