1 teaspoon minced garlic
1 teaspoon black pepper
1 teaspoon salt
1/2 onion chopped
3 cups chicken broth
1 can cream of chicken soup ((10.5 oz can) )
1 1/2 cup brown rice ((uncooked) )
2 cups cheddar cheese ((shredded) )

Steps:

  • Place the chicken, garlic, salt, pepper, onion, chicken broth, cream of chicken soup and brown rice in the crock pot. Stir to thoroughly combine all the ingredients.
  • Cover and cook on high for 3.5-4 hours until the rice has absorbed all the chicken broth in the crock pot.
  • Stir in the shredded cheese. Cover and allow the heat from the meal to melt the cheese (5-7 minutes).
  • Serve warm and enjoy!

Threw this together one morning and what a wonderful dinner. Served with peas and dinner buns. Please note: I didn't leave the chicken breast whole, I cut each breast into 3 pieces.

6 tablespoons butter
6 boneless skinless chicken breasts
1 (2 ounce) package onion soup mix (dry)
1 cup rice
1/4 cup parmesan cheese
1 1/2 cups milk
2 (10 ounce) cans cream soup (mushroom or celery)
1/2 teaspoon black pepper

Steps:

  • Mix dry soup to wet soup and rice and milk in a bowl.
  • Lay chicken in lightly greased crock pot. Place 1 tablespoons butter on top of each piece of chicken.
  • Pour over soup mixture.
  • Season with pepper and sprinkle the parmesan cheese on top.
  • Cook in crock pot for 8-10 hours on low or 4-6 hours on high.
  • Enjoy!

1/2 tsp Salt
1/4 tsp Pepper
1/2 c Honey
1/4 c Soy Sauce
1/8 c Chopped Onion
1/8 c Ketchup
1 Tbsp Vegetable Oil
1 clove Garlic
1/4 tsp Red Pepper Flakes

Steps:

  • 1. Season both sides of chicken with salt and pepper, put into crock pot.
  • 2. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken.
  • 3. Cook on low for 3 hours or on high 1.5 hours.
  • 4. Chicken into bite size pieces, then return to pot and toss with sauce.
  • 5. Serve over brown rice.

This recipe has been in my family ever since my aunt asked for another chicken recipe while checking out at the grocery store and the stranger in front of her shared this. I modified it for making in the crock pot here. DO STIR THIS OFTEN TO PREVENT RICE FROM STICKING TO BOTTOM OF CROCK POT.

2 c raw brown rice
1 can(s) cream chicken soup,undiluted
1 can(s) cream mushroom soup, undiluted
1 can(s) cream celery soup, undiluted
1 can(s) water (soup can size)
1 pkg dry onion soup mix
12 boneless,skinless chicken pieces cut ea in 1/2

Steps:

  • 1. Mix rice and 3 cans soup, dry onion soup and 1 soup can water well in a large bowl.
  • 2. Pour just enough rice/soup mix to cover bottom of your crock pot. I used my 5 qt pot for this recipe. Scatter chicken pieces over this in one layer.
  • 3. Repeat creating layer of rice/soup mix and then layer of chicken pieces til all done. I try to wind up with last layer going into crock pot being some rice/soup.
  • 4. Cover and cook on low 4-6 hours. STIR WELL @ EVERY 60-90 MINUTES TO PREVENT RICE FROM STICKING TO BOTTOM OF CROCK POT.

1 cup brown rice (uncooked)
1 small yellow onion (peeled and chopped)
2 cloves garlic (minced)
1 teaspoon dried thyme
2 1/2 cups low-sodium chicken broth ((plus up to 1 cup extra))
2 boneless skinless chicken breasts
1 teaspoon onion powder
1 teaspoon salt
1 tablespoon Dijon mustard
2 cups broccoli florets (cut into smaller pieces as needed)
1/2 cup sour cream
1 cup cheddar cheese (shredded)
Fresh parsley (chopped, for garnish)

Steps:

  • To a slow cooker, add rice, onion, garlic, and dried thyme. Pour chicken broth over rice.
  • Season chicken all over with onion powder and salt. Then rub both sides with Dijon mustard. Place in the slow cooker on top of rice.
  • Cover and cook on HIGH for 2 hours or on LOW for 5-6 hours.
  • Uncover the slow cooker and transfer chicken to a cutting board. Once cool enough to handle, chop chicken into small pieces.
  • Steam broccoli in the microwave and then drain. Add steamed broccoli to the slow cooker and stir to combine. (see notes)
  • Add sour cream and chopped chicken to the slow cooker and stir to combine. Test rice for doneness - add up to 1 cup more of broth as needed if rice is now fully cooked yet.
  • Sprinkle cheddar cheese all over the top of the chicken and rice mixture.
  • Cover the slow cooker and cook on HIGH for another 30 minutes, or until the cheese is melted and the rice is soft. Serve warm with chopped parsley on top for garnish, if desired.

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Add the rice, carrots, shallot, and Dijon mustard, and stir to combine. I came up with this when I couldn't decide between chicken cacciatore or something more Tex-Mex. I also wanted a "real" meal without having to work too hard at it. We really enjoyed this. Other cuts of chicken can be used, although I recommend staying away from boneless skinless breasts because I think they tend to dry out in a slow cooker. Since every one's crock pots heat differently and grains can be tricky to cook in a CP, you may have to fool a little bit with the timing on the rice and barley. You could also make that separately and just add it in at serving time. Cooked the way I did it, it almost had a risotto-like texture to it.

1 cup onion, chopped
1 garlic clove, chopped
1 (14 1/2 ounce) can diced tomatoes with mild green chilies, with juice
1 cup tomato juice
1 teaspoon chipotle chile, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/3 cup uncooked medium barley
1/3 cup uncooked medium grain brown rice
fresh ground black pepper, to taste
cheese (optional)
sour cream (optional)

Steps:

  • Sprinkle chicken with pepper and lightly brown in a large nonstick skillet, 5 minutes on each side.
  • Place onion, chipotle pepper, and garlic in the crock pot, followed by the chicken.
  • Pour tomato juice over the chicken.
  • Sprinkle chicken with cumin, chili powder, and more black pepper.
  • Pour canned tomatoes & green chilis over chicken.
  • Cover and cook on low for 4-5 hours.
  • Remove chicken, and stir uncooked rice and barley into the slow cooker (check the dryness at this time, too, and add some water or other liquid in if you need to).
  • Place chicken back on top and continue to cook on low for 1 1/2 - 2 1/2 more hours until grains are tender but not overdone.
  • Serve with cheese and sour cream, if desired.

½ cup roasted red peppers (chopped)

2 chicken breasts (boneless skinless)
1 cup frozen peas
2 cups instant brown rice
⅓ cup milk
2 cups mozzarella cheese (shredded)

Steps:

  • In a 3-4 quart crockpot, stir together the broth, carrots, onion, red peppers, Italian seasoning, garlic, salt and pepper.
  • Add chicken breasts, and cover and cook on high for 2 hours or low for 4 hours.
  • When chicken is cooked, remove and place on a cutting board.
  • Stir in the peas and rice to the crockpot, cover and cook on high for 15 minutes.
  • When chicken is cool enough to handle, slice thinly.
  • After 15 minutes, stir the chicken, milk, and cheese into the crockpot. Cover and cook on high for 15 more minutes, until cheese is melted and rice is tender.
  • Serve immediately.
