CHICKEN WITH ROASTED LEMON AND ROSEMARY SAUCE

- Preheat the broiler.
- Cut a small slice off both ends of each lemon, and then cut in half crosswise. Arrange the lemons, flesh side up, in a flameproof nonreactive baking dish, and season with salt. Broil 6 inches or more from the heat until browned and soft, about 10 minutes. Cool slightly. Squeeze the lemon halves over a sieve suspended over a bowl. Push and stir the pulp through the sieve with a rubber spatula or wooden spoon to get as much juice out as possible. Discard the lemon peels.
- Reduce oven temperature to 425 degrees F.
- Season chicken with salt and pepper. Heat the olive oil in a large ovenproof skillet over medium-high heat until hot. Add the chicken, lower the heat to medium, and cook, turning once, until brown on both sides, about 5 minutes. Remove chicken to a plate or baking sheet.
- Return the pan to medium-high heat, add the potatoes, season with salt and pepper, and cook, stirring and tossing, until brown all over, about 10 minutes. Drain off the excess oil. Arrange the chicken breasts on top of the potatoes and place in the oven until potatoes and chicken are cooked through, about 10 to 15 minutes. Remove the chicken to a platter and put the pan with the potatoes over medium-high heat. Toss well so the pan juices are absorbed into the potatoes. Scrape the potatoes out of the pan onto the platter around the chicken.
- Return the pan to medium-high heat, add the garlic and rosemary, and cook until fragrant, about 1 minute. Add 1 cup of chicken broth and reserved lemon juice. Stir and scrape up all the browned bits that cling to the bottom and sides of the pan, and then add the remaining 1 cup broth. Bring to a simmer stir in parsley and season to taste with salt and pepper. If the sauce tastes too lemony, stir in the optional butter. Pour the sauce over the chicken and potatoes and serve immediately, garnished with rosemary sprigs

- Set 3 wide, shallow bowls on a work surface. Add flour to the first one, beaten eggs to the second, and panko and Parmesan cheese to the third. Mix panko and Parmesan thoroughly.
- Line a rimmed baking sheet with parchment paper. Season chicken cutlets all over with salt and pepper. Working with one at a time, dredge a cutlet in flour with your left hand, shaking off excess. Transfer to egg dish, then turn cutlet with your right hand to coat both sides. Lift and allow excess egg to drain off, then transfer to bread crumb mixture. With your left hand, scoop bread crumbs on top of chicken, then gently press, turning chicken to ensure a good layer of crumbs on both sides. Transfer cutlet to prepared baking sheet and repeat with remaining cutlets.
- Fill a large skillet with 1/4 inch oil. Heat over high heat until shimmering and just shy of smoking, about 375°F (191°C) on an instant-read thermometer.

CRISPY CHICKEN CUTLETS WITH LEMON ROSEMARY BUTTER SAUCE
These are Crispy Chicken Cutlets that are seasoned and fried with panko bread breadcrumbs covered in a Lemon Butter Rosemary Butter Sauce.

- Add the flour, eggs, and panko bread crumbs into three separate bowls. Be sure to whisk the eggs to combine the whites and yolks. Season the chicken cutlets with salt and pepper on both sides.
- Using a medium to a large skillet, heat the canola oil on medium-high heat. Dredge the chicken cutlets through the flour and shake off excess, then the egg mixture, and finally the panko bread crumbs on both sides.
- Place in the hot skillet and cook on each side for 5-7 minutes until golden brown and crisp. Once the cutlets are cooked, turn to a wire rack and sprinkle with a little more salt and black pepper. Place in the oven on warm until ready to serve.
- Using a medium shallow saute pan, heat the olive oil for the sauce on low to medium heat. Add the shallot and cook until translucent, about 3-5 minutes. Add the garlic and cook for an additional 2 minutes. Next, add the white wine and allow it to cook for about 5 minutes.
- Add the juice of a lemon (remove the seeds), capers, and rosemary. Reduce the heat to simmer. Next, add the cold butter allow it to melt, and simmer. Whisk in the heavy cream until sauce is well combined. Strain the sauce into a serving dish ( I didn't want to strain my sauce but that is up to you). Add salt and pepper as desired and serve on top of the chicken cutlets.
