Serve these crispy brie-stuffed mushrooms at your Christmas dinner party or cocktail party. It's the perfect bite-sized appetizer to enjoy without getting too full.

Number Of Ingredients 8

2 lb. baby bella mushrooms, stemmed
6 tbsp. salted butter, melted
8 oz. brie cheese, cut into bite-size chunks
2/3 c. panko breadcrumbs
1/2 c. fresh parsley, chopped
2 garlic cloves, minced
1/2 tsp. kosher salt
Black pepper, to taste

Steps:

  • Preheat the oven to 375 ̊. Arrange the mushrooms cap-side up on a rimmed baking sheet. Brush with 1 tablespoon melted butter. Flip the mushrooms cap-side down and stuff a piece of brie inside each.
  • Mix the panko, parsley, garlic, salt and pepper in a medium bowl. Mix in the remaining 5 tablespoons melted butter. Spoon a little of the mixture on each mushroom.
  • Bake until the mushrooms are softened around the edges, the cheese is melted and the tops are golden, 20 to 25 minutes. Serve straight out of the oven or at room temperature a little bit later.

1/2 stick (4 tablespoons) butter
12 ounces white button mushrooms, stemmed and washed
4 to 5 green onions (up to the middle of the dark green part), sliced
4 cloves garlic, minced
1/4 cup chopped fresh flat-leaf parsley
Splash of white wine, optional
One 8-ounce wedge Brie cheese, cut into bite-size chunks

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a large skillet over medium-high heat. When the butter is melted and the skillet is hot, throw in the mushroom caps and toss them around for a minute. Remove from the skillet and set aside.
  • Throw the green onions and garlic in the skillet, saute for a minute and then add the parsley and wine (if you're using it). Stir and cook for 1 to 2 minutes to release all the flavors, then remove from the heat.
  • Set the mushroom caps on a baking sheet or in a baking dish. Place a chunk of Brie inside of each cap, then pour the parsley mixture all over the tops. Bake until the cheese is melted, about 15 minutes.
  • Serve the mushrooms straight out of the oven, or at room temperature a little bit later. These are perfect little pop-in-your-mouth delights. You'll love them.

Steps:

  • Preheat the oven to 425 degrees F. Remove the stems from 24 large cremini mushrooms.
  • Wipe the caps clean with a damp paper towel, then toss with 2 tablespoons olive oil and season with salt. Arrange on a baking sheet.
  • Finely crush 20 butter crackers (such as Ritz); mix with 2 tablespoons melted butter. Melt 2 more tablespoons butter in a skillet over medium heat. Add 1/2 cup each finely chopped celery and red bell pepper; cook until softened, 5 minutes. Add 1 chopped garlic clove; cook 1 minute. Combine 4 ounces cream cheese and 2 tablespoons mayonnaise in a large bowl; add 1/2 cup chopped scallions, 1/4 cup each grated parmesan, cracker crumbs and chopped parsley, the zest and juice of 1 lemon, the celery mixture and 8 ounces lump crabmeat. Divide among the mushroom caps and sprinkle with the remaining cracker crumbs.
  • Bake 12 to 15 minutes, then broil until golden. Let cool 5 minutes, then remove from the baking sheet.

After so many attempts, I came up with this recipe that our friends love, too. 2 tablespoons butter
1 tablespoon olive oil
1/2 pound sliced fresh mushrooms
1 small onion, finely chopped
3 garlic cloves, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1/8 teaspoon seasoned salt
1/8 teaspoon pepper
1 sheet frozen puff pastry, thawed
1 round (8 ounces) Brie cheese, halved horizontally
1 large egg, lightly beaten

Steps:

  • Preheat oven to 400°. In a large skillet, heat butter and oil over medium-high heat. Add mushroom and onion; saute 6-8 minutes or until golden brown. Add garlic and seasonings; cook 1 minute longer. Remove from heat; transfer to a bowl and refrigerate until cooled., On a lightly floured surface, unfold puff pastry. Place 1 Brie half on pastry, cut side up. Top with mushroom mixture and remaining Brie half, cut side down. Pull corners of pastry up over cheese, pinching together to seal on top. Place on an ungreased baking sheet, seam side down. Brush top and sides of pastry with egg. Bake until puffed and browned, 30-35 minutes.

  • Preheat oven to 350 degreesMelt butter in large saucepan. Add mushroom caps and toss to coat in butter. Sprinkle lightly with salt and cook for 1 minute. Remove mushrooms from pan and place upside down in a baking dish.In the same saucepan (without cleaning it) throw in garlic, parsley, and green onions. Sprinkle very lightly with salt and splash in wine, if using. Stir around until wine evaporates, about 1 minute. Remove from heat.Cut rind off of brie wedge, then cut pieces of brie to fit each mushroom cap. Place inside, lightly pressing to anchor each piece of brie.Top mushrooms with parsley/garlic mixture. Place into the oven for 15 minutes, or until brie is melted. Note: mushrooms are best when they've been allowed to cool slightly. Delicious

2 tablespoons melted butter
1 teaspoon garlic salt
2 tablespoons minced onions
1 teaspoon Worcestershire sauce
4 ounces large lump crabmeat
1 tablespoon mayonnaise
3 ounces brie cheese, cut in 18 pieces

Steps:

  • Preheat oven to 350ºF.
  • Place mushroom caps on a cookie sheet. Brush caps with some of the butter and sprinkle with garlic salt.
  • In a skillet, saute the mushroom stems with onion, Worcestershire sauce using the remaining butter.
  • In a bowl, mix crabmeat and mayonnaise. Fill caps with mushroom and onion mixture. Top with crabmeat and Brie.
  • Bake for 10 minutes or until mushrooms are tender and cheese is melted.
