PEANUT CRISPS
These salty-sweet peanut cookies are the perfect finish to lunch.

Steps:
- Preheat oven to 350 degrees. Stir together flour, salt, and baking soda in a small bowl; set aside. Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 2 minutes.
- Mix in egg and vanilla. Reduce speed to low. Gradually add flour mixture; mix until combined. Stir in peanuts.
- Drop 2 teaspoons of dough on baking sheets lined with parchment paper, spacing about 3 inches apart. Lightly flatten to 1 1/2 inches in diameter. Bake cookies, rotating sheets halfway through, until edges are just golden, about 13 minutes. Let cool on sheets on wire racks. Cookies can be stored in airtight containers at room temperature up to 1 week.

Steps:
- Sift together flour, baking powder, baking soda and salt.
- In large bowl with mixer at medium speed, beat margarine and peanut butter until smooth.
- Beat in sugars until blended.
- Beat in eggs and vanilla.
- Add flour mixture and beat well.
- If necessary, chill dough.
- Shape into 1 inch balls.
- Roll into sugar.
- Place on ungreased cookie sheet, 2 inches apart.
- Flatten with fork, making criss cross pattern.
- Bake 350*.
- 12 minutes or until lightly browned.
- Peanut Butter Crackles: Follow basic recipe.
- Roll into sugar before placing on cookie sheet.
- Do not flatten.
- Bake 15- 18 minutes.
- Immediately press chocolate candy kiss firmly into top of each cookie.
- Cookie will crack around edges.

CRISPY PEANUT BUTTER COOKIES
How to make perfectly crispy peanut butter cookies, with a method that I have perfected that results in AMAZINGLY crispy cookies every time!

Steps:
- In a large mixing bowl, cream together the butter and the sugars until creamy and smooth.
- Add in the peanut butter, eggs and vanilla extract, then beat until smooth.
- In another bowl, whisk together the flour, baking soda and baking powder until combined.
- Add the dry mixture into the butter mixture and mix in well.
- Chill in the fridge for an hour.
- Preheat your oven to 375 °F.
- Shape the dough into small golf ball sized rounds.
- Place 2 inches apart on ungreased baking sheets.
- Now, you can flatten each ball by crisscrossing with the tines of a fork as is custom. You can ALSO do what I did and use a meat mallet to press them down. My meat mallet is circular so it's perfect for cookies. You can use a square one to press down the cookies as well.
- Bake at 375° for 11-13 minutes or until bottoms are lightly browned and cookies are well baked. Don't let them brown too much, but do bake them as much as possible.
- Remove and cool on the baking sheets completely.
- Enjoy!

- Set oven 350°.
- Prepare a lightly greased cookie sheet.
- In a large mixing bowl cream together the butter, shortening, peanut butter and vanilla until well blended.
- Add in egg whites and beat until fluffy (about 5 minutes,).
- In a small bowl mix together flour with baking powder and baking soda.
- In another bowl mix together rice cereal with oats and chopped peanuts.

- Using a hand mixer or a stand mixer fitted with paddle attachment, cream the softened butter and both sugars together on medium speed until smooth. Add the eggs and mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla and peanut butter and mix on high until combined. Set aside.
- In a separate bowl, toss the flour, baking soda, baking powder, and salt together. Add to the wet ingredients and mix on low until combined. Dough will be thick, yet very sticky. Cover dough tightly and chill for at least 3 hours (and up to 2 days) in the refrigerator.
- Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats.
- Roll balls of dough (about 1.5 tablespoons of dough per cookie) and roll into granulated sugar. Place 2 inches apart on the baking sheets. Press fork into the tops to create the criss-cross pattern. Bake for 11 minutes or until very lightly browned on the sides. The centers will look very soft and undone. Remove from the oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will continue to “set” on the baking sheet during this time.
