A summertime favorite, these Crispy Fried Green Tomatoes are made with Panko breakcrumbs mixed with garlic, onion, and a little kick of cayenne pepper.

3 large green tomatoes, (cored and sliced 1/2 inch thick)
salt and pepper
1/2 cup flour
2 eggs, (beaten)
1 cup unseasoned Panko breadcrumbs
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon cayenne ((ground red pepper))
avocado oil or canola oil, (for frying)

Steps:

  • Sprinkle the sliced tomatoes lightly with salt and pepper on both sides. Let sit for at least 20 minutes to draw out moisture.
  • Using three shallow bowls, place the flour in one bowl, the beaten eggs in another, and the Panko, garlic powder, onion powder, salt, and cayenne in the last bowl. Mix the Panko mixture well.
  • Working one slice at a time, dredge the tomatoes in the flour, then the eggs, and finally coat well with the Panko. Shake off excess.
  • Heat the oil in a frying pan over medium-high heat. Fry the tomatoes, working in batches if needed, for 2-3 minutes, turn and fry for an additional minute or two. Turn the heat down if the tomatoes are browning too fast. Remove from the oil with tongs, draining excess oil, onto a paper towel lined oven safe plate or sheet pan. Keep warm in a 215 degree F oven.

⅔ cup all-purpose flour
⅓ cup finely crushed cornflakes cereal
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon ground black pepper

¾ cup milk
16 slices 1/8-inch thick green tomato slices

Steps:

  • Heat oil in a deep-fryer to 360 degrees F (182 degrees C).
  • Whisk flour, corn flakes, baking powder, salt, pepper, and sugar together in a shallow bowl. Pour milk into a separate shallow bowl.
  • Gently press one tomato slice into the flour mixture to coat on both sides and shake off any excess. Dip into milk, then press again in flour mixture. Repeat with remaining tomato slices. Place breaded tomato slices in a single layer on a plate while breading the rest; do not stack.
  • Cook each breaded tomato slice in the hot oil until golden brown, about 3 minutes per side. Remove to a paper towel to drain and cool.

1/4 teaspoon hot sauce

1/2 cup all-purpose flour
2 large eggs, beaten
1/2 cup cornmeal
1 1/2 teaspoons seafood seasoning
2 medium green tomatoes (both ends sliced off), each cut crosswise into 4 slices
1/2 cup vegetable oil, such as safflower

Steps:

  • In a small bowl, stir together mayonnaise, lemon juice, and hot sauce. Season with salt and pepper, and set sauce aside.
  • Place flour, eggs, and cornmeal each in a separate bowl, and season each with 1/2 teaspoon seafood seasoning.

8 medium (about 3 1/2 pounds) green tomatoes
3 1/2 teaspoons coarse salt
1 3/4 teaspoons freshly ground black pepper
5 large eggs, beaten
1/2 cup milk
3 cups all-purpose flour
4 cups panko (Japanese breadcrumbs)
1/2 cup cornmeal
4 cups olive oil
Aioli, for serving

Steps:

  • Trim 1/2-inch from the stem and blossom ends of tomatoes. Slice tomatoes 1/4-inch thick. Season tomato slices with 2 teaspoons salt and 1 teaspoon pepper; set aside.
  • In a shallow bowl, whisk together eggs and milk; set aside. In a second shallow bowl, whisk together flour, 1/2-teaspoon salt, and 1/4-teaspoon pepper; set aside.
  • Place panko in a shallow bowl along with cornmeal, remaining teaspoon salt, and 1/2-teaspoon pepper; stir to combine and set aside.
  • Working with one tomato slice at a time, coat tomatoes with flour mixture, shaking off excess. Coat with egg mixture, followed by breadcrumb mixture. Transfer to a wire rack set over a parchment-lined baking sheet; repeat process with remaining slices.
  • Heat 2 cups oil in a 10-inch skillet over medium-high heat until it reaches 350 degrees on a deep-fry thermometer. Working in batches, carefully place tomatoes into the heated oil in a single layer. Fry until golden, turning once, 2 to 3 minutes per side. Drain on a paper towel-lined baking sheet. After frying half of the tomato slices, discard oil and heat remaining 2 cups oil in skillet; continue frying remaining tomato slices. Serve tomatoes immediately with aioli.

Steps:

  • In a deep-fryer, preheat oil to 350 degrees F.
  • Season tomatoes, on both sides, with salt and pepper. Place flour and garlic powder in a shallow dish. In another shallow dish, beat eggs with the milk. In another dish, mix bread crumbs with cayenne and paprika. Dredge tomatoes through the flour, then the eggs, and then through the bread crumbs.   • In a small saucepan over medium heat, combine the apple cider and brown sugar. Allow to reduce until thick and syrupy. Remove from heat and allow to cool.

1 teaspoon salt
¾ cup cornmeal
¾ cup bread crumbs

3 tablespoons vegetable oil
1 tablespoon butter
2 tablespoons sweet pickle relish

  • Place tomato slices onto a rack over a paper towel. Sprinkle with 1 teaspoon salt and let slices stand for 15 minutes for the salt to draw out extra juices.
  • Mix cornmeal and bread crumbs together in a bowl; stir in 1/2 teaspoon salt, black pepper, and cayenne pepper to taste. Beat eggs with milk in a separate bowl. Place flour into a third bowl.
  • Pat tomato slices dry with paper towels. Lay slices, one at a time, into flour; flip to coat both sides and let slices rest in the flour for about 30 seconds. 3 green tomatoes
2 cups flour
2 tablespoons black pepper
2 tablespoons italian seasoning
1 teaspoon cayenne pepper

1/4 cup milk

Steps:

  • First, cut your tomatoes at 1/8 inch and lay out to dry -- I lay down paper towel and then place tomatoes on a cooling rack and then layer more paper towels on top. THIS STEP IS VERY IMPORTANT!
  • While tomatoes are drying, mix together flour, black pepper, Italian seasoning, and cayenne pepper.
  • Dip tomatoes slices into egg and milk mixture and then coat with flour and seasoning mixture.
  • Place in a hot skillet with oil and fry for about 3 minutes on both sides or until browned.
  • I usually place them back on the cooling rack so they don't get soggy when they are finished.
  • Serve immediately!

I've had FGT that were a little grainy in texture or burned due to added sugar. These are much better with a delicate, crispy coating that literally melts in your mouth. If you feel the need for sugar sprinkle it on immediately after cooking.

1/2 cup canola oil, for frying
4 green tomatoes, sliced
2 eggs, beaten
2 -3 tablespoons water
1 cup louisiana seasoned fish fry
1 dash salt, to taste
1 dash pepper, to taste

Steps:

  • Wash and slice the green tomatoes, lay on paper towles, set aside.
  • Beat the egg and water together in a flat bottom bowl, set aside.
  • Pour about 1/2 cup of the seasoned fish fry into a flat bottom dish, set aside. (You can add more later if you need to).
  • Heat 1/4 cup of the oil over medium-high heat, don't let it smoke but it needs to be hot. (You can add more oil later if you need to).
