3 pounds beef stew meat, cut into 1-inch cubes
1 pound medium fresh mushrooms, halved
1 medium onion, sliced
1 can (10-1/2 ounces) condensed beef broth, undiluted
1 cup dry red wine
1 envelope brown gravy mix
2 tablespoons tomato paste
1/4 teaspoon salt
1 bay leaf
1/4 cup cornstarch
1/4 cup cold water
Hot cooked egg noodles

Steps:

  • Place the beef, mushrooms and onion in a 5-qt. slow cooker. In a small bowl, combine the broth, wine, gravy mix, tomato paste, salt and bay leaf. Pour over top., Cover and cook on low for 6-7 hours or until beef is tender. Discard bay leaf. , Combine cornstarch and water until smooth; stir into meat mixture. Cover and cook on high for 15 minutes or until thickened. Serve with noodles.

This is a recipe I created on my own. It is so simple, just prepare the ingredients, throw them in the crock pot before work and when you come home you will have the most tender roast beef you have ever eaten!

2 -3 lbs chuck arm pot roast or 2 -3 lbs blade roast
3 slices thick cut bacon, diced
8 ounces portabella mushrooms, sliced
2 cups dry red wine (Cab Sauv. or Merlot)
1 large onion, quartered then halved
1 (14 1/2 ounce) can beef broth
2 teaspoons dried thyme
salt, to taste
pepper, to taste
1/2 cup flour
1 cup cold water

Steps:

  • Place roast in crock pot and season liberally with salt and pepper.
  • Cook bacon in skillet until crispy.
  • Add mushrooms, wine, onion, broth, and thyme to the crock pot with the roast while you are waiting for the bacon to cook.
  • When the bacon is done, add it to the crock pot and give it a good stir to mix all of the flavors together.
  • Set your crock pot at low for 7-8hrs.
  • I recommend at least 8 hours because your roast will become soo tender it will literally fall apart as you try to remove it from the dish.
  • If your roast seems tough yet, just give it a little more time, it will only get more tender the longer it cooks.
  • Remove the roast and transfer the remaining sauce to a sauce pan.
  • Mix 1/2 cup of flour with 1 cup of cold water.
  • Gradually add flour mixture to the remaining sauce while whisking over med high heat until sauce thickens.
  • Serve gravy over mashed potatoes.

1/2 cup dried porcini mushrooms
1 cup boiling water
1 1/4 lbs lean stewing beef, cut in 1 inch cubes
3/4 teaspoon salt, divided
2 tablespoons olive oil
1 cup white pearl onion
6 cups chopped cremini mushrooms
1 1/2 cups carrots (sliced 1/4 inch)
1 1/2 cups reduced-sodium fat-free beef broth
1/2 cup dry red wine
4 fresh thyme sprigs
3 garlic cloves, crushed
2 bay leaves
1 teaspoon water
2 teaspoons cornstarch

Steps:

  • Combine porcini mushrooms and 1 cup boiling water in a small bowl. Let stand 30 minutes. Drain mushrooms through a sieve into a bowl, reserving liquid. Chop mushrooms, set aside.
  • Sprinkle beef with sapt and pepper. Heat oil to med high in a large dutch oven. Add 1/2 the beef to pan, saute 5 minutes or until lightly browned on all sides. Remove beef from pan with a slotted spoon, place in a bowl. Repeat with remaining beef.
  • Add onions to pan, saute 3 minutes or until lightly browned. Add cremini or button mushrooms and carrot. Saute 3 minutes until mushrooms are tender. Add beef, porcini mushrooms and liquid, some salt and pepper, broth and next 4 ingredients (through bay leaves). bring to a boil, cover and reduce heat.
  • Simmer 1 1/2 hours until beef is tender, uncover for an additional 20 minutes.
  • Combine 1 tbs water and cornstarch in a small bowl, add to pan. Bring to a boil until liquid thickens. Discard thyme sprigs and bay leaves.

1 (10 1/2 ounce) can cream of mushroom soup
12 ounces diet Sprite
1 (1 1/4 ounce) envelope onion soup mix
1 medium onion, chopped in chunks
1 cup sliced mushrooms

Steps:

  • empty can of sprite, can of soup and soup packet into crockpot. Add onion and beef. Stir together, and cook on low for 4-5 hours. Stir contents, add frehs mushrooms and cook on high 1 hr longer. Sometimes I add a little crushed red pepper for some spice. Enjoy.
  • note: For convenience you can use canned mushrooms, they can go in at the beginning. Just cook about 7-8 hrs on low instead.

2 lbs cubed lean stewing beef
1 small onion, chopped
1 (1 1/3 ounce) package roasted garlic gravy mix, for steaks
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
3 cups water
2 tablespoons olive oil
2 tablespoons garlic, fresh minced
1 fennel bulb, diced
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
1/4 cup red wine, a good one that you drink
1 (10 ounce) can cream of mushroom soup
1 (8 ounce) can mushrooms, drained
2 bay leaves

Steps:

  • In a large skillet, heat oil over medium-high heat.
  • Saute the onion and fennel bulb until translucent; then remove and place all in crock pot.
  • Add stew meat, dusted lightly in flour and cook on high heat until meat is browned on all sides (3-5 minutes).
  • Transfer beef tips to crock-pot.
  • Pour water, red wine, soy sauce, and Worcestershire sauce into the crock pot, over the beef, onions, and fennel.
  • Stir in garlic, salt and pepper.
  • Bring to boil in crock pot on high heat for approx 30 minutes and then reduce heat to low setting.
  • Next, combine the gravy mix with can of mushroom soup, mix thoroughly and add to all, include the 2 bay leaves.
  • Cover and simmer for 2 1/2 to 3 hours.
  • Serve over egg noodles.

1 (10.75 ounce) can condensed golden mushroom soup
1 (4.5 ounce) can sliced mushrooms, undrained
1 (1 ounce) package dry onion soup mix
¼ cup red wine

1 cup uncooked white rice
2 cups water

Steps:

  • Combine the stew meat, mushroom soup, mushrooms with their liquid, and onion soup mix in the crock of a slow cooker. Pour in red wine, if desired. Season with pepper.

2 medium onions, sliced
8 ounces of fresh whole mushrooms
1 (12 ounce) jar beef gravy
1/4 cup dry red wine or 1/4 cup apple juice

Steps:

  • Trim fat from meat.
  • Cut meat into 4 serving-size pieces.
  • In a 3 1/2 to 4 quart slow cooker place onion slices.
  • Arrange mushrooms over onions; add beef.
  • Stir together gravy and wine or apple juice.

When the weather starts to get cold I love nothing more than stews and casseroles whether beef, chicken or fish they make great comfort food. I served mine with broccoli florets as we are trying to eat lower carb in the evening.

10 slices bacon, rashers chopped finely
1 tablespoon olive oil
1 kg beef gravy, diced into 2cm pieces
1 cup red wine
2 tablespoons tomato paste
2 cups water
2 teaspoons beef stock granules
3 garlic cloves, crushed
6 sprigs fresh thyme
1 tablespoon butter
250 g shallots, peeled
400 g mushrooms, chopped
4 tablespoons bisto, gravy granules
20 g parsley, finely chopped
600 g broccoli, cut into florets

Steps:

  • Cook bacon in a large heavy based saucepan, stirring, until browned, drain on absorbent paper.
  • Add oil to a large fry pan, add beef in batches, cooking until browned all over, add beef to saucepan, wipe fry pan clean for later use.
  • Return bacon to saucepan along with wine, paste, water, stock, garlic and thyme sprigs to saucepan, bring to the boil, reduce heat, simmer covered for about 21/2-3 hours or until beef is tender.
  • Meanwhile, melt butter in the fry pan add shallots, cook until browned and starting to soften, add mushrooms, cook, stirring about 7-8 minutes until mushrooms are soft, remove from heat.
  • Add gravy granules to beef mixture stir until sauce thickens slightly (I use the gravy granules to thicken and to add extra beefy flavour, can thicken with cornflour, but may want to adjust stock amount.).
  • Stir in parsley and add shallot mushroom mix to the stew, leave on a low heat.
  • Meanwhile boil, steam or microwave broccoli until just tender.
  • Serve stew accompanied with broccoli.
  • Carb Tip: goes well with creamy polenta or mashed potato.
