DELIGHTFUL COD IN THE MICROWAVE

I was without an oven for almost two years. I learned to cook a lot of items in the microwave (and on the grill). Here is a delightful cod dinner.

Ingredients

1 lb cod fish fillet
1/2 cup chopped tomato
1/3 cup finely chopped onion
2 tablespoons water
2 tablespoons olive oil
4 1/2 teaspoons lemon juice
1 teaspoon dried parsley flakes
1/2 teaspoon minced garlic
1/2 teaspoon minced fresh basil
1/8 teaspoon salt
1 teaspoon seafood seasoning

Steps:

Place the cod fillets in a shallow microwave-safe dish.
In a bowl, combine the tomatoes, onion, water, oil, lemon juice, parsley, garlic, basil and salt and spoon over cod.
Sprinkle with seafood seasoning.
Cover and microwave on high for 6 minutes or until fish flakes easily with a fork.

Fish is a great source of lean protein. Try this super-easy cod dish that gets its flavor from a tasty Asian marinade.

Ingredients

4 scallions, white and green parts separated and sliced
2 tablespoons minced peeled fresh ginger
2 tablespoons rice vinegar
2 tablespoons vegetable oil
1/4 teaspoon red-pepper flakes
1 teaspoon sugar
Coarse salt
4 skinless cod fillets (6 ounces each)
Cooked rice, for serving (optional)

Steps:

In a shallow 2-quart microwave-safe dish with a lid, stir together scallion whites, ginger, vinegar, oil, red-pepper flakes, and sugar. Season with salt. Marinate cod in dish 20 minutes, turning once.
Cover and microwave on high, 5 minutes. Let stand, covered, until fish is opaque throughout, 5 minutes. Top with scallion greens. Serve fish with rice if desired.
