This is truly BBQ chicken pizza in soup-form. Sweet and spicy BBQ sauce, chicken, red onions, and cilantro come together with the addition of corn for a comforting bowl of goodness on a chilly autumn day. I've also used frozen chicken cutlets in this with great results. Whatever you have on hand will work!

8 cups chicken broth
4 skinless, boneless chicken breast halves
1 (24 ounce) package frozen corn
1 red onion, diced
1 ¼ cups barbeque sauce
4 cloves garlic, minced
1 ½ teaspoons salt
½ teaspoon ground black pepper
½ teaspoon garlic salt
½ cup shredded mozzarella cheese, or to taste
½ cup chopped fresh cilantro, or to taste

Steps:

  • Combine chicken broth, chicken, corn, onion, barbeque sauce, garlic, salt, black pepper, and garlic salt in a slow cooker.
  • Cook on Low for 5 hours. Remove chicken from slow cooker and cut into bite-size pieces; return to slow cooker and stir.
  • Ladle soup into serving bowls and top each serving with mozzarella cheese and cilantro.

2.5 cups chicken (cooked and cubed)
1/2 cup bbq sauce
1/2 cup red onion (roughly chopped)
1/4 cup green pepper (roughly chopped)
1/4 cup yellow pepper (roughly chopped)
1 cup shredded mozzarella
1/2 cup shredded Parmesan

Steps:

  • Lightly spray your 6-quart crock pot or Casserole Crock Pot with cooking spray and spread your pizza crust out, pushing the edges up the side of your crock.
  • Pour your bbq sauce on your crust and spread evenly with a spoon
  • Sprinkle your cheese evenly across the top, reserving a little to put on top of your toppings if you would like
  • Add your toppings and remaining cheese, if you reserved some
  • Cover and cook on high for 2-3 hours, turning your insert halfway through if your slow cooker doesn't cook evenly. It is done when the crust is golden and the cheese is melted.

1 onion (chopped)

2 bell peppers (cut into 1-inch pieces)
2 cups pasta or pizza sauce
2 ounces sliced pepperoni
1 cup shredded pizza cheese (such as mozzarella)

Steps:

  • Gather the ingredients.
  • Sprinkle the chicken with the salt, pepper, and Italian seasoning and place in a 4- to 5-quart crock pot.
  • Top the chicken with onions, garlic, and bell peppers, and pour the pasta or pizza sauce on top. Top everything with the pepperoni .
  • Cover the crock pot and cook on low for 4 to 6 hours until chicken is thoroughly cooked to 160 F.
  • Stir everything in the slow cooker well. If you'd like, you can remove the chicken and shred it, then stir it back into the sauce.

3 tablespoons brown sugar
1 tablespoon Worcestershire sauce

1 tablespoon cider vinegar

2 garlic cloves, minced or 1/2 teaspoon garlic powder

Steps:

  • Combine all ingredients for the sauce in the slow cooker.

1 large cooked chicken breast, shredded
1/2 medium red onion, finely chopped
2 medium roma tomatoes, sliced thin

Steps:

  • Preheat oven to 450, or use pizza crust package instructions.
