CRISPY BUFFALO OVEN FRIES
Steps:
- Preheat oven to 450 degrees F.
- Place cut potatoes in a large stock pot and cover with cold water. Bring to a boil and once bubbling, only boil for 5 minutes. You gotta keep an eye on it! After 5 minutes, drain potatoes. Place in a large bowl and drizzle with oil, salt, pepper and garlic powder. Gently toss with your hands or two spatulas to evenly coat. Spread on a baking sheet in one layer. Roast for 25-30 minutes, then flip and roast for 25-30 minutes more. You want the potatoes to be deeply golden and crunchy on the outsides!
- While potatoes are cooking, heat buffalo wing sauce and butter in a small saucepan over low heat until combined.
- Remove potatoes from the oven and switch on your broiler to the highest setting. I left my oven rack in the center of the oven. Drizzle a bit of wing sauce over the potatoes and sprinkle both cheeses evenly overtop. Place under the broiler for 2-3 minutes, until cheese is bubbly and golden. Remove immediately and sprinkle with scallions, chives and chopped cilantro. Dig in!
CRISPY OVEN FRIED BUFFALO CHICKEN STRIPS
I finally found a way to make my chicken fingers crispy! I try not to eat fried foods but I love fried chicken and chicken fingers and chicken nuggets! Everytime I try to make 'oven fried chicken' with regular bread crumbs or corn flakes or potato chips, it always ends up soggy. Well.. I finally tried Panko and it is a Godsend! And I've found the sour cream also helps a ton! For dips I use Blue Cheese and also mixed the Buffalo sauce with some honey and it turned out great. Enjoy!

Steps:
- Preheat oven to 425 degrees.
- Put Panko in a bowl or pan (something you can fit the chicken into when dipping).
- Put the chicken into a gallon size zip lock bag.
- Toss in the paprika, cayenne, salt and Red Hot Buffalo sauce (just enough to coat the chicken).
- Seal the bag and smoosh the chicken around to coat evenly.
- Add the flour to the bag.
- Seal the bag again and shake to coat.
- Crack eggs into bowl, and whisk.
- Add sour cream. (start with 1/2 cup and add to make thicker).
- Beat well to incorporate. It will be thick.
- Grab your seasoned chicken, dish of breadcrumbs, bowl of batter, and lined sheet pan.
- Take a piece of chicken and shake it to knock off excess flour.
- Dip it into the batter to coat it on all sides.
- Drop the battered chicken into the breadcrumbs and turn it over a few times to coat the chicken.
- Place on sheet.
- Bake for 20-25 minutes, until the breading is lightly browned. Your final cooking time will vary depending on how thick your chicken tenders are.
- *I served with blue cheese dressing, more Buffalo sauce, and even some honey. YUMMY.
BUFFALO FRIES
This is my version of the Buffalo Fries served at the Tommyknocker Brewery in Idaho Springs, CO. They are sooo good! This recipe can easily be doubled or scaled down for one. I like my fries drenched in the hot sauce and blue cheese, by all means don't add as much as is called for if you prefer. Enjoy!

- Bake french fries according to package directions.
- In a small saucepan combine hot sauce, vinegar and butter on med. heat until butter is melted and well combined.
- When fries are done, transfer to platter and drizzle with hot sauce.
- Crumble blue cheese all over fries and pop back in the oven for a second so the cheese can melt just slightly and stick to the fries.
- Serve with Ranch dressing for dipping if desired.

- Adjust oven rack to lowest position and heat oven to 450 degrees.
- Place potatoes in bowl, wrap tightly with plastic, and microwave until translucent around edges, 3 to 5 minutes, shaking bowl to redistribute potatoes halfway through cooking. Transfer potatoes to cooling rack and thoroughly blot fry with paper towels.
- Coat rimmed baking sheet with 5 tablespoons oil. Transfer to oven and heat until just smoking, 5 to 7 minutes. Meanwhile, whisk remaining oil, cornstarch, and salt in large bowl. Add potatoes to bowl and toss to coat.
- Arrange in a single layer on hot baking sheet and bake until deep golden brown and crisp, 25 to 35 minutes, flipping potatoes half-way through cooking time. Transfer to paper towel-lined plate and blot with additional paper towels. Serve.
CRISPY OVEN FRIES
This is the easy version of a popular dish at our house. If I don't use the soup mix, I concoct my own version with herbs (rosemary is great here), sea salt, hot sauce, and whatever comes to hand. Any kind of potato can be used resulting in a slightly different texture of the dish. Oil should be added just to coat the potatoes, they don't need to be drenched. Or for a lighter version, spray the potatoes with cooking oil and delete the olive oil. This is so easy, but it's so good.

- Scrub potatoes well and leave skins on.
- Halve each the long way, then cut each half into quarters to make 8 steak fry shapes.
- Smaller potatoes can be cut into quarters.
- Put potatoes into a large bowl and add dry soup mix and the oil.
- You made need more or less oil depending on size of potatoes.
- Mix all very well with a large spoon.
- Spray a large broiler pan or large flat cooking pan with cooking spray.
- Spread potatoes so that they are only in one layer on the pan.
- Place in 400 degree oven for 1 hour.
- IMPORTANT: These need to be stirred every 15 minutes to keep them from sticking to the pan and to ensure even crisping.
