CRISPY CAJUN OVEN BAKED FRIES
Homemade natural cut fries, seasoned with a cajun spice blend and baked to a crisp perfection in the oven. They are so good and healthier than fast food fries!

Steps:
- Preheat oven to 475
- Wash potatoes
- Slice potatoes into strips.
- Cover with hot water and let sit for 20 minutes.
- Prepare the cajun blend by combining all spices in a bowl, set aside.
- Drain potatoes and dry them off thoroughly.
- Brush a baking pan with 3 tablespoons of oil and sprinkle pan with 1/3 of the cajun seasoning.
- Toss the potatoes with 1 tablespoon of oil and sprinkle lightly with seasoning.
- Place the potatoes on the pan in a single layer.
- Cover with foil and bake 5 minutes.
- Remove foil and continue baking for another 15-20 minutes until golden brown on the bottom.
- Flip potatoes and continue baking until crisp and golden, about 10-15 minutes. Keep an eye on them.
- Remove from oven and sprinkle with the rest of the cajun seasoning.
- Drain on paper towels.
- Serve hot.

- Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once.
CRISPY OVEN FRIES
This is the easy version of a popular dish at our house. If I don't use the soup mix, I concoct my own version with herbs (rosemary is great here), sea salt, hot sauce, and whatever comes to hand. Any kind of potato can be used resulting in a slightly different texture of the dish. Oil should be added just to coat the potatoes, they don't need to be drenched. Or for a lighter version, spray the potatoes with cooking oil and delete the olive oil. This is so easy, but it's so good.

Steps:
- Scrub potatoes well and leave skins on.
- Halve each the long way, then cut each half into quarters to make 8 steak fry shapes.
- Smaller potatoes can be cut into quarters.
- Put potatoes into a large bowl and add dry soup mix and the oil.
- You made need more or less oil depending on size of potatoes.
- Mix all very well with a large spoon.
- Spray a large broiler pan or large flat cooking pan with cooking spray.
- Spread potatoes so that they are only in one layer on the pan.
- Place in 400 degree oven for 1 hour.
- IMPORTANT: These need to be stirred every 15 minutes to keep them from sticking to the pan and to ensure even crisping.

- Adjust oven rack to lowest position and heat oven to 450 degrees.
- Place potatoes in bowl, wrap tightly with plastic, and microwave until translucent around edges, 3 to 5 minutes, shaking bowl to redistribute potatoes halfway through cooking. Transfer potatoes to cooling rack and thoroughly blot fry with paper towels.
- Coat rimmed baking sheet with 5 tablespoons oil. Transfer to oven and heat until just smoking, 5 to 7 minutes. Meanwhile, whisk remaining oil, cornstarch, and salt in large bowl. Add potatoes to bowl and toss to coat.
- Arrange in a single layer on hot baking sheet and bake until deep golden brown and crisp, 25 to 35 minutes, flipping potatoes half-way through cooking time. Transfer to paper towel-lined plate and blot with additional paper towels. Serve.
BAKED CAJUN FRIES
These are so good and you could use the recipe as a base to season them however you like, for instance, instead of the cayenne and cumin, you could use rosemary and fresh parsley!

- Preheat oven to 450 degrees. Lightly grease a baking sheet.
- In mixing bowl toss the potatoes with the olive oil to coat them.

- Peel and cut potatoes into fries. Soak in cold water until ready to use, but at least 10 minutes.
- In a bowl or zip bag, combine masa flour, cornmeal and Cajun seasoning. Blend well.

- Heat oven to 425 degrees F (218 C) and use the convection setting if you have it. This will allow the fries to become more crispy on the edges and cook faster. If you don’t have a convection setting, no worries. You’ll just bake for slightly longer. Convection simply speeds up the process.
- Line 1 large or 2 small baking sheet(s) with parchment paper or silicone baking mats and set aside (this is important or the fries will stick). (See notes for best way to cook large batches of fries.)
- Wash and scrub your potatoes clean but leave the skin on. Add to a large saucepan or pot and cover with water by 1 inch. Add a pinch of salt.

You don’t want them to be cracking or falling apart, but you do want them to be tender and pretty much cooked through. Remove from the water and allow to cool on a cutting board (~5-10 minutes).
