CRISPY HONEY DIJON CHICKEN
Deliciously crispy chicken with a honey Dijon sauce.

Steps:
- Preheat oven to 350F. Move rack to middle position.
- Season chicken with salt and pepper. Heat the oil in a large skillet.
- When the oil is hot, add the chicken to the skillet skin-down. Cook for 8-10 minutes then flip it and cook it for an additional 4 minutes. Remove chicken from pan and set aside.
- Deglaze the pan with the wine and mustard, stirring constantly until you've got a smooth sauce. Stir in the chicken broth, garlic, honey, Italian seasoning, butter, and salt & pepper to taste.
- Add the chicken back in the pan and cook it in the oven for 45 minutes.
CRISPY HONEY DIJON CHICKEN
Just something I came up with as an alternative to chicken fingers with honey dijon dipping sauce. Very easy to make!

- Preheat oven to 350°F.
- Pound chicken breasts until they are thin.
- Stir together mustard, honey, salt and pepper.
- Spread or paint dijon mixture generously on chicken breasts.
- Crush Ritz crackers into fine crumbs.
- Press crumbs onto mustard coated chicken until chicken is thoroughly coated with crumbs.
- Place chicken on a baking sheet or jellyroll pan and bake at 350F for 30-40 minutes or until crispy, turning chicken once during cooking, if desired.
CRISPY HONEY DIJON CHICKEN SANDWICH
I wanted a chicken sandwich but didn't want to go to a fast food restaurant. Thought this up because I thought it would be flavorful and satisfy even the strongest craving.

Steps:
- 1. Mix the honey dijon mustard together with the eggs, then add a touch of water to thin the batter a little.
- 2. Dip the chicken pieces into the mixture then coat the chicken with bread crumbs.
- 3. Add chicken (three at a time) into a pan of hot oil and cook for 15 minutes, turning the chicken every five. Continue this until all the chicken is cooked.
- 4. Place chicken on a bun and put whatever toppings and condiments you desire. I chose lettuce and chipotle mayo.
EASY GRILLED HONEY-DIJON CHICKEN
Steps:
- In a small bowl, add the honey, mustard, 1 tablespoon of oil and salt and pepper, to taste. Mix well and put the mixture into a large plastic resealable bag. Add the chicken, seal the bag and shake to incorporate. Refrigerate at least 2 hours.
- Preheat the grill to medium heat.
- Remove the chicken from the bag and arrange it on a well-oiled grill. Cook until a nice crust forms on both sides, about 4 to 5 minutes per side. Let the chicken rest on a serving platter for 10 minutes before serving. Serve with lime wedges.
HONEY DIJON CHICKEN SALAD
While I have dozens of chicken salad recipes I made this last night for a church supper and put it at the top of my list favorites. The honey and Dijon mustard really make this salad stand out. We use a slice of white and a slice of wheat bread to make the sandwiches, and also cut them into fourths making triangles. Serving these on a pretty platter, point side up makes for a great presentation.

- Poaching chicken: Place breasts in a large pot of cold water. Cover with a lid and bring to a boil over medium heat. Boil 7 minutes or until chicken is cooked through.
- Remove from pot to plate and cool enough to chop.
- Salad:.
- Add chopped chicken to a large bowl, stir with a fork to begin breaking the chicken up. Add the celery, onion, and pecans stirring well. Add mustard, mayonnaise, honey, and salt and pepper. Stir well. Taste and adjust seasoning.
- Open one of the loaves of bread, remove the heels and place on your counter. Place about 2-3 Tablespoons of salad on each slice of bread. Spread with spoon to cover. Open the second loaf of bread, remove the heels, and place on top of the salad. Cut sandwich with serrated knife into triangles. Serve on lettuce lined platter point side up.
- Note: this is really good on toast, too.

HONEY DIJON CHICKEN
Try it, you're going to love it! It just doesn't get any easier than this. Five minutes of prep work, 30 minutes of cooking time, and you have a fantastic meal. The original recipe states that it makes enough sauce for 4 chicken breasts, but I've found that it can easily be stretched to serve with at least 6 decent-size chicken breasts.

- Preheat oven to 350 degrees.
- Lightly spray the bottom and sides of a 10-inch casserole dish (or any baking pan large enough to hold the chicken breasts). Place the chicken breasts in the coated baking pan.
- With a wooden spoon, mix the mustard, honey, apricot preserves, and ginger in a small mixing bowl until well blended. Brush (or spoon) the mustard mixture over the tops of the chicken breasts. Bake the chicken, uncovered, for 30-45 minutes (depending on thickness of the breasts).
- After 15 minutes of baking turn over each chicken breast, spoon sauce over them, and continue baking for the remaining 15 minutes, or until breasts are thoroughly cooked.
- Transfer the chicken breasts to individual plates. Spoon the sauce over each chicken breast serving.
- (For my kids, I like to put their portion of the sauce into a small condiment cup so they can use it as a dipping sauce. What can I say -- it's a kid thing.).

- For the chicken: Put 1 chicken breast between two pieces of parchment or wax paper. Using a meat mallet (or the bottom of a heavy skillet), pound the chicken breast until it is 1/2 inch thick. Repeat with the remaining chicken breasts.
- Line a baking sheet with paper towels. Add the panko to a shallow dish.
- Brush the mustard on the pounded chicken cutlets with a pastry brush to coat both sides. Press each one into the panko, turning to coat well on all sides.
- Melt 1 tablespoon of the butter in 1/4 cup of the olive oil in a large skillet over medium heat. Add 2 of the cutlets and cook, undisturbed, until golden brown, 4 to 5 minutes. Flip the cutlets once and continue cooking until golden and cooked through, 3 to 4 minutes more. Transfer the cutlets to the prepared baking sheet and immediately season with salt.
- Wipe out the skillet and repeat the cooking process with the remaining 1/4 cup olive oil, 1 tablespoon butter and 2 cutlets.
- For the slaw: Place the celery seeds in a small skillet over medium heat and cook, stirring, until toasted and fragrant, 1 to 2 minutes. Whisk together the mayonnaise, mustard, sugar, lemon juice, toasted celery seeds, 1/4 teaspoon salt and 1/8 teaspoon pepper in a large bowl. Add the red cabbage, green cabbage, scallions and parsley to the bowl and toss well to combine.
- For assembly: Position an oven rack 3 to 4 inches from the broiler unit, and preheat the broiler to high. Split the brioche buns and toast until golden brown, 1 to 2 minutes. Slice each chicken cutlet in half crosswise.
- Spoon a portion of the slaw onto each of the bottom buns. Stack the halved chicken cutlets on top of the slaw. Add the pickles and top buns and serve.
