Steps:
- Place the buttermilk, pepper and 1 teaspoon salt in a resealable plastic bag and add the chicken, turning to coat. Marinate for at least 2 or up to 8 hours in the refrigerator.
- Preheat the oven to 200 degrees F and fit a wire rack in a small baking sheet.
- Heat the oil to 375 degrees F in a heavy-bottomed pot.
- Whisk together the flour, granulated garlic, paprika and remaining 1 teaspoon salt in a dish. Remove the chicken from the buttermilk and dredge it in the flour mixture. Shake off the excess and, working in batches, fry the chicken until golden brown, 3 to 4 minutes. Transfer to the rack set in the baking sheet and keep warm in the oven while you finish frying the remaining chicken.
- To build the bowls, place some shredded lettuce in the bottom of the waffle bowls. Divide the hot popcorn chicken among them, then top with the quartered cherry tomatoes and more lettuce. Drizzle with the Buttermilk Honey Dressing.
- Mix together the mayonnaise, buttermilk, mustard, honey, dill, granulated garlic and black pepper in a small bowl and season with salt.
CRISPY BUTTERMILK WAFFLES
These waffles are AMAZING! They are so crispy, you won't believe it. TIP: Cool leftovers, and freeze. To reheat, put waffles directly on oven rack at 350 degrees F., and bake for 5-7 minutes.

Steps:
- Prepare the batter and refrigerate at least 8 hours before baking--all day to have waffles for dinner (try over under ice cream), OR overnight to have them for breakfast.
- Make the batter in the morning OR evening:.
- Combine and whisk together the dry ingredients in a large bowl: flour, yeast, sugar and salt. Combine the melted butter and milk (or buttermilk). Add the mixture to the dry ingredients. Whisk eggs and vanilla together in a separate small bowl. Add the egg-vanilla mixture to the other mixture, and whisk until well-combined. Cover with plastic wrap and stick in the fridge until tomorrow morning.
- That evening OR following morning:.
- Prepare waffle iron as usual. Stir the batter to deflate it (it should be puffy and frothy). Add to waffle iron the same way you would other batter, keeping in mind that this batter will rise more than batters that use baking powder instead of yeast.
- Makes 4-6 large round waffles.
- NOTE: This recipe is easily made with milk OR buttermilk.

TENDER AND EASY BUTTERMILK WAFFLES
An easy waffle recipe that results in a nice crisp outside, and tender middle waffle. I love the results this gives while not having to separate the eggs and take time to whip egg whites! These will also reheat in the toaster for a quick work day breakfast.

Steps:
- Preheat oven to 250°F. Spray an unheated well-seasoned or nonstick Belgian waffle iron with cooking spray and preheat iron.
- Into a large bowl sift together flour, baking powder, baking soda, and salt. Melt 5 tablespoons butter and in a small bowl whisk together with buttermilk and egg until combined. Stir butter mixture into flour mixture until smooth (batter will be thick).
- Spoon batter into waffle iron, using 1 cup batter for two 4-inch-square Belgian waffles (see note, above) and spreading evenly, and cook according to manufacturer's instructions. Transfer waffles to a baking sheet and keep warm, uncovered, in middle of oven. Make more waffles in same manner (do not respray iron).
- In a large heavy skillet heat remaining tablespoon butter over moderate heat until foam subsides and cook prosciutto slices until crisp and golden, about 1 minute on each side.
- Serve waffles with prosciutto, sour cream, and maple syrup.
THE BEST BUTTERMILK WAFFLES
In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Steps:
- Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
- Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
- Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

- Either brush your waffle iron with some veggie oil or spray with nonstick (although some say that the latter will gunk up your machine and make it stick more in the long run…you decide). Pre-heat your waffle iron on the hottest setting (this is how mine needs to be…really hot to get that nice crust). Go as hot as you can go with yours, without hitting the burn level. Waffle irons are like ovens and microwaves…zero consistency. So go with your gut on how hot to make yours.
- In a large bowl, whisk together the all-purpose flour, white whole wheat flour, sugar, baking powder, baking soda and salt.
- In another bowl, whisk together the buttermilk, milk, melted butter, eggs and vanilla. Add to the flour mixture and stir until just combined. Don’t overmix…your batter will be lumpy.
- At this point, your waffle iron should be hot and ready to go. But pause a beat. Let your batter hang out a sec. I always think the batter performs better when you let it chill and mingle a bit before it hits the heat. This is the perfect time to mix up a Bloody Mary or pop open some champagne. I’m talking maybe ten minutes. This is not totally necessary if you’re impatient.

- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda and salt; set aside.
- In a medium bowl, whisk together the buttermilk, eggs and vanilla. Add the wet ingredients to the dry ingredients and gently whisk to combine. Now mix in the melted butter. Try not to over mix the batter.
- Warm up your waffle iron. Spray it with non-stick cooking spray, right before adding the waffle batter. Once the waffle maker is ready, add the batter to the waffle iron. We used a little more than 1/2 cup of batter per waffle. Cook for 2 to 3 minutes, or until the waffle maker indicates they are ready. Serve warm.

- In a large bowl, combine the buttermilk with the salt, black pepper and cayenne. Add the chicken and stir to coat. Let stand at room temperature for 2 hours or refrigerate for 4 hours.
- In a large, resealable plastic bag, mix the flour with the onion powder, garlic powder, salt, black pepper and cayenne and shake to combine.
- Set a rack on a baking sheet. Working with one piece at a time, remove the chicken from the buttermilk soak, letting the excess drip back into the bowl. Dredge the chicken in the flour mixture, pressing so it adheres all over. Transfer the coated chicken to the rack and let stand for 30 minutes.
- In a deep skillet, heat 1 inch of oil to 350°. Set another rack over a baking sheet; line with paper towels. Fry the chicken in batches at 315°, turning once, until golden and an instant-read thermometer inserted in the thickest part of each piece registers 160°, 15 to 18 minutes. Transfer the chicken to the paper-lined rack and let stand for 5 minutes before serving.
