A quick and easy recipe to make a delicious dinner that you can also use again and again in all your favorite recipes

1 cup panko breadcrumbs (AKA Japanese breadcrumbs)
½ cup grated Parmesan Cheese
1 cup seasoned breadcrumbs
2 large eggs
¼ cup milk
1½ pounds chicken breasts (sliced into cutlets pounded to ¼ inch thickness)
vegetable oil
1 lemon (for serving)

Steps:

  • In a small bowl, mix together the panko breadcrumbs and the Parmesan cheese then transfer to a plate or shallow bowl.
  • Place seasoned bread crumbs into a second shallow bowl.
  • Beat eggs and milk in a third shallow bowl and season with salt and pepper
  • Dip the chicken into the egg mixture, dredge in the seasoned breadcrumbs, shaking off the excess. Dip the breaded chicken back into the egg and coat with panko mixture, pressing to adhere.
  • Pour the oil into a large heavy skillet to about ¼ inch deep and heat over medium-high heat.
  • Working in 2 batches, Cook the chicken without turning until golden brown, 3-4 minutes per side. Turn the chicken and cook until equally brown on the other side, about 2 minutes more. Repeat with the remaining cutlets, adding more oil to pan (as needed) between batches, until golden brown and cooked through.
  • Transfer the cutlets to a paper towel-lined plate and season with salt. Serve with lemon.

2/3 cup breadcrumbs
1 teaspoon onion powder
1 teaspoon dried basil
1/2 teaspoon garlic salt
1/2 teaspoon paprika

10 whole chicken wings

Steps:

  • In a large resealable plastic bag, combine the bread crumbs, onion powder, basil, garlic salt and paprika.
  • In a small bowl, whisk egg and water.
  • Cut chicken wings into three sections and discard wing tips.
  • Dip wings in egg, then place in bag and shake to coat.
  • Place on a greased 15 x 10" baking pan.

CRISPY GARLIC BREADCRUMB CHICKEN

While not identical to a pan-fried, breaded cutlet, if you want to eat tender, flavorful chicken with lots of crispy, crunchy bits, then this significantly less-messy method is for you. One of the keys to this technique is to use panko breadcrumbs, which are much larger and more jagged than regular, fine breadcrumbs. This method also allows us to introduce some additional flavor, and moisture, thanks to the 'glue' we use to attach the crumbs.

2 large skinless, boneless chicken breasts
salt and freshly ground black pepper to taste
cayenne pepper to taste
1 tablespoon olive oil
3 tablespoons unsalted butter
½ cup panko bread crumbs
3 cloves garlic, finely crushed
1 tablespoon finely chopped Italian parsley
2 tablespoons grated Parmigiano-Reggiano cheese
1 tablespoon mayonnaise
1 teaspoon balsamic vinegar
1 ½ teaspoons Dijon mustard
¼ cup chicken broth
⅓ cup chicken broth
1 lemon, juiced
1 teaspoon balsamic vinegar
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Season chicken breasts on both sides with salt, black pepper, and cayenne.
  • Heat olive oil in an oven-safe skillet over high heat. Add chicken breasts. Sear, untouched, until bottoms release from the pan, about 2 minutes. Flip and cook for 2 minutes more.
  • Reduce heat to medium-low. Add butter and let melt. Add panko bread crumbs. Cook and stir until breadcrumbs start to turn golden, 2 to 3 minutes. Stir in garlic and cook until fragrant, about 1 minute. Turn off heat and add parsley and Parmigiano-Reggiano. Set breading aside.
  • Combine mayonnaise, balsamic vinegar, and Dijon mustard in a small bowl. Spread 'glue' over the top and sides of the chicken breasts. Spoon over the the breadcrumb mixture. Use a spatula to transfer chicken breasts back to the skillet. Pour chicken broth around the chicken.
  • Bake in the preheated oven until no longer pink in the center, 10 to 12 minutes. An instant-read thermometer inserted into the chicken should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and let rest while you make the pan sauce.
  • Pour chicken broth and lemon juice into the pan. Bring to a boil over high heat and add balsamic vinegar. Boil until sauce is reduced, about 2 minutes. Strain sauce and spoon around chicken.

2 tsp Olive oil
Salt
1/2 Cup Panko ((GF if needed))
2 tsp Seasoning salt
2 tsp Paprika
2 tsp Ground mustard powder
2 tsp Garlic powder
2 tsp Onion powder

Steps:

  • Preheat your air fryer to 400 degrees.
  • Place the chicken breast between two layers of parchment paper. Use a rolling pin or meat mallet to gentle press the chicken so it's an even width throughout. Dry the chicken breasts off with paper towel.
  • Pour the oil onto the chicken (I do this right on the parchment) and rub all over, coating it equally. Sprinkle with a pinch of salt.
  • Combine the rest of the ingredients in a small bowl, shaking together. Pour onto a large rimmed plate.
  • Cover each of the chicken breasts well with the panko mixture, and then place onto the mesh basket of your air fryer, making sure to leave room between the breasts - they would not be touching.
  • Spray the tops of the chicken with cooking spray and cook 8 minutes. Gently flip and cook another 6-8 minutes until the chicken is crispy and golden and an instant read thermometer reads 165 degrees Fahrenheit inserted into the chicken

Canola oil, for frying
2 organic boneless, skinless chicken breasts (each about 8 ounces)
1/4 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 large eggs
1 cup panko breadcrumbs
2 teaspoons white sesame seeds
1 teaspoon black sesame seeds
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 small lemon, zested and juiced
3 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
2 teaspoons honey
Kosher salt and freshly ground black pepper
1 fennel bulb with fronds
1 Granny Smith apple
1/2 cup toasted walnuts, roughly chopped
1/4 cup roughly chopped flat-leaf parsley

Steps:

  • For the chicken: Preheat the oven to 200 degrees F. Set a wire rack in a rimmed baking sheet.
  • Fill a 14-inch cast-iron skillet with enough canola oil to come halfway up the side. Heat over medium heat until the oil reaches 350 to 375 degrees F (or a few panko breadcrumbs bubble up when sprinkled into the skillet).
  • Meanwhile, place 1 chicken breast in a 1-gallon resealable plastic bag. Using a rolling pin or the flat side of a meat tenderizer, evenly pound the breast until about 1/4 inch thick. Remove to a plate and repeat with the 2nd breast. Reserve the resealable plastic bag.
  • Add the flour, 1/2 teaspoon of salt and 1/2 teaspoon black pepper to the same bag and shake to combine. Add 1 breast at a time and shake to coat.
  • Beat the eggs in a medium shallow bowl. In another medium shallow bowl, combine the panko with both sesame seeds, 1/2 teaspoon salt, 1/2 teaspoon black pepper, the garlic powder and cayenne. Stir to combine.
  • Dip each floured breast in the egg, coating both sides and then dredge in the panko, pressing to help the crumbs adhere. Return the breaded chicken to the plate.
  • Carefully lower the chicken in the hot oil and cook until golden brown and crispy, 3 to 4 minutes per side. Transfer to the prepared baking sheet and keep warm in the oven while you make the salad.
  • For the salad: Combine the lemon zest and juice, olive oil, vinegar, Dijon, honey and 1/4 teaspoon pepper in a medium bowl. Whisk together.
  • Halve the fennel lengthwise, cut out and discard the core, then thinly slice the fennel crosswise into half-moons and tear the fronds into pieces. Add both to the bowl.
  • Halve, core and thinly slice the apple. Add to the bowl along with the walnuts and parsley. Toss and taste for seasoning.
  • Remove the chicken from the oven, place on a platter then mound the salad on top. Serve right away.

150ml buttermilk
2 plump garlic cloves , crushed
4 x skinless, boneless chicken breasts (total weight 550g), preferably organic
50g Japanese panko breadcrumbs
2 tbsp self-raising flour
½ rounded tsp paprika
¼ rounded tsp English mustard powder
¼ rounded tsp dried thyme
¼ tsp hot chilli powder
½ tsp ground black pepper
3 tbsp rapeseed oil

Steps:

  • Pour the buttermilk into a wide shallow dish and stir in the garlic. Slice the chicken into chunky slices, about 9.5cm long x 3-4cm wide. Lay the chicken in the dish and turn it over in the buttermilk so it is well coated. Leave in the fridge for 1-2 hrs, or preferably overnight.
  • Meanwhile, heat a large, non-stick frying pan and tip in the panko crumbs and flour. Toast them in the pan for 2-3 mins, stirring regularly so they brown evenly and don't burn. Tip the crumb mix into a bowl and stir in the paprika, mustard, thyme, chilli powder, pepper and a pinch of fine sea salt. Set aside.
  • When ready to cook, heat oven to 230C/210C fan/gas 8. Line a baking tin with foil and sit a wire rack (preferably non-stick) on top. Transfer half the crumb mix to a medium-large plastic bag. Lift half the chicken from the buttermilk, leaving the marinade clinging to it. Transfer it to the bag of seasoned crumbs. Seal the end of the bag and give it a good shake so the chicken gets well covered (you could do all the crumbs and chicken together if you prefer, but it's easier to coat evenly in 2 batches).
  • Remove the chicken from the bag. Heat 1 tbsp of the oil in a large, non-stick frying pan, then add the chicken pieces and fry for 1½ mins without moving them. Turn the chicken over, pour in another ½ tbsp of the oil to cover the base of the pan and fry for 1 min more, so both sides are becoming golden. Using tongs, transfer to the wire rack. Repeat with the remaining seasoned crumbs, oil and chicken.
  • Bake all the chicken on the rack for 15 mins until cooked and crisp, then serve with the Crunchy coleslaw (see 'Goes well with', below right).

  • Bread the cutlets by dredging them first in the seasoned flour, then dunking them in the egg/milk mixture and finally by pressing them into the herby breadcrumbs so they are completely coated. Set aside.
  • Heat the butter and vegetable oil in a large heavy-bottomed skillet over medium-high heat. Once the butter has melted and the oil is hot, add the cutlets and cook until golden and crisp, 3 to 4 minutes per side. Remove to a paper towel-lined plate and sprinkle over the flaky sea salt. Serve immediately.

  • Breading: A Three-Step Process. The standard method for breading foods is a three-step procedure, creating a crispy coating before frying them. It's a basic process that's used all the time in the culinary arts, for making everything from fried chicken to onion rings.
  • Set Up the Stations. Because this is a three-step process, setting out the ingredients in an organized way will simplify preparation and create less mess.
  • Pat the Food Dry and Season Each Step. To begin with, make sure the food you're going to bread is dry. You don't want any extra moisture trapped under the coating which will cause the food to be soggy and not fry properly.
  • Dredge the Food in Flour. Step one is to coat in the flour. Assuming you're working left-to-right, using your left hand, dredge the item in flour and shake off any excess.
  • Transfer to the Egg Wash. Your left hand is going to be your "dry hand," while your right hand is going to be your "wet hand." So when you transfer the food to the egg wash dish, use your right hand and try not to get your left hand wet.
  • Toss in Seasoned Breadcrumbs. Use your wet hand (your right hand) to take the item out of the egg wash, let any excess egg drip off, and then transfer it to the dish with the breadcrumbs.
  • Chill for 15 Minutes. Once you have all of the food coated, you will want to place in the refrigerator for about 15 minutes. Chilling the breaded food helps the breading really take hold, making the flour stick to the food and the egg wash stick to the flour, and, finally, the breadcrumbs stick to the egg wash.
  • Fry Until Golden Brown. After the breaded food has had time to chill, you are ready to fry (or bake). If frying, fill a heavy-bottomed sauté pan with enough oil so the food you're frying is half-covered.
