Crispy Corn Cakes With Smoky Black Bean Salsa image

This recipe is from The Big Book of Appetizers by Deeds and Snyder. It's one of our favorites. Some times we have these with nonfat plain yogurt instead of the sour cream.

for salsa
2 cups cooked black beans
1 cup chopped fresh tomato
1/2 cup chopped red onion
3 tablespoons minced fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon minced chipotle chile in adobo
1/2 teaspoon salt, to taste
for corn cakes
1 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup shredded sharp cheddar cheese
1 cup buttermilk
4 tablespoons unsalted butter, melted
1 cup corn kernel
oil, for skillet
sour cream (to garnish)

Steps:

  • Toss together all the salsa ingredients, taste for seasoning. Allow to sit while you prepare the corn cakes, then taste again before serving, adjust seasoning if necessary.
  • To make the corn cakes, Mix together the cornmeal, baking powder, salt, baking soda and cheddar. Add the buttermilk, butter and corn, gently fold together. Do not overmix.
  • Heat a large skillet, coat with a film of oil. Drop batter by the tablespoon onto the hot skillet. Cook until bubbles break on the tops of the cakes, then flip them over. Cook a few minutes more, or until the bottoms brown and one tests done.
  • Keep warm in a low oven until they are all cooked.
  • To serve, place three or four cakes on a plate, dollop some sour cream, and top with salsa.

I got this recipe at a party. It's a recipe that has been passed a ton so I am not really sure of it's orgin. It's really good, really sweet and really easy.

1 cup olive oil
1 cup granulated sugar
1/2 cup cider vinegar
1 (14 ounce) can black-eyed peas, drained
1 (6 ounce) can white shoepeg corn, drained
1 (14 ounce) can black beans, drained
1 (4 ounce) jar pimientos, drained
1 (14 ounce) can canned jalapeno slices, drained & chopped
1 cup celery, choppped
1 small red onion, chopped

Steps:

  • Combine olive oil, granulated sugar and cider vinegar in a small saucepan. Simmer until all sugar is dissolved.
  • In a large bowl, combine the remaining ingredients.
  • Pour liquid mixture over bean mixture.
  • Refrigerate for 24 hours.
  • Drain before serving. (I use a spoon with holes and scoop out).

Corn's always been the basis of my favorite recipes-in fact, these corn cakes were one of the first things I made for my husband. For dinner, they're nice with fresh fruit salad and ham. They're also great with breakfast sausage and orange juice. Tom works for the highway department on Mount Hood, and we live at its base. Our children are 19, 16 and 13.

Number Of Ingredients 14

1 cup all-purpose flour
1/2 cup yellow or blue cornmeal
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs, separated
1 cup whole milk
1/2 cup butter, melted
1 cup cooked whole kernel corn
4 green onions, thinly sliced
1/2 medium sweet red pepper, finely chopped
1 can (4 ounces) chopped green chilies
Oil for frying
Maple syrup, optional

Steps:

  • In a medium bowl, combine flour, cornmeal, sugar, baking powder and salt. In a small bowl, beat egg yolks; blend in milk and butter. Add to dry ingredients; stir until just mixed. (Batter may be slightly lumpy). , Stir in the corn, green onions, red pepper and green chilies; set aside. , In a small bowl, beat egg whites until stiff peaks form. Gently fold into batter. , For each pancake, pour about 1/4 cup batter onto a lightly greased hot griddle; turn when bubbles form on tops of cakes. Cook second side until golden brown. Serve immediately with syrup if desired.

1/4 cup butter, melted
6 large eggs
1 cup 2% milk
1-1/2 cups all-purpose flour
1/2 cup cornmeal

1 can (15-1/4 ounces) whole kernel corn, drained
1/2 cup salsa, drained
1/4 cup minced green onions
Sour cream and additional salsa

Steps:

  • In a large bowl, beat cream cheese and butter until smooth; add the eggs and mix well. Beat in the milk until smooth. Combine the flour, cornmeal, baking powder and salt; stir into cream cheese mixture just until moistened. Fold in the corn, salsa and onions. , Pour batter by 1/4 cupfuls into a large greased cast-iron skillet or hot griddle. Turn when bubbles form on top; cook until the second side is golden brown. Serve with sour cream and salsa.

1/2 cup mayonnaise
1 tablespoon reduced sodium soy sauce
1 tablespoon ketchup
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon hot pepper sauce (optional)
1/8 teaspoon pepper
1/2 cup onion, chopped (about 1 small)
1 tablespoon oil, plus additional divided (for frying)
2 garlic cloves, minced
1/2 lb shrimp, finely chopped, uncooked peeled and deveined
3/4 cup all-purpose flour
1/4 cup cornmeal
1 tablespoon cornstarch
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup cream-style corn
1 cup whole kernel corn
1 egg, lightly beaten

Steps:

  • In a small bowl, combine the first seven ingredients. Cover and chill until serving.
  • In a large skillet, cook and stir onion in 1 tablespoon oil over medium-high heat until tender. Add garlic; cook 1 minute longer. Add shrimp; cook and stir until shrimp turns pink. Remove from the heat.
  • In a large bowl, mix the flour, cornmeal, cornstarch, baking powder, salt and pepper. In a small bowl, mix the corn, egg and shrimp mixture; stir into dry ingredients just until moistened.
  • In an electric skillet, heat 1/4 inches of oil to 375°. In batches, drop corn mixture by rounded tablespoonfuls into oil; fry 1-1/2 minutes on each side or until golden brown. Drain on paper towels. Serve with sauce. Sauce makes 1 Cup.

1 cup instant brown rice
6 scallions, trimmed and sliced
2 teaspoons minced garlic
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme leaves, crushed
1 cup frozen corn
1 cup fresh whole wheat breadcrumbs
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 large eggs
4 teaspoons extra virgin olive oil, divided
1 (15 ounce) can black beans, rinsed
1 cup salsa

Steps:

  • Cook rice with the amount of water called for in the package directions, adding scallions, garlic and thyme to the water. Remove from heat and stir in corn, breadcrumbs, salt and pepper. Let stand for about 5 minutes to cool slightly.
  • Whisk eggs in a large bowl until frothy. Add the rice mixture and mash with a potato masher until the mixture holds together (it will be fairly soft), about 1 minute. Shape the mixure into 8 patties.
  • Heat 2 teaspoons oil in a medium nonstick skillet over medium-high heat. Carefully transfer 4 patties to the pan with a spatula and cook until browned and crispy, about 3 minutes per side. Transfer to a plate; cover to keep warm. Wipe out the pan with a paper towel, add the remaining 2 teaspoons oil and repeat with the remaining 4 patties.
  • Meanwhile, combine beans and salsa in a small saucepan and cook over medium-high heat, stirring occasionally, until hot, about 5 minutes. To serve, divide the beans among 4 plates and top with 2 patties each.
