PEANUT BUTTER GRANOLA BARS

Steps:
- Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
- Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
- In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
- Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
- *Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly browned, about 8 to 10 minutes.

- Preheat oven to 325 degrees F (165 degrees C). Line a 9x13-inch baking sheet with aluminum foil; coat with cooking spray.
- Combine honey and peanut butter in a microwave-safe bowl; microwave on high until melted, about 20 seconds. Stir well.
- Place the rolled oats in a large bowl. Drizzle honey-peanut butter mixture over oats; toss to coat. Mix in sunflower seeds, chocolate chips, coconut, brown sugar, vanilla extract, and cinnamon until evenly combined. Spread mixture onto the prepared baking sheet.
- Bake in the preheated oven until lightly browned, about 22 minutes. Let cool for 20 minutes.

- In a large bowl, combine the first eight ingredients; beat until crumbly. Press into an ungreased 9-in. square baking pan., Bake at 350° for 25-30 minutes or until set. Cool for 5 minutes. - Preheat oven to 350 degrees. Line a baking sheet with parchment paper or non-stick foil. Set aside.
- In a large bowl, mix together peanut butter, honey, and maple syrup. Heat in the microwave for 30 seconds or until the peanut butter begins to melt.
- Add in oats, peanuts, almonds, cinnamon, and vanilla extract. Stir thoroughly.
- Spread granola mixture evenly over the baking sheet.
- Bake for 10 minutes. Take the granola out of the oven, lower the oven's temperature to 325, and stir the granola around. If there are any large clusters, use your spatula to break them into smaller pieces. Bake for an additional 20 minutes, making sure to stir the granola around again at the 10 minute mark.
- Allow to cool 30 minutes before storing in an airtight container or ziplock bag.

- Place rolled oats on a baking sheet and toast at 350 degrees F for 5-7 minutes to desired level. Place into a large bowl with peanuts.
- Blend pitted dates in a food processor until smooth. Scrape sides if needed.
- Place processed dates, peanut butter, honey and optional salt into a small saucepan. Heat on low while stirring until combined and smooth.
- Pour over oats and peanuts and mix well to combine. Press mixture into a line 8x8 inch pan and chill in fridge or freezer until set. Cut into bars.
- I like to keep them in a container in the freezer to keep fresh.

CRISPY PEANUT BUTTER GRANOLA BARS
I made these in the hopes of appeasing my picky 2-year old, but I'm the one who eats them! They are so good, and are a great go-to when I am craving something sweet.

- Lightly grease a 12x8 inch baking dish. If you don't have this size, 11x7 or 13x9 will work.
- Put half of the oats in a food processor and process until it forms a powder. This is optional, but I like the texture it creates.
- Add processed oats, remaining oats, and cereal to a large bowl.
- Put dates and craisins in a food processor and process until finely chopped. Add to dry ingredients.
- In a small saucepan, heat honey until it starts to bubble. Remove from heat and whisk in the peanut butter and vanilla until well combined.
- Pour liquid over the dry mixture and stir to combine.
- Stir in chocolate chips. Be aware the chips will melt into the mix. You can freeze them ahead of time if you want them to stay whole.
- Dump mixture into the greased baking dish. Lay a sheet of waxed or parchment paper over top, then press down the mixture until smooth and even. Throw out paper.
- Allow to cool for about 15 minutes, then slice into bars while still in the dish. Chill dish for about an hour to firm up, then remove bars and place in an airtight container.

Store in a sealed container or wrapped in plastic wrap.
