This is the side dish you serve with some stews, paprikas, goulash, or chowder soups. This is how we make it in Croatia. We call this meal "trganci".

800 g flour
2 cups milk
4 eggs
120 g butter
40 g salt

Steps:

  • Take a glass pot (for salad for example) and mix well flour and milk.
  • Add eggs, melted (but not hot) butter, and salt. Mix until you get smooth dough.
  • Using spoon make small noodles and cook them in boiling salt water.
  • When ready, strain them and put in another pot and cover with melted butter. Eat warm.
  • You can also put them into stews, soups, paprikas or goulash to cook until ready.

Croatian Cheese Strukli Recipe - Traditional Croatian cuisine at its finest! Homemade dough, cheese, and cream, baked together in a comforting dish!

3 1/4 cups Baker's Corner all-purpose flour
5 Goldhen large eggs, (divided)
3 1/2 tablespoons Countryside Creamery melted butter, (divided)
2/3 cup water
24 ounces Friendly Farms cottage cheese
1 1/4 cup Friendly Farms sour cream
10 ounces Specially Selected Aged Reserve white cheddar, (shredded and divided)
1 teaspoon dried thyme
1/2 teaspoon Stonemill garlic powder
1/2 teaspoon ground nutmeg
1 1/4 cups Countryside Creamery half-and-half
Salt (and pepper)

Steps:

  • Preheat the oven to 400 degrees F. Brush the bottom and sides of a 9 X 13 inch baking dish with 1 tablespoon melted butter.
  • Pour flour, 1 teaspoon salt, 1 egg, 1 1/2 tablespoon melted butter, and 2/3 cup water in a stand mixer bowl. Attach the bread hook and mix on low for 5 minutes, until the ingredients come together into a smooth tacky ball. Let the mixer run another 2-3 minute to knead the dough. If it seems too dry (not sticky) add 1-2 additional tablespoons of water. Brush the remaining butter around the dough ball and on the sides of the bowl. Then cover with plastic and let the dough rest for at least 15 minutes.
  • Meanwhile, in a separate bowl mix the cottage cheese, sour cream, 1 1/2 cups shredded white cheddar, 4 eggs, thyme, garlic powder, nutmeg, 1/2 teaspoon salt, and 1/2 teaspoon ground pepper together.
  • Divide the dough into 4 equal pieces. Lay one piece at a time on a clean work surface. Roll and stretch the dough into a 9 X 13 inch rectangle. (No need to flour the surface.) The dough should be thin enough to see light through it. Spread one-quarter of the cheese mixture over the dough. Then starting on a short end, gently fold the dough over 1 1/2 - 2 inches at a time, until it's rolled into a loose log. Carefully lift the log by the ends and lay it in the prepared baking dish.
  • Repeat with the remaining dough and cheese mixture. Once four logs are arranged in the baking dish, gently cut each log into 4 equal pieces. Pour half-and-half over the top and sprinkle on the remaining shredded cheddar.
  • Bake for 45-50 minutes, until the tops are puffy and golden, even in the center of the pan. Cut and serve!

This is one of my favorite lunches. It is typical Northern Croatian dish. It is very easy to make, and you have usually all ingredients at home (well, in Croatia) so you don't have to make special shopping.

500 g noodles (the best are tagliatelle, white or green)
300 g cheese (fresh cow cheese)
150 g pancetta
150 g onions (or one onion)

Steps:

  • Cook the noodles.
  • Cut pancetta into cubes. Cut onion into rolls. Fry them in a pan until pancetta is crispy and onion brown.
  • Put noodles on serving bowl, sprinkle with fresh cheese and pancetta and onion. Serve it and eat it.

This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

½ cup butter
1 small onion, diced
1 (16 ounce) package egg noodles
1 (16 ounce) package cottage cheese
½ cup sour cream
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
  • Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.
