Try this pan-fried tilapia with a mustard mixture and crumb coating. Panko crumbs and a seasoning salt blend make up the coating on this dish.

2 to 3 tablespoons vegetable oil
1 cup fine dry breadcrumbs or panko crumbs
1/3 cup Creole mustard or a spicy brown mustard
1/3 cup light mayonnaise
6 to 8 tilapia fillets
1/2 teaspoon salt
1/4 teaspoon ground paprika
1/4 teaspoon onion powder
Dash leaf thyme
Dash ground pepper
1 teaspoon parsley flakes

Steps:

  • Gather the ingredients.
  • Heat oil in a large skillet over medium heat.
  • If using breadcrumbs, proceed to Step 4. If using panko crumbs, put them in a food processor with the seasonings-salt, paprika, onion powder, thyme, pepper, and parsley flakes; process until the crumbs are quite fine.
  • In a small bowl, combine the mustard and mayonnaise. Generously coat tilapia fillets with the mixture, then coat with breadcrumbs.
  • Fry the coated tilapia fillets in the hot oil in a single layer, turning carefully after about 3 to 4 minutes. Cook for about 3 to 4 minutes longer, or until cooked through and lightly browned.

These pan-seared fish cakes have tartar sauce in the binding instead of on the side.

4 slices white bread (or 2 hamburger buns)
1 lemon
1 pound skinless tilapia fillets, cut into chunks
1/2 cup chopped sweet pickles
1/3 cup mayonnaise
1 large egg, lightly beaten
Kosher salt and finely ground black pepper
5 tablespoons extra-virgin olive oil
4 cups baby greens or 1 head of frisee

Steps:

  • Pulse the bread in a food processor until finely ground. Scoop 1 cup of the bread crumbs into a medium bowl and spread the remaining bread crumbs (about 3/4 cup) on a large plate. Grate the zest of the lemon into the bowl along with the breadcrumbs.
  • Pulse the fish in the food processor until coarsely diced (do not form a paste). Add the fish to the bowl with the lemon-bread crumbs along with the pickles, mayonnaise, egg, 3/4 teaspoon salt, and a few grinds of pepper. Form into 4 patties and dredge in the bread crumbs on the plate, turning to coat both sides.
  • Heat 3 tablespoons of the oil in a large heavy skillet over medium heat. When hot, add the fish cakes and cook, flipping once, until golden and cooked through, 8 to 10 minutes.
  • Halve the lemon and squeeze half of the juice into a bowl. Cut the other half into wedges. Toss the baby greens with the lemon juice and remaining 2 tablespoons oil. Season with 1/2 teaspoon salt and a few grinds of pepper. Serve the fish cakes with the salad and lemon wedges.

2 Tbs. minced red onion
2 Tbs. sweet pickle relish or dill pickle relish
2 Tbs. minced fresh flat-leaf parsley
1 Tbs. capers, drained, rinsed, and chopped
2 tsp. fresh lemon juice
1/3 cup all-purpose flour
2 large eggs
2 cups fresh white breadcrumbs
Kosher salt and freshly ground black pepper
4 skinless tilapia fillets (about 4 oz. each)
Vegetable oil for the pan
1 large lemon, cut into wedges

Steps:

  • Position a rack in the center of the oven and heat the oven to 200°F. Line a baking sheet with paper towels and set aside. In a small bowl, stir together the mayonnaise, red onion, relish, parsley, capers, and lemon juice. Cover and refrigerate. Line up three wide shallow dishes. Put the flour in the first; beat the eggs lightly in the second; put the breadcrumbs in the third. Season the tilapia with salt and pepper. Working with one fillet at a time, coat it with flour and shake off the excess. Then dip the fillet in the egg and dredge it in the breadcrumbs, patting them on to help them adhere. Set each breaded fillet on a plate or tray as you finish it. Pour the oil 1/4 inch deep into a 10- to 12-inch skillet. Heat over medium heat until it is hot but not smoking, or until a breadcrumb sizzles and browns quickly when dropped in the oil. Cook two of the tilapia fillets until they are crisp and browned, 2 to 3 minutes on each side. Transfer to the baking sheet, sprinkle with salt, and keep warm in the oven while you cook the remaining two fillets. Serve immediately with lemon wedges and the tartar sauce.

¾ cup panko bread crumbs
¼ cup chopped fresh parsley
¾ tablespoon salt
1 large egg, lightly beaten
1 tablespoon milk
4 (4 ounce) tilapia fillets, halved
2 tablespoons canola oil

Steps:

  • Combine panko, parsley, and salt on a dinner plate. Mix egg and milk together in a bowl.
  • Dip fillets into the milk mixture and shake off excess. Lightly dredge in panko mixture.
  • Heat oil in a large, nonstick skillet over medium heat. Add fillets and cook until golden brown on 1 side, about 4 minutes. Turn and cook until fillets are no longer translucent in the center and they easily flake with a fork, about 5 minutes more. Serve immediately.

1/3 cup flour, for dusting fish
1 egg
1/2 cup buttermilk
1/2 cup flour
1/2 cup yellow cornmeal
salt
pepper
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 tablespoons Old Bay Seasoning
canola oil, to cover bottom of large pan

Steps:

  • Salt and pepper fish.
  • Dust fillets with 1/3 cup of flour.
  • Mix egg with buttermilk in one bowl.
  • Mix flour, corn meal, baking soda and baking powder, Old Bay in another bowl.
  • Dip all floured fish into egg then flour mixture.
  • Heat oil medium-high in large pan.
  • Fry, turning after 2 minutes on each side.
  • Salt as soon as you take out of pan.
  • Should be done in three batches.
