HOW TO MAKE CRISPY FRIED SPINACH

Steps:
- Wash and dry your spinach leaves.
- Remove and stems and shred with a sharp knife. You can see how I did this in the photos above.
- Heat your oil in a large pan. When a piece of spinach instantly sizzles when added to the oil, you're good to go.
- Depending on how much you are making, you may need to cook the shredded spinach in batches.
- As the spinach cooks, it will turn a couple of shades darker. That is a pretty good indication that it is ready.
- Drain cooked crispy spinach on paper towels. It should crisp right up once out of the oil. Season with a little salt.
EASY FRIED SPINACH
This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

Steps:
- Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

CRISPY SPINACH
Something yummy and different. The trick is to have the oil really hot before putting the spinach in and the spinach will not absorb a lot of oil. It is a good starter as it is light. THe oil should be brought back to the same temperature between each batch.

PARMESAN EGG WITH SPINACH
Steps:
- You will be needing a lid for your skillet. If your skillet doesn't have a lid, you can use a lid from another pot that might fit or if all else fails, just grab a baking sheet and place it over the top of the skillet.
- Heat olive oil in a small non-stick skillet over medium heat. Add garlic and cook briefly, just until fragrant. Add spinach leaves and toss, cooking until just wilted. Remove to a plate. Wipe out skillet.
- Reduce heat to medium-low. Add parmesan to skillet in an even layer, forming an oval in the middle. Let cook 30 seconds, then crack an egg over one edge of the parmesan, so the egg is half on and half off the parmesan. Cover skillet and cook until egg is just set. Remove lid and allow to cook another 30 seconds or so more. Use a spatula to transfer parmesan/egg to plate with spinach. Serve with a lemon wedge to drizzle over-top and a generous sprinkling of salt and pepper.

FRIED SPINACH
Steps:
- In a large heavy saucepan or deep-fat fryer, heat 3 or 4 inches of oil to 350/F. Preheat the oven to very low and put a paper towel-lined roasting pan in it to warm. Standing well away from the top of the pot in case the oil spatters, take a handful of leaves at a time and throw them into the hot oil for about 30 seconds, or until crisp and bright green. Remove with a skimmer or tongs to the towel-lined pan and sprinkle with a little salt and pepper. Fry the remaining spinach in the same way. (The spinach can be kept at room temperature after frying for up to 2 hours, then reheated in a low oven just before serving.)

AIR FRYER CRISPY SPINACH - PREDOMINANTLY PALEO
From predominantlypaleo.com
5/5 (5)Estimated Reading Time 3 mins
- If you notice, I did not use exact measurements because it will depend on your air fryer and palate. But you begin by spreading out the raw spinach leaves in your air fryer basket. They do not need to be single layer, they will still crisp up, just don’t make the layers of leaves too thick
- LIGHTLY season with garlic sea salt. And I mean lightly. You can always add more later but a scant pinch is more than enough in most cases or it will taste over-salted.
- Slide the basket into your air fryer and cook on the air fryer setting at 300 for 10 minutes. There will be a few darker stems and smaller leaves but less than 10 did not get enough leaves crispy and dried out for me. Also keep in mind different air fryers will require different temp and cook times. This is based on my personal air fryer.

- Pour about 2 inches of peanut oil in your frying pan and heat on high. When it gets that greasy, glossy look, it's almost ready for frying. It takes 5 to 10 minutes to heat the oil, depending on your stove capacity.
- Flip the spinach over with a slotted spoon so it gets fried on both sides and doesn't stick in a wad. The spinach should curl up and become wrinkled. This will take 30 seconds max.

- Wash and dry your spinach leaves and remove the large stems. You will be shredding the majority of the leaves but hold about 8 – 10 large leaves back for dipping in batter.
- I find that it is quicker to stack the leaves and then shred them. Shred the leaves finely. If you have ever tried fried seaweed at a Chinese takeaway, that is the look you are going for with this spinach. Once the shredding is done, heat about 10cm (4 inches) of rapeseed oil in a large pan or wok for deep frying. When a piece of spinach instantly sizzles when added to the oil, you're good to go.
- It is a good idea to cook the spinach in batches. Fry each batch until the leaves become darker and are beginning to turn crispy. Transfer to paper towels to soak up any excess oil. The shredded spinach will become crispier as it dries out of the oil.
- To make the batter, whisk all of the batter ingredients in a bowl with just enough water to make a thick, smooth batter. Dip the large leaves in the batter. It should coat them. If you find the batter is too runny whisk in a little more gram flour. Fry the battered leaves in the hot oil until crispy and brown and then transfer to paper towels to soak up any excess oil. Season the shredded and battered spinach with salt to taste.
