SLOW COOKER BOSTON BAKED BEANS RECIPE

- Turn slow cooker on high to preheat. Drain beans and pour them into large Dutch oven along with 8 cups water, baking soda, and bay leaves. Bring to boil over medium-high heat, and use a slotted spoon to skim the foam off of the top. Boil 15 minutes.
- While beans cook, chop bacon into 2-inch pieces, and in a large non-stick skillet sauté bacon and onion over medium-high heat until fat is rendered from bacon and edges of onion begin to brown slightly about 7-8 minutes. Place bacon and onion in the slow cooker. Stir in ⅓ cup molasses, brown sugar, and 3 cups of boiling water.
- Once beans are done boiling, drain beans and transfer to the slow cooker, discarding bay leaves. Give everything a good stir and place aluminum foil directly on the surface of beans, then cover slow cooker with lid. Set slow cooker to LOW and cook until beans are creamy and tender 10-12 hours.
- Turn off slow cooker and remove the lid and discard aluminum foil. Stir in the remaining 2 tablespoons molasses, maple syrup (optional), mustard, and vinegar. Season with salt and pepper to taste. Cover slow cooker lid and let beans sit until the sauce has slightly thickened about 15-20 minutes. Serve.

- Dice raw bacon into small pieces and cook in a medium skillet over medium-high heat on the stove-top until crispy. Using a slotted spoon remove cooked bacon from pan and allow to drain on a plate lined with paper towels.
- Drain all but 1 tablespoon of the bacon grease off from the pan and place pan back on stove and add the diced onion and cook until the onion just starts to turn golden in color.
- Add the canned beans, cooked bacon, onion, brown sugar and BBQ sauce all to a 5 quart or larger slow cooker.
- Cover and cook on HIGH for 4 hours. Turn slow cooker off and allow the beans to set for at least 1 hour to allow the sauce to thicken.

- Combine beans and water in slow cooker, cover& cook on low heat for 7 hours until tender.
- Drain; refrigerate in pot.
- Can be cooked up to 3 days in advance.
- Stir together molasses, coffee, sugar, vinegar, mustard, salt& pepper in small bowl.

BEST EVER BAKED BEANS (CROCK POT)
These are a hit at my house for even those that aren't fans of baked beans. I think it's the bacon that adds the x-tra somethin somethin. Or maybe the french fried onions. This can also be done in the oven and so reduce the baking time to 1 1/2 hrs.

- Fry bacon until it's almost done.
- Mix all ingredients together using only 3/4 of the can of french fried onions.
- Cut up the bacon into bite size pieces.
- Add bacon.
- Place crock pot on low for 6 hours
- 1/2 hours before it's done place remaining onions on top.

SIMPLE CROCK POT BAKED BEANS
Simple baked bean dish to serve at a BBQ or potluck. You can pick any variety of beans you wish. I highly recommend at least one can of Chilli Beans. Garbanzo, Kidney, Black, White Northern and Lima beans are all good choices too. You can also choose the flavor of BBQ sauce to mix up the flavor. There is not really a wrong choice, just your preference. Just as delicious vegetarian too!

- Rinse beans. In a large pot, bring 8 cups water and beans to boiling. Reduce heat; simmer, covered, for 1.5 to 2 hours or until beans are tender. Drain.
- In a 3.5 or 4 quart Crock-Pot, combine drained beans and rest of ingredients. Stir well, but try not to mash up the beans.
- Cover; cook on low for 10 to 12 hours, or high 5 to 6 hours. Stir before serving.
- For a 5 or 6 quart cooker, double the ingredients and follow directions above. For a 1 quart cooker, use 3/4 cup beans, 1/2 cup onion, 1/4 cup water, 1/4 cup molasses, 3 tablespoons brown sugar, a dash of pepper, and 2 ounces salt pork.
