250g fresh spinach - As much as you like
Vegetable oil for deep frying
Salt to taste

Steps:

  • Wash and dry your spinach leaves.
  • Remove and stems and shred with a sharp knife. You can see how I did this in the photos above.
  • Heat your oil in a large pan. When a piece of spinach instantly sizzles when added to the oil, you're good to go.
  • Depending on how much you are making, you may need to cook the shredded spinach in batches.
  • As the spinach cooks, it will turn a couple of shades darker. That is a pretty good indication that it is ready.
  • Drain cooked crispy spinach on paper towels. It should crisp right up once out of the oil. Season with a little salt.

This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

¼ cup canola oil
¼ cup unsalted butter
2 (10 ounce) bags fresh spinach leaves
8 cloves garlic, thinly sliced

Steps:

  • Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

Something yummy and different. The trick is to have the oil really hot before putting the spinach in and the spinach will not absorb a lot of oil. It is a good starter as it is light. THe oil should be brought back to the same temperature between each batch.

500 g spinach
1/4 cup sesame seeds
3 tablespoons finely chopped green chilies
salt
sugar
oil (for deep frying)

Steps:

  • Separate spinach leaves from stems and wash in plenty of water.
  • Dry leaves completely and slice into fine shreds Make sure the leaves are completely dry Dry roast sesame seeds for a few minutes till lightly coloured.
  • Place sesame seeds, chopped green chillies, salt and sugar in separate bowls close to the stove.
  • Line a colander with absorbent paper and place it close by.
  • Heat oil in a wok or deep frying pan till smoking hot.
  • Add a handful of spinach shreds and fry for a few seconds till spinach turns bright green.
  • Remove from oil with a slotted spoon and place in the colander.
  • Quickly sprinkle on a few sesame seeds, some green chillies, salt and sugar and toss to coat the spinach with the flavorings.
  • Continue cooking remaining spinach in the same way.
  • Serve immediately.

1 egg white
1/2 cup fresh parmesan cheese

50 g butter

Steps:

  • Mix together all the ingredients in a bowl using your hands as this helps get the mix together, the egg white will help to bind the mixture so it should all come together very quickly.
  • Once the mix can be sculpted into a ball shape it is ready to create the individual balls.
  • Tear off sections of the mixture and using your palms roll it into a ball about the size of a golf ball flatten the ball slightly so it is a kind of oval shape.
  • Deep fry the balls until they are a golden brown colour on all sides and serve on top of a creamy pasta dish. The balls should be slighly soft with melted cheese inside if they are cooked correctly.

1/4 cup freshly grated Parmesan cheese
1 handful fresh spinach leaves
1/2 tsp olive oil
1/2 clove garlic (chopped)
Lemon wedge
Salt and freshly ground pepper

Steps:

  • You will be needing a lid for your skillet. If your skillet doesn't have a lid, you can use a lid from another pot that might fit or if all else fails, just grab a baking sheet and place it over the top of the skillet.
  • Heat olive oil in a small non-stick skillet over medium heat. Add garlic and cook briefly, just until fragrant. Add spinach leaves and toss, cooking until just wilted. Remove to a plate. Wipe out skillet.
  • Reduce heat to medium-low. Add parmesan to skillet in an even layer, forming an oval in the middle. Let cook 30 seconds, then crack an egg over one edge of the parmesan, so the egg is half on and half off the parmesan. Cover skillet and cook until egg is just set. Remove lid and allow to cook another 30 seconds or so more. Use a spatula to transfer parmesan/egg to plate with spinach. Serve with a lemon wedge to drizzle over-top and a generous sprinkling of salt and pepper.

250 Grams Spinach - leaves only (washed, pat dry and finely shredded)
Oil (for frying)
1 Tablespoon finely chopped Garlic
1 Tablespoon finely chopped Ginger
1 Teaspoon Toasted Sesame Seeds
½ Teaspoon Red Chilli Flakes
1 ½ Teaspoon Castor Sugar
1 Teaspoon Salt

Steps:

  • Sprinkle shredded spinach over a kitchen towel or tissue paper. Dab with another towel or tissue and remove as much moisture as possible. Keep covered until ready to fry.
  • Heat oil in a kadai or frying pan on medium flame for deep frying. Once hot, sprinkle the spinach carefully into the pan. Fry on medium for 2-3 minutes or until crispy. Use a slotted spoon or a spider strainer to remove the spinach. Transfer onto a tissue lined plate.
  • Add ginger and garlic into a spider strainer and place it in the hot oil and fry for 1-2 minutes or until golden brown. Remove and transfer to a tissue lined plate.
  • Transfer the fried spinach, ginger and garlic into a bowl. Add toasted sesame seeds, red chilli flakes, castor sugar and salt. Toss to combine and serve hot.

  • In a large heavy saucepan or deep-fat fryer, heat 3 or 4 inches of oil to 350/F. Preheat the oven to very low and put a paper towel-lined roasting pan in it to warm. Standing well away from the top of the pot in case the oil spatters, take a handful of leaves at a time and throw them into the hot oil for about 30 seconds, or until crisp and bright green. Remove with a skimmer or tongs to the towel-lined pan and sprinkle with a little salt and pepper. Fry the remaining spinach in the same way. (The spinach can be kept at room temperature after frying for up to 2 hours, then reheated in a low oven just before serving.)

  • If you notice, I did not use exact measurements because it will depend on your air fryer and palate. But you begin by spreading out the raw spinach leaves in your air fryer basket. They do not need to be single layer, they will still crisp up, just don’t make the layers of leaves too thick
  • LIGHTLY season with garlic sea salt. And I mean lightly. You can always add more later but a scant pinch is more than enough in most cases or it will taste over-salted.
  • Slide the basket into your air fryer and cook on the air fryer setting at 300 for 10 minutes. There will be a few darker stems and smaller leaves but less than 10 did not get enough leaves crispy and dried out for me. Also keep in mind different air fryers will require different temp and cook times. This is based on my personal air fryer.
