8 (4 ounce) skinless, boneless chicken breast halves
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine corn flakes, Parmesan cheese, and ranch dressing mix in a bowl. Dip chicken in melted butter; roll each chicken breast in corn flake mixture until evenly coated. Place coated chicken in the prepared baking dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 (1 ounce) packet ranch salad dressing mix
½ cup grated Parmesan cheese
½ cup (1 stick) salted butter, melted
2 lbs. boneless, skinless chicken tenderloins

Steps:

  • Preheat oven to 375°F. Line a baking sheet with foil (for easy cleanup, if desired); spray with nonstick spray. Set aside.
  • Combine Corn Flakes, dry ranch dressing mix, and Parmesan cheese in a shallow dish.
  • Place melted butter in a separate shallow dish.
  • Use paper towels to pat the chicken dry.
  • Working with one piece of chicken at a time, dip the dry chicken in the melted butter to coat, then dredge in the Corn Flakes mixture.
  • Place the breaded tenders on the prepared baking sheet. Spritz lightly with nonstick spray or mist with oil (this helps them brown even more in the oven).

Olive oil spray
1/2 cup grated parmesan cheese (, store bought (Note 2))
1 egg
1 tbsp mayonnaise* ((I use whole egg mayonnaise))
1½ tbsp dijon mustard* ((or any other mustard of choice))
1 garlic clove (, minced*)
2 tbsp plain flour
Salt & pepper
500 g /1 lb chicken tenderloins ((or chicken breast cut into ⅔" / 1.5cm thick slices, lengthwise))
Oil spray

Steps:

  • Preheat oven to 200C/390F.
  • Spread panko breadcrumbs on a baking tray. Spray lightly with oil. Bake for 3 to 5 minutes or until LIGHT golden.
  • Scrape into a bowl. Add parmesan and mix.
  • In a separate bowl, whisk together Batter ingredients with a fork. Add chicken and mix to coat.
  • Optional: Place a rack on the baking tray (Note 3)
  • Pick up chicken with left hand and place in breadcrumbs. Use right hand to sprinkle with breadcrumbs, press to adhere. Use right hand to transfer to baking tray. Repeat with remaining chicken. Spray lightly with oil.
  • Bake for 15 minutes for small tenders, 18 minutes for large ones. No longer than 20 minutes, otherwise they will begin to lose juiciness.
  • Serve immediately with Ranch or Honey Mustard Dip if desired (Note 4).

This recipe I made after I cooked and tasted the fried chicken recipe (id #63339) from Zaar chef Ellie. I like crispy chicken and that is how this turned out. It does require a lot of standing time, so it is a dish you will have to plan for time wise. Nice served with a salad. Prep time does not include the standing times.

2 skin and boneless chicken breasts
1/2 cup buttermilk
1 clove crushed garlic
hot sauce or cayenne pepper
1/4 cup all-purpose flour
1/4 cup cornmeal
1/4 cup cornstarch
salt or any other seasoning
vegetable oil (for frying)

Steps:

  • Flatten the chicken breasts between parchment paper or between plastic sheets.
  • Mix the buttermilk with the hot sauce and the garlic, put the chicken covered in the buttermilk mixture in a non-metallic dish, marinate for at least two hours turning them over once.
  • Mix the flour, cornmeal, cornstarch and seasoning in a shallow dish, take the chicken out of the marinade, let the buttermilk drip off, coat in the flour, coat the other breast then repeat the coating again starting with the first one.
  • If you still see wet parts on the breasts, coat again.
  • Put the chicken back in the fridge for at least half an hour.
  • Discard the marinade.
  • Heat the vegetable oil in a frying pan until it is pretty hot.
  • Fry the breasts until golden brown on both sides, lower the temperature and fry them until they are done, approx 10 minutes in total depending on the thickness of the breasts.

I usually cut the chicken breasts into tenders because I prefer a heavier crispy:chicken ratio. I usually tweak the recipe by adding extra breadcrumbs as well. This is an easy basic format for chicken that we eat almost weekly!

Steps:

  • Preheat oven to 350F.
  • Toast panko bread crumbs in oven for 4 minutes by spreading it on a lightly greased baking tray. Once the crumbs begin to turn golden brown remove it and let it cool completely.
  • Scrape toasted panko into a large bowl or wide bowl. Mix grated Parmesan and little flour to it. Mix well.
  • Into another wide bowl break an egg, add mayo, salt, pepper and garlic. Mix into lump free coating.
  • Make a butterfly cut on chicken breasts but separating into two pieces. Cut thin strips or fingers out of each piece.

2 medium carrot
2 stalk celery
2 cup grapes

Steps:

  • Preheat oven to 400 degrees F. Line baking sheet with parchment paper, or grease with olive oil.
  • Cook the rice as directed on package.
  • Heat oil in a skillet over medium. Once hot, add panko breadcrumbs and lightly toast. Stir constantly for 5 minutes, until lightly browned.
