HOMEMADE CRISPY SEASONED FRENCH FRIES
My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

- Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
- Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
- Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. Drain the potatoes, and pat dry with paper towels. Toss the potatoes with the oil and spice mixture; stir until evenly coated. Arrange fries in a single layer on the prepared baking sheet.
- Bake fries in preheated oven for 20 minutes. Turn and continue to bake until browned and crispy, about 20 additional minutes.

- Rinse the potatoes and peel if desired. I like to take just a little of the skin off with a knife leaving some on. Slice into 1/2 inch slices, then chop into 1/2 inch straws. I like to stack to get the job done quicker!
- As you chop, have a bowl filled with cold water by, and dump the fries into the water as you go.
- Soak for at least 30 minutes. You can soak overnight in the fridge if you want to get more of the starch out.
- In a bowl, combine the garlic salt, chili powder, and cayenne pepper. Set aside.
- When your potatoes are done soaking, Preheat your oven to 450F, and strain the potatoes out. Place on a towel.
- Cover the potatoes with the towel and press down firmly to soak up any additional water. This will decrease any steam while baking to give you a crispy fry.
- Place in a dry bowl and drizzle with olive oil and about 1 tsp of the spicy garlic seasoning. Toss for a few seconds until evenly spread.
- Place on a baking sheet, trying not to over crowd. You may need an additional baking sheet for the whole batch of fries.
- Bake for 25-30 minutes, flipping the fries once halfway through. When they're done, place them back in the bowl you used to season, add about another tsp of seasoning and toss.
- Serve with your favorite main dish and enjoy!
SPICY NACHO CHEESE FRENCH FRIES

- Wash your potatoes to remove any dirt, then slice into fry shapes. If you need a tutorial on how to do this, YouTube has tons of options! Soak your fries in a large bowl of cold water for 20 minutes.
- If you're in a pinch, you can skip the 20 minute soak, but it really helps the fries crisp up.
- While the fries soak, mix all of your seasoning together to make your Doritos spice. You can leave the cayenne out if you do not like spicy, or cut it down to 1/4 tsp. I used 1/2 tsp and while it tasted pretty spicy, once added to the fries, it was not overly spicy at all.
- After 20 minutes, drain and pat dry the potatoes as much as you can. Add them back to a large bowl with roughly 1 tablespoon of olive oil and toss in your cheese mixture. I used half the mixture for my recipe and saved the other half for another day.
- Note that I wouldn't skip the olive oil. I tried a batch without and the fries don't have nearly as much flavor or crispiness.
- Add your fries to your air fryer in a single thin layer. Don't stack your fries on top of each or they will not crisp up will, so do 2 different batches if you need to. Air fry at 400 degrees F for 12-15 minutes depending on how crispy you'd like them.
- After 8 minutes or so, open the air fryer and give the fries a good shake to move them around, then continue cooking.
- Once done, remove from air fryer and toss in some additional cheese mixture, then enjoy!

- Preheat oven to 425 degrees. Prepare a large baking sheet with a wired rack and spray with olive oil cooking spray.
- In a large bowl, add the cut matchstick potatoes and cover with cold water. Soak the potatoes for at least 10 minutes and up to 30 minutes to absorb the starch from the matchstick potatoes.
- While the potatoes soak, in a large plastic zipper seal bag, place the Cheez-It Grooves Hot & Spicy crackers. Lay the plastic bag on the counter. Use a rolling pin to crush the crackers into a fine crumble.
- Transfer the crumbled Cheez-It Groove crackers to a shallow bowl, add the Panko bread crumbs, Parmesan Cheese, and dried parsley. Combine the flavors.
- In a separate bowl, add the egg whites.
- Drain and dry the potatoes on a paper towel.
- Coat the matchstick potatoes in the egg whites and then into the Cheez-It Grooves crumble. Place crumble coated potatoes onto the prepared baking rack. Continue until all the matchstick potatoes are coated with the Cheez-It crumble. Spray the matchstick potatoes with the olive oil cooking spray.
- Place the baking sheet into heated oven. Check the French fries after 20 minutes. They should be crispy and should not need more than 30 minutes in oven, depending how thick you cut your matchsticks.
