1/4 cup grated Parmesan cheese
1 envelope (1 oz) ranch dressing and seasoning mix (milk recipe)
2 eggs
2 lb chicken wings (12)
Bottled or additional prepared ranch dressing for dipping

Steps:

  • Heat oven to 350°F. Line cookie sheet with foil.
  • Crush cereal; place in large bowl. Add cheese and dressing mix; mix well. In separate bowl, beat eggs with fork or whisk.
  • Dip each chicken wing in eggs; coat evenly with cereal mixture. Place on cookie sheet.
  • Bake 35 minutes, turning chicken halfway through baking, or until juice of chicken is clear when thickest part is cut to bone (165°F). Serve with ranch dressing for dipping.

The dressing here is all about the garlic. The garlic and onion powders are important for that true ranch flavor we know from childhood. I serve these wings with lots of sliced carrots and cucumbers on the side for dunking in the dressing. I also just put out homemade or jarred pickle spears too. It's nice to take a break every few wings and eat your vegetables.

1 cup (8 ounces) sour cream
1/4 cup mayonnaise
1/4 cup buttermilk
1/4 cup pickle juice
2 large cloves garlic, grated
1 tablespoon chopped dill
1 tablespoon hot sauce, such as Tabasco
2 teaspoons garlic powder
2 teaspoons onion powder
1 1/2 quarts canola oil
1 cup all-purpose flour
1 cup cornstarch
3 1/2 pounds chicken wings split into drumettes and flats (about 18 each)
Kosher salt
1 large lemon, thinly sliced, for serving
Sliced carrots and cucumbers and pickle spears, for serving (optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the dressing: In a medium bowl, whisk together the sour cream, mayonnaise, buttermilk and pickle juice with the grated garlic, dill, hot sauce, garlic powder and onion powder. Taste for seasoning.
  • Prepare the wings: Pour the oil into a deep, heavy-bottomed pot. Heat the oil to 350 degrees F over medium heat. Prepare 2 rimmed baking sheets, one lined with a wire rack. In a large bowl, combine the flour and cornstarch. Separate the larger wings and the smaller ones. Season all of them with salt and toss in the flour mix. Shake off the excess.
  • Fry the wings : Lower half of the larger wings into the oil and gently "swirl" the oil with a slotted spoon as they fry. This swirling will assure they fry more evenly on all sides. When they are light to medium brown, 5 to 7 minutes, remove them with the slotted spoon and lay them out on the wire rack to cool. Season with salt. Cook the rest of the wings in batches, keeping the cooked wings warm in the second baking sheet in the oven until all are fried. Leave the wings in the oven for at least 10 minutes to assure all are cooked through.
  • Arrange the wings on a serving platter with the ranch dressing alongside for dunking. Serve with the lemon, carrots, cucumbers and pickles.

Steps:

  • Preheat oven to 425F with a baking rack in the middle. Line a large baking pan with parchment paper (helps with clean up later) and set aside.
  • Pat dry chicken wings with a paper towel. Add to a bowl or a ziplock bag (to make cleanup a breeze) and toss together with baking powder until they're coated evenly.
  • Then, add the seasonings and oil (or mayo) to help the seasoning stick and toss together again to coat.
  • Spread the chicken wings on the prepared baking pan spacing them evenly. Do not overcrowd or they will not crisp up properly. Bake in the preheated to 425F oven for 30 minutes, then use tongs to flip each one up-side-down. Bake for another 15-25 minutes or until evenly golden in color and the skin is crispy. If your wings do not crisp up in this time it means that your oven runs cold or that the pan is overcroweded.Tip: Depending on the size of the chicken wings the cook time will vary, so keep an eye on them after the 30-minute mark. Chicken is ready when the inside reaches 165°F. Use your instant-read thermometer to check the temperature, if you wish.

10 whole chicken wings, cut into flats and drumettes (here's how to do it). Discard tips or use for a stock. That leaves you with 20 wing pieces total
1 Tbsp. aluminum-free* baking powder (NOT baking soda)
½ tsp. salt
Sauce or dry rub

Steps:

  • Preheat oven to 250°F.
  • Line a cookie sheet with aluminum foil. Place a oven-safe rack on top of cookie sheet.
  • In a large bowl, use your hands to toss the flats and drumettes with the baking powder and salt until chicken is evenly coated. But do not add extra baking powder. Just mix them so they all have some.
  • Place wings on the rack in single layer. Transfer rack and cookie sheet to oven and cook for 30 minutes. This baking at a low temperature dries the wings out and allows the baking powder to penetrate.
  • After 30 minutes, leave the wings in the oven but raise the heat to 425°F. Continue to cook until brown and crispy, 40-50 minutes.
  • Take wings out and let rest 5 minutes. Toss in a delicious sauce like this one and serve.

1 tablespoon baking powder
1/2 cup light brown sugar

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
  • Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

Oil for deep-fat frying
1 envelope ranch salad dressing mix
1 teaspoon minced garlic

1 Tbsp BAKING POWDER ((whatever you do, do NOT use baking soda))
1 tsp kosher salt ((plus more to taste))
1 Tbsp butter ((melted))
1/3 cup hot wing sauce ((e.g. Duff's hot sauce))

Steps:

  • Preheat oven to 450F.
  • Dry chicken with a paper towel really well. Place the wings in a large bowl. Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
  • Line a large baking sheet with aluminum foil. Place a cooling rack (see note) on top and spray with Pam or rub with cooking oil to prevent sticking.
  • Lay the chicken wings on the rack, leaving space between the wings.
  • Place the baking sheet in the oven. Turn the heat down to 425F and set the mode to convection.
  • Bake for 30-40 minutes, until the wings are nicely browned and crisp.
  • Let the wings rest for 5 minutes. This will preserve crispiness of the skin.
  • Meanwhile, prepare the Buffalo wing sauce by combining the butter and the hot wing sauce in a small bowl.
