Taco nights just got easier! These Crockpot Chicken Tacos are such a snap to put together and always come out amazing!

4 skinless boneless chicken breast halves
1 cup salsa
1 cup canned diced tomatoes with chiles (drained or 1 can Rotel, 10 oz)
1 package taco seasoning
½ onion (diced)

Steps:

  • Combine salsa, canned tomatoes, and taco seasoning.
  • Place onions & chicken in the slow cooker and top with tomato mixture.
  • Cook on low 7-8 hours or high 3-4 hours.
  • Remove chicken from slow cooker and shred. Return to slow cooker and stir in juices.
  • Serve in taco shells, on salads, pizzas or in bowls over rice!

This is a three-ingredient wonder that's easy (5 minutes of your time), delicious and versatile.

3 tablespoons taco seasoning, I use Bulk Taco Seasoning Mix
1 cup chicken broth
1 lb boneless skinless chicken breast

Steps:

  • Dissolve taco seasoning into chicken broth.
  • Place chicken breasts in crock pot and pour chicken broth over.
  • Cover and cook on low for 6-8 hours.
  • With two forks, shred the chicken meat into bite-size pieces.
  • To freeze, place shredded meat into freezer bags with the juices.
  • Press out all the air and seal.

You can call this soup or chili, but either way it is wonderful! This recipe is also very adaptable to your personal taste. I recommend using Bill Echols' Taco Seasoning from this website. 1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) container sour cream
1 cup crushed tortilla chips

Steps:

  • Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
  • Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

Steps:

  • In your slow cooker, mix the salsa, lime juice, taco seasoning, and cilantro.
  • Salt and pepper the chicken to taste, then mix into the sauce. Cover and cook on high for four hours or low for seven to eight hours.
  • Remove the chicken, shred with two forks, and return to the slow cooker and stir.
  • Freeze leftovers in an airtight bag for up to six months!

So I heard of people making salsa chicken and I thought I would give it a try but add a few of my own twists to it. My whole family, even the 2-year-old, loved the tacos and we ate the leftovers at our very next meal. After the mixture is cooked, fill flour tortillas with it (hard shells are great, too), add shredded Cheddar cheese on the top, and shredded lettuce.

1 ½ (16 ounce) packages chicken breast tenderloins
1 (1 ounce) package taco seasoning
1 (16 ounce) container mango-peach salsa
1 teaspoon cayenne pepper, or to taste
1 teaspoon chili powder, or to taste
1 teaspoon garlic powder, or to taste
salt to taste
1 (20 ounce) can pineapple chunks, drained with juice reserved
1 medium onion, sliced

Steps:

  • Place chicken in a bowl and sprinkle with taco seasoning. Mix until coated and transfer into a slow cooker. Add salsa, cayenne pepper, chili powder, garlic powder, and salt; mix to combine.

2 (15 ounce) cans tomatoes and green chilies
1 ounce taco seasoning mix
18 taco shells
1 cup sour cream
1 cup cheddar cheese, shredded
1 cup cheese, shredded
1/2 cup cilantro
3 cups brown rice, cooked
3 cups refried beans

Steps:

  • Throw first 3 ingredients in crock pot.
  • Cook on high 4-5 hours or low 7-8 hours.
  • Serve in taco shells. Top with cheese, sour cream, and cilantro. Serve with brown rice and refried beans as a side dish.
  • Double for the freezer.

3 chicken breast halves
2 (14 ounce) cans old el paso enchilada sauce
1 1/2 cups cheese (I use mexican in the bag)
8 flour tortillas

Steps:

  • 1. Start up crock pot, put just 1/4 of a can of enchilada sauce in the pot.
  • 2. Put chicken in, and pour the rest of the first can or enchilada sauce in the pot.
  • 3. Let cook on Low for 7-8 hours or High for 3-4 hours. 1 hour before you want to assemble the enchiladas, take chicken out and shred it.
  • 4. Put chicken back in crock with enchilada sauce and let simmer for about 30-60 minutes. (You don't have to do this, but it makes the chicken more flavorful because you are getting the sauce all over the chicken).
  • 5. Pre-heat oven to 350. Pull out a 9X13 pan to put the enchildadas inches Pour enchilada sauce, just enough to coat the bottom of the pan.
  • 6. Start assembling the enchiladas by scooping up some chicken and putting in the tortillas, topped with cheese.
  • 7. Roll the filled tortillas and put in to the 9X13. Keeping doing this until the chicken is all gone or the pan is filled. ( I squish a lot of enchiladas in one pan).
  • 8. Pour remaining enchilada sauce on top and top with remaining cheese.
  • 9. Put in to preheated oven for 20 minutes. Just enough to warm all the way through.
