- Pat the chicken wings dry with paper towel.
- In a large bowl, combine baking powder, salt, garlic powder, chili powder and curry powder (if you're using) until blended and whisk to combine well.
- Add the chicken wings into this mixture and coat each evenly with the mixture.
- Drizzle olive oil over them and stir.
- Cover with plastic wrap and let it rest in the refrigerator for half an hour.
- Preheat oven to 400F and line a baking sheet with parchment paper.
- Place chicken wings on the baking sheet and bake for 30 minutes. After this time, remove them from oven, turn them over and bake for another 10 minutes.
- In a saucepan, melt butter, add in hot sauce and honey. Cook for about 5 minutes, stirring occasionally.
- Put the chicken wings in a large bowl. Pour the sauce over them and toss to coat.
- Garnish with chopped parsley if you want.

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
- Heat the oil in a large pot until it reaches 350°F (180°C).

CRISPY BAKED BUFFALO WINGS RECIPE

- Preheat the oven to 450 degrees F. Set a baking rack on a large rimmed baking sheet. Spray the rack with nonstick cooking spray.
- Use paper towels to thoroughly squeeze and dry every single wing. The drier the wings are, the crispier they will get.
- In a large bowl, mix the baking powder, garlic powder, salt, and pepper. Add the wings to the bowl and toss to coat. Lay the wings on the baking rack, making sure they do not touch.
- Bake for 30 minutes. Then use tongs to flip the wings. Bake another 15-20 until very brown and crispy.

- Fill a large pot half way with water and then add the first 4 ingredients.
- Bring water mixture and wings to a boil and then boil for 15 minutes.
- Transfer wings to an oven safe container coated with cooking spray. Bake wings on "Broil" (high) for 15 minutes on each side.(For crispier wings, cook longer on each side, maybe 20 minutes per side).
- While waiting for wings, combine the Hot Sauce and Margarine in a microwave safe container and cook in microwave for 2 minutes or until melted. (You can cook the sauce longer for a thicker sauce).

- If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight. Alternatively, pat them dry with paper towels.
- Preheat the oven to 250°F/120°C (all oven types). Put one oven shelf in the lower quarter of the oven and one in the top quarter.
- Line the tray with foil. Spray the rack on the baking tray with oil.
- Place the wings in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well (or shake in ziplock bag) to coat wings evenly.
- Place the wings skin side up on the rack (ok if snug, they shrink). Bake on the lower shelf in the oven for 30 minutes.

- Preheat the oven to 120C/250F and place a rack on a large baking tray.
- Cut each wing at the joint so you have a mini wing and a drumette. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating. Discard any remaining coating once tossed together.

- Preheat oven to 450 degrees. Line a rimmed baking sheet with aluminum foil and fit it with a cooling rack. Grease the rack to prevent the chicken from sticking to it.
- In a large bowl, combine the cornstarch, garlic powder, baking powder, salt and pepper. Mix to combine it well. Add the chicken to the bowl and stir it around to coat the chicken evenly. Shake off any excess and place the chicken pieces on the prepared rack and tray leaving space between each piece.
- Bake for 30 minutes, flip and continue to bake for an additional 15-20 minutes or until they are cooked through. The baking time will vary based on the size of your wings, so adjust the time accordingly based on the size of the wings I have in my recipe. The internal temp should be 165 to be cooked through, although I like to take it out at 160 because it continues to cook for a few minutes after you remove it.
- Once you remove the wings from the oven, place them in your serving dish and coat them with the Easy Buffalo Sauce (instructions below). Serve with blue cheese dressing (dairy free dressing if needed) and celery sticks.
