1/4 teaspoon freshly grated nutmeg
Horseradish-Yogurt Sauce (for serving; optional)

CRISPY POTATO SKIN SCOOPS

Crispy Potato Skin Scoops image

We took baby Yukon gold potatoes, scooped out the inside and deep-fried them to crispy, golden perfection. Then we took it one step further by stuffing each shell with a cheesy potato filling. The result is a bite-size appetizer that's idyllic for any party throughout the year.

Categories     appetizer

Time 1h

Yield Makes about 40 scoops

Number Of Ingredients 9

1 pound baby Yukon gold potatoes (about 20), scrubbed
Canola oil, for frying
1/2 cup potato starch
2 tablespoons unsalted butter
1/2 cup finely shredded sharp Cheddar (about 2 ounces)
1/3 cup sour cream
2 scallions, thinly sliced
Kosher salt and freshly ground black pepper
Cayenne pepper, for serving

Steps:

  • Place the potatoes on a microwave-safe plate in an even layer, then microwave on high until knife-tender, flipping each halfway through, 5 to 6 minutes. Set aside to cool slightly.
  • Cut each potato in half crosswise. Use a 1/4 teaspoon measuring spoon to scoop out the potato, leaving a thin border around the edge. Transfer the scooped-out potato to a medium bowl, then cover and reserve.
  • Meanwhile, fill a large heavy-bottom pot or Dutch oven with 2 inches of canola oil and attach a deep-fry thermometer to the pot. Heat the oil to 350 degrees F over medium-high heat. Line a rimmed baking sheet with a couple paper towels; set aside.
  • Whisk the potato starch and 1/3 cup water in a medium bowl until smooth. Dip the potato shells into the potato-starch slurry, letting any excess drip back into the bowl, then carefully lower into the hot oil. Cook, in batches, until well browned and crispy, about 4 minutes per batch. Remove from the hot oil with a slotted spoon and place cut-side up on the prepared baking sheet. Season with salt and then flip over cut-side down to drain.
  • Add the butter to the reserved scoop-out potato and reheat in the microwave until warm, stirring halfway through, about 3 minutes. Use a fork or potato masher to mash the potato until almost smooth, then stir in the sour cream, Cheddar, scallions, 1/2 teaspoon salt and several grinds of black pepper until combined.
  • Using the 1/4 teaspoon measuring spoon, spoon the filling into the crispy potato skin scoops. Transfer to a serving platter and sprinkle with a pinch of cayenne.

Provided by Trisha Yearwood

Time 1h50m

Yield about 24

Number Of Ingredients 8

3 1/2 pounds (about 12 medium) red potatoes
2 tablespoons olive oil
8 slices bacon
2 tablespoons salted butter, melted
Salt and freshly ground black pepper, to taste
2 1/2 cups (about 10 ounces) grated sharp cheddar cheese
1/2 cup sour cream
1/2 cup finely chopped scallions

Steps:

  • Preheat the oven to 400 degrees F. Wash the potatoes and pierce them all over with a fork. Rub them with the oil and place on a baking sheet. Bake until tender, 45 minutes to 1 hour. Remove the potatoes from the oven and halve lengthwise. Set aside to cool for about 15 minutes. Meanwhile, turn on the broiler.
  • While the broiler is heating, using kitchen shears, cut the bacon into small pieces. Cook in a medium skillet over medium heat, stirring occasionally, until crispy, about 10 minutes. Drain on a paper towel?lined plate and set aside.
  • When the potatoes are cool enough to handle, scoop out the flesh and save it for another use. Brush the insides of the skins with the melted butter and sprinkle with salt and pepper. Place on the baking sheet and broil until the skins begin to crisp, 2 to 3 minutes. Flip the skins over and broil for another 2 to 3 minutes.
  • Remove the baking sheet from the oven and fill each potato skin with the cheese and bacon. Put back under the broiler until the cheese melts, 3 to 5 minutes. Remove and top with a dollop of sour cream and a few pieces of scallion.

CRISPY BABY POTATOES

Crispy Baby Potatoes image

Baby potatoes, garlic powder, dried parsley, and a little salt and pepper is all that you need for these little gems. Easy to prepare and they can be made well in advance, a bonus when planning a dinner party or for an easy night meal. I've used parsley and garlic but you can choose any seasoning that will complement your meal.

Time 35m

Yield 4

Number Of Ingredients 5

1 ½ pounds baby potatoes, halved
½ teaspoon dried parsley
¼ teaspoon garlic powder
salt and ground black pepper to taste
1 tablespoon olive oil, or more as needed

  • Transfer potatoes to a bowl. Add parsley, garlic powder, salt, and pepper; toss to coat.
  • Heat oil in a large skillet over medium-high heat. Add potatoes to the hot oil. Cook, shaking the skillet occasionally, until potatoes are browned on all sides, about 10 minutes.

YUKON GOLD ROASTED POTATOES WITH BACON, ONION AND GARLIC

Yukon Gold Roasted Potatoes With Bacon, Onion and Garlic image

You can use any kind of potatoes for this but Yukon Gold are simply the best! All ingredients can be adjusted to taste. If you do not like your garlic crispy then just add in two or three whole bulbs garlic (outer layer of skin removed) sprinkle with oil and place in the roasting pan with the potatoes and separate the cloves after roasting. If desired, roast 1-2 pounds fresh mushrooms in the oven with a bit of butter or oil until they are soft and release their juices, remove to a bowl and continue with the recipe, add in the mushrooms to the roasting pan just before serving, I have done this many times if I have fresh mushrooms handy.

Provided by Kittencalrecipezazz

Categories     Pork

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 6

10 slices bacon (can use more)
5 large yukon gold potatoes, unpeeled and cut lengthwise into 4 large wedges
3 medium onions, cut into 4 wedges
20 garlic cloves, peeled (or to taste, about 2 large heads, separated and peeled)
3 teaspoons dried thyme (or to taste, rubbed between fingers to release the flavor)
salt and black pepper (I use seasoning salt)

Steps:

  • Set oven to 425ºF.
  • Prepare a large roasting pan.
  • In the roasting pan cook the bacon in the oven until crisp (this should take about 10 minutes) remove from the roaster and crumble, then set aside to a plate to cool slightly (DO NOT drain the bacon fat, leave in the roaster).
  • Place the potato wedges skin-side down in the roasting pan; toss to coat in the bacon fat (you can also add in some oil if it seems too dry).
  • Add in onion wedges (the onion wedges will separate).
  • Sprinkle the peeled garlic cloves in the pan around the potatoes and onions.
  • Sprinkle the veggies with rubbed thyme, salt and pepper.
  • Roast uncovered for about 40-45 minutes, or until the potato wedges are fork-tender and browned.
  • Before serving sprinkle with crumbled bacon and season with more salt and pepper if desired).
