6 apples
1/4 cup apple juice
3 tablespoons brown sugar
1 teaspoon ground ginger

Steps:

  • Rub roast with salt and pepper.
  • Brown pork roast under broiler to remove excess fat; drain well.
  • Core and quarter apples.
  • Place apple quarters in bottom of crock pot.
  • Place roast on top of apples.
  • Combine apple juice, brown sugar, and ginger.
  • Spoon over top surface of roast, moistening well.
  • Cover and cook on Low 10 to 12 hours, until done.

3 lbs pork loin roast
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons cooking oil
4 -6 apples, cored and quartered
1/4 cup apple juice
3 tablespoons brown sugar
1 teaspoon ground ginger

Steps:

  • Rub roast with salt and pepper. Heat oil in frying pan. Brown pork roast on all sides in hot oil. Drain well.
  • Place apple quarters in bottom of crock pot. Place roast on top of apples. Combine apple juice, brown sugar and ginger. Spoon over top of roast, moistening well. Cover and cook on LOW 10 hours or HIGH 6 hours.

2 lbs whole pork loin
1 tablespoon olive oil
salt and black pepper
1 1/2 cups apple juice
1 tablespoon fresh rosemary, finely chopped (or 1 t dried rosemary)
1/4 cup sugar
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • For the porkloin:.
  • Preheat oven to 375°F.
  • Rub outside of porkloin with olive oil and sprinkle lightly with salt and black pepper.
  • Place pork on a baking rack with a sheet pan underneath and put it oven.
  • Roast for approximately 45 minutes or until the internal temperature reaches 165°F.
  • Let pork rest for five minutes before slicing.
  • For the glaze:.
  • In a saucepan combine apple juice, rosemary and sugar.
  • In a separate cup mix cornstarch and water.
  • Bring apple juice mixture to a boil and whisk in cornstarch mixture to thicken. Remove from heat.
  • Spoon glaze over sliced pork loin to finish.

4 -5 lbs pork sirloin roast
1 tablespoon packed brown sugar
1 tablespoon cornstarch
3/4 teaspoon caraway seed, divided
1/4 teaspoon salt
2 cups apple juice, divided
1 tablespoon lemon juice
1 (32 ounce) jar sauerkraut, well-rinsed and drained
1 1/2 cups chopped apples
1/2 cup coarsely shredded carrot

Steps:

  • In medium saucepan, combine brown sugar, cornstarch, 1/4 teaspoon caraway seed, and salt.
  • Stir in 11/2 cups apple juice and lemon juice.
  • Cook, stirring, over medium heat until thickened.
  • Set aside.
  • Place roast in oven-proof skillet.
  • Insert meat thermometer.
  • Roast at 325 degrees for 1 hour.
  • Brush with 1/2 cup apple juice mixture.
  • Roast 2 hours longer.
  • Spoon combined sauerkraut, apples, carrot, and 1/2 cup remaining apple juice and 1/2 teaspoon caraway seed around pork roast.
  • Spoon remaining apple juice mixture over pork roast and sauerkraut; cover.
  • Roast 30 to 60 minutes longer, or until meat thermometer registers 155 to 160 degrees.
  • Let roast stand 5 to 10 minutes.
  • Slice to serve.
